			<title>Spiceless Chili</title>

			<description>Freezes great.  Prep time is basically chopping onions and opening cans.  Plenty of fiber, low in fat.

I'm a chili heathen, I just don't like it hot!  And my daughter is a total spice hater.  So I tried dumping everything chili-ish from my pantry into my slow-cooker without any seasonings.  Surprisingly, my picky eater likes it - and so do I!  Every time it turns out a little bit different because I use whatever's on hand, but the basic idea is here.  Any beans will do:  pinto, black, kidney, northern, navy...

			<title>Punjabi Rajma (Kidney Beans)</title>

			<description>This is my version of a recipe from the Hare Krishna website(www.harekrsna.com). This site is a goldmine for Indian vegetarian recipes. I also love the fact that Hare Krishna cooking doesn't use garlic and onions (which I do love), but substitute Hing or asafoetida powder. It's great when you're too lazy to chop/cry while chopping, and hing has its own healthy properties. I believe it is supposed to be an anti-flatulent for one thing. 
This dish is sort of like an Indian bean chili (an oxymoron for some). I ate it mixed with some basmati rice I cooked in my rice cooker with a small piece of cinnamon stick and a couple of green cardamom pods. My husband ate it with tortilla chips the next day.

			<description>The name says it all...this has always been my family's favorite, even though there are a lot of shortcuts.  It is simple to make, tasty and fast.  What else can you ask for?  To serve, I ladle it into a large bowl and garnish it with lots of shredded cheddar cheese and jalapenos. This is a chili that can be picante or rather mild and has plenty of meat.  It is so very easy to make -- mostly just opening cans and throwing the contents into the crockpot.  I appreciate that!  I also like using refried beans instead of whole beans.  They gave the chili good substance and body. I came up with this recipe based on what I had on hand at the time. I've attempted to alter it, and got nothing but complaints! Apparently this combination just works. Of course, with all chili, you can substitute ingredients in or out of the recipe, but I recommend trying this one &amp;quot;as is&amp;quot; first. 

Unfortunately for some, my cooking style is very free, and I don't often measure spices. Everyone is a little different, so this is mostly &amp;quot;to taste.&amp;quot; Sorry to those cooks out there that like clean measurements.

I sometimes make this is a small 3 qt crock-pot. I just alter the amount of beef broth and water used so it will all fit. LOL   it comes out tasting a BIT different each time..  but ALWAYS AMAZING!!  everyone LOVES it!!  Because I've had it since I was a teenager, I honestly can't tell you where I got this recipe from...  I just know it's always been a favorite.  All of that being said...  please know, I have rarely used the exact measurements..  and I've always played around with the ingredients...  adding things, not putting some things in sometimes...  this is a great STARTER recipe..  and play with it as you like.. 			<description>This is just what you need on these cold evenings! Throw a salad together, add some cornbread and your meal is ready! You can add some heat by adding some crushed red pepper flakes (yes, the ones at the pizza parlors in the shakers). I always serve sour cream and some grated cheddar and jack cheese (grated together)  with this meal.

I believe it has been tweaked until absolutely perfect.  there are 2 distinct seperate groups of chili fanatics in the world that differ greatly in their opinions of the perfect chili.  some like it sweet, some like it spicy.  This recipe will have both coming back for more!  The initial mild sweetness slowly gives way to a smoky spicy flavor that really only comes on slowly after you swallow. I'm sure you could play with it even more than I did adding garlic, carrots etc. It can also be made with a ham or beef bone omitting the bouillon cubes. It didn't specify the type of lentils but looking at the cooking time I surmised it was a whole type. I used whole red lentils (Masoor) which turned out perfect! 			<description>I had some leftover chuck meat and wanted to make chili.  It seemed a natural match. I didn't want a Texas chili because I like beans, so I melded the two types.  It takes a bit longer than making it with ground beef, but the flavor is superb.  This is a traditional tomato-based chili with beans and a moderate amount of meat.  If you want a meat lover's chili, use 2 pounds of chuck pieces and 1 1/2 pounds ground meat.  The spice-heat level in this is light to moderate to my taste buds.  If you know you are sensitive to spicy foods, reduce the pepper ingredients slightly. Afterburner Chili was created in response to my best friend's (Deli) challenge that an Iowa boy can't out chili a Texan.  He stood corrected!  After he went screaming to the sink.  Ha! Ha! Ha!



This, at least for me, is definitely a Winter dish.  I now live in Florida and do not make it as often as it does not get cold enough for this chili. 			<description>I found this recipe several years ago at the service meat counter in our local supermarket and tweeked it a little. I also call it 'Really Good Chili That's a Whole Lotta Work' but my guys love it so what can I do? It can be 1/2 diced beef and 1/2 ground beef but we like it all diced. It's pretty mild so add more chili powder and chopped chilis if you like it hot. I also use trimmed stew beef instead of a roast, costs a bit more but its quicker to cut up. 			<description>I made this recipe when I was trying to think of what to do with the bony shoulder cut of the young wild boar we had.  After some searching on the internet, I decided to make a chili from it.  It works better than just normal pork as it is leaner and the flavour is different than domestic pork.  I think that this recipe would work with an older boar as well.          

For the chili powder, I very highly recommend using this recipe http://www.recipezaar.com/Chili-Powder-16892  I usually make a big batch of it and store in a large empty spice container so I have it on hand.  It is quick to make, and it gives you a better flavour than the commercial ones and you can control the salt levels easier.        

If you have some excess fat, you can cut down on the oil by frying the fat pieces and frying the onions and garlic in that.  Just be sure to remove the fat pieces before adding the meat.

It is a very tasty, not too hot chili that is just right for these cold winter days.  I added little cubes (less than 1/2-inch) of 3 uncooked chicken breasts to this chili about half way through the cooking for a little more protein, as though it needs it.  It didn't hurt one bit!  The author says this is a soupy chili but I did not find it so.  It has great flavor.  She cautions that the beans sink while the corn floats.
