I adapted this recipe through a combination of many sources and a little ingenuity since I was dissatisfied with each of my individual attempts.  None of them tasted quite right.  The original sources were a cookbook called &amp;quot;the firehouse cookbook&amp;quot;, which offered the addition of evaporated milk as a healthier (and still delicious) substitution for heavy cream. And the cookbook which added the necessary addition of vermouth is called &amp;quot;The Best Recipe&amp;quot;.  It's a constantly changing evolving recipe so feel free to offer your additions or suggestions. 			<description>This is from &amp;quot;The Enlightened Kitchen: Fresh Vegetable Dishes from the Temples of Japan&amp;quot; by Mari Fujii. It comes from Kenchoji Temple, the first Zen buddhist temple in Japan. It is a wonderful example of shojin ryori, or &amp;quot;temple cuisine&amp;quot;. The ingredients suggest this is a winter soup, although for health and nutrition, this soup can certainly be served in any season.

The author suggests that instead of the soy sauce (or in place of part of it), you can substitute miso or sake without losing authenticity.

Although this looks like a lot of directions, it's actually a very simple preparation. If you can boil water, stir fry, and use a knife to slice vegetables, you have all the skills you need. Once you make this, you won't even need to look at the directions.

As for preperation of the bacon, you can choose to cook it in the stock pot, leaving behind as much fat as possible for flavour, and add back after cooking of the rest of the soup, or do as I've suggested with the microwave. Stir soup periodically to prevent scorching on the bottom of the pan. Additional option: For a non-vegetarian option, fry and crumble &amp;frac12; lb. bacon.  Use the bacon grease instead of the butter for the roux.  Add the bacon back to the soup with the salt and pepper. I finally decided I needed to learn to make it because eating out was costing me way too much ;)  I looked through several recipes for the soup, combined some, and then tweaked until I came up with a recipe that was close to that of my favorite Mexican place.  This is quick and easy and I usually get rave reviews when I make this for a crowd.  I hope you enjoy it! :)

PS. This soup has a mild heat.  If you like it spicier, add a can of chopped chilies or a diced jalepeno.  I've also substituted the Rotel tomatoes with a really good chunky salsa when I couldn't find them. 			<description>This is a very hearty stew. I got this recipe about 30 years ago from &amp;quot;Family Circle&amp;quot;. My son was 5 or 6 and would not eat many vegetables but liked this, so it was a keeper. He never noticed the okra in it. You can also substitue or add what you like to it easily. This makes a huge pot, so be ready to share or freeze some! I cook it on top of the stove in a dutch oven. I serve it with corn muffins and it is a meal. I hope other's enjoy it.

			<description>I admit, the first time I used a pressure cooker I was a little afraid. I left my studio and stood on the other side of the door to avoid severe burning and disfigurement if my pot of legumes exploded. I called a friend to ask her if I was doing it right. But now I see the pressure cooker like a trusted friend who only wants to save me some valued time. So when I saw this lentil recipe in Veganomicon by Isa Chandra Moskowitz and the preparation time of 1 hour, I was so glad I had a pressure cooker to cut the time by nearly two-thirds, borrowing a technique from the Spanish and the Lentils with Chorizo Sausage Recipe (Recipe #342592). The first thing I did was skip the step where you saut&amp;eacute; the onion and carrots for 10 minutes. It's unnecessary, and you'll find that my method makes a soup with a smoother, more pleasant consistency by cooking the vegetables whole or halved, then removing and pureeing them afterwards. My kitchen has a surplus of brown lentils, so those are what I used. I'm going to keep the brown lentils in the recipe because I don't know if French lentils require more liquid. One thing I want to try for next time, since I used bouillon cubes, is to break them up and try to dissolve them in step 2 rather than prepare the stock ahead of time, and I plan to cut down the salt next time. I find the best way to seed plum tomatoes is to cut them in half and sweep out the seedy parts with your index finger. 			<description>This recipe was given to me by a friend and I just love it. Good comfort food! The first time I made this, I followed the directions exactly and baked my potatoes for about 1 1/2 hours at 500 degrees. I passed the recipe on to my mom, who just boiled her potatoes and she said it turned out perfectly, so by all means, make things easier on yourself. Just thought I'd post orginal directions as they were given to me. I used an immersion blender to make the soup creamy, but still left a few small chunks of potato to add texture. You could also substitute beans and/or rice for the potato; add fall veggies like sweet potatoes or squash; etc.

I use 2 cups of water and two chicken boullion cubes instead of a can of chicken broth.  Also we like garlic so I usually use about 3 cloves of garlic.
