I did not include the 3 hour chill time in the cook/prep times below, you may not need it if the dough isn't sticky and rolls out easily.
Pumpkin Cake Roll

Years ago, a co-worker gave these pumpkin rolls to everyone for Christmas. At the time because it was sooooo good, I asked for the recipe, but lost it almost immediately. I found a recipe close to it in a magazine and messed with it a bit until it came out like the one I received as a gift. This is absolutely delicious and light. When wrapped in colored plastic wrap and tied with pretty ribbon, it makes a great gift...just remember it has to stay chilled! -- posted by Karen=^..^=

Pumpkin Kugel Inspired by Lennie's Carrot Mold

I am a huge fan of Lennie's Bob Newhart's Carrot Mold. We have it at least every other week at our house. For Rosh Hashana I wanted to make something with pumpkin, which is one of the traditional foods eaten on that holiday. We adore the carrot mold so much, I basically just substituted fresh pumpkin for the carrots. It was a hit with family and guests.

Don't throw away the turkey bones after you've demolished your bird! Save them to make a fantastic turkey stock, which you can then use to flavor all sorts of soups and gravies. After you strain the stock you can freeze it in small Tupperware tubs, or even in ice cube trays, very handy to have in the kitchen! -- posted by Mirj

Goodtime Beef Brisket (Diabetic Crock Pot Recipe)

From the Fit-it and Forget-it Diabetic Cookbook. This recipe was submitted by Amy Marlene Jensen of Fountain, Colorado. I made a few changes and will share them with you: used a 12 oz. bottle of beer; instead of allspice I uses some cinnamon and nutmeg; used a cup of frozen pepper strips (red, yellow and green); and I added cooked pasta just to heat it in the last 20 minutes before serving. I thickened the sauce a bit too with cornstarch in water. -- posted by Oolala

Cinnamon Apple Latkes

Love how I got this recipe! I bought a cookbook at an estate sale and inside was a very yellowed newspaper clipping from the Chicago Daily News and this recipe was printed on it. This recipe calls for peanut oil (which I love) but if you are making this for company or a pot luck, make sure there are no peanut allergies! I guessed the yield since there was no mention here and since I haven't made them yet. Feel free to update the recipe if you discover it is different! -- posted by Oolala

I recommend cutting simple shapes if dough is rolled to asked for 1/8". Also keep a close eye on them in the oven as they can over bake quickly.
Potato Latkes (Jewish Potato Pancakes) - Gluten-Free

A delicious gluten-free adaptation of a traditional family Chanukah recipe. Serve with sour cream and applesauce. TO MAKE GLUTEN-FREE: The gluten-free rice flour mix I use is 3 cups white rice flour, 3 cups brown rice flour, 2 cups potato starch (not flour), 1 cup tapioca starch - Use just one cup of this mixture. TO MAKE WITH REGULAR (WHEAT) FLOUR: Use only 1/2 cup of unbleached all-purpose white (wheat) flour. -- posted by What's Cooking?

Mccormick's Peppermint Bark

I found this on the box of McCormick's Pure Peppermint Extract and decided to try it. I'm usually not a fan of Peppermint Bark because the balance of chocolate and peppermint always seems uneven. That being said, this recipe has a great balance to it and even looks great once finished. My boyfriend loved it so much he pleaded with me not to serve it at our dinner party so he could save it all for himself! ;) My only concern with this recipe is that the bark can get stuck if there are too many wrinkles in the foil. I wonder if this could be fixed with wax paper? Let me know what works for you! -- posted by EmJoMay
