Cranberry & Sausage Stuffing Logs (Oamc)

I made two of these gorgeous rolled stuffing logs, one for Thanksgiving and froze the second to serve with our Christmas meal. The entire recipe makes 2 stuffing logs and there will also be a third portion left to stuff a turkey with, or to bake in a casserole. If you only want to make 1 roll, simply divide most of the ingredients by 3, except for the apple, egg, and bacon - use 1 small egg, 1 small apple, and 12 pieces of bacon, cooking time will remain the same. A bit tricky to roll up, but the final product is worth all your hard work. You can substitute fresh red currants for the cranberries or use dried cranberries or dried cherries if you prefer. Also, if you only have dried herbs, that is fine.. just add dreid versions to taste, perhaps a few spoonfuls of each. This gets sliced and looks so lovely with the center of berries. Adapted from a version I found in Good Food magazine. -- posted by HeatherFeather

I got this recipe from my office manager - putting it here for safekeeping. This seems like a nice Thanksgiving/Christmas recipe for get-togethers, or for any occasion in the Fall/Winter. I am really guessing on the servings - planning on making this for our Christmas celebration, so I will have a better idea of number of servings & results then.
Fire Cider (Cold, Flu and Sore Muscles)

This is a recipe from my sister. She is studying natural (herbal) medicine. She uses this in the cold season. It does NOT need to be refrigerated, but does take 2 months to cure before you can use it. She mixed up a batch for me yesterday, but it won't be ready for 2 months. She recommends putting parchment paper over the mouth of the canning jar before putting the lid on, to prevent the metal from rusting due to the vinegar. If you can't find organic vinegar, get the kind with the "mother" in it. I use Bragg's.
Horseradish is antibacterial, and expectorant and a digestive aid. Garlic is antibact.and great for the immune system and colds and infections. Ginger eases nausea, colds and congestion. Cayenne is anti-inflammatory and anti-irritant, aids digestion and circulation. And onions have a zillion health benefits!
Mimi's (Jones) Sausage Stuffing

This is the most wonderful sausage stuffing, and my mom Mimi made it every year at Thanksgiving and/or Christmas. I like it even better than her homemade cornbread stuffing. I'm assuming she got it from the Jones Sausage package. I think you could use any mildly-seasoned ground sausage for this recipe. NOTE: The amount of liquid used may be adjusted based on your preference; start with 2 cups as a baseline. -- posted by FloridaNative

Morcon (Meat Roll) Phillipines

This traditional recipe is a part of the Christmas and New Year food tradition in the Philippines. Many traditional Filipino holiday foods have a strong Spanish influence. This recipe is for serving straight away but Morcon is easier to slice when allowed to cool and much better after having been refrigerated.
Show Stopping Christmas Tree Centerpiece (Edible)

Chocolate Gingerbread Cookies

A great holiday treat! This is a delicious low-fat cookie recipe from the great cookbook, "One Smart Cookie: All Your Favourite Cookies, Squares, Brownies and Biscotti... with less fat !", by Julie Van Rosendaal. Dough must chill for an hour before rolling out.
An alternative (make-ahead) way to make this recipe is as an icebox cookie.
Shape the dough into a 12” long log, wrap in waxed paper or plastic wrap and freeze for up to 3 months. Slice log into 1/4” slices and bake as directed. -- posted by blucoat

Bethmaennchen - German Christmas Cookies

My family first had these yummy almond cookies (pronounced "BAIT-men-chen") when a German exchange student made them for us at Christmas time so she could have a taste of home. She blanched, skinned, and halved the almonds herself, which took most of the preparation time. When pressed for time I have substituted store-bought chopped almonds, but I'm told that that's anathema for anyone who wants the real thing. This prep time excludes preparing the almonds. -- posted by LightEra

Chicken Corn Chowder

This is a recipe that was passed down from my dad's side of the family. We have it every Christmas. It is so delicious and it makes the house smell absolutely wonderful. I, personally, don't prefer mushrooms. Once, I made it without the mushrooms, but added 2 small cans of sliced potatoes. I was extremely pleased with it. However, the rest of my family prefers the mushrooms and insisted they were necessary. -- posted by zoegirl21

Apple, Dried Cherry, and Pecan Salad With Maple Dressing

Adapted from recipe from Mountain Town Station Brewing Company and Steakhouse in Mount Pleasant, Michigan. Original recipe published in Bon Appetit, September 2002.

Great salad for the holidays. Very easy but impressive. Dried cranberries can be substituted for the dried cherries. Also good with glazed or spiced pecans. Pears would also be good in place of apples. For a less creamy dressing, reduce or elimate sour cream and increase vinegar and oil. -- posted by swissms

Grown-up hot apple cider. Perfect for a cold winter day. My recipe actually calls for mulling spice, however, RecipeZaar does not recognize it as an ingredient. Use 3-4 tablespoons mulling spice in place of allspice, cloves, cinnamon sticks and orange rind, if available. Use good quality fresh apple cider (not apple juice.)
Healthier Carrot Cake

With Easter arriving, I was searching for recipes that were relatively healthy, compared to my normal Easter recipes. I came across other "healthy" versions of carrot cake, but tested them and they turned out skimpy and did not quite satisfy me. Therefore, I went into my kitchen and came up with my own little concoction that is moderate in fat, but not absolutely low fat. Hope you enjoy! -- posted by Carmen128

Gingerbread Christmas Ornaments

These look and smell like real gingerbread, but are not edible! They are extremely cute ornaments for the tree, and can be decorated with acrylic paint once they are dry! They harden up very well, and will last for years if cared for. I have so many good memories of taking out the tin of these on Christmas, and having the house smell like gingerbread instantly while trimming the tree! Note: Prep time includes cooling time before baking, as well as hardening time after baking. -- posted by Vicki in Houston, TX

Colorado Mel's Apple Cranberry Crisp

This recipe is delicious. Our family really enjoys tart fruit desserts, so the recipe below reflects that. If you prefer yours a bit sweeter then you should use a sweeter apple or add another half cup sugar to the fruit. One thing I love about this recipe is how versatile it is! I'll switch out what fruit I'm using just based on what I have on hand. Yummm! This is also a healthier "Crisp" recipe than the average. There is more fruit and less crisp... I enjoy the taste of the ratio as well as the lower fat content of the ratio. ;) Try it- I bet you'll enjoy it! -- posted by Colorado Mel

Bill Yosse's White House Apple Pie
