Real Fried Chicken

There's only one right way to fry chicken and that's in a skillet, one with a tight-fitting lid. Forget soaking chicken pieces first in milk, buttermilk, lemon juice or vinegar and forget dipping chicken in beaten egg and then coating it with bread, cracker or cereal crumbs. many delicious chicken dishes are made with lots of other seasonings and coatings, but they should not be mistaken for "REAL" FRIED CHICKEN -- posted by Robb

Oven Fried Southern Style Cinnamon Honey Chicken

While watching FoodTV, I saw a piece about Amy Ruth's restaurant in New York where the owner made fried chicken dipped in a honey cinnamon mixture. It looked so good I began searching on the web for a recipe which approximated it... and after much browsing of webpages I put together a recipe that I thought might taste something like it. I don't fry my chicken, so here's a baked version, tweaked to my own tastes. -- posted by Julesong

Yoof's Oriental Chicken Salad

Easy to make, and VERY expandable.Want more salad? Buy another chicken or two, or three. Adding more chicken? Expand the amounts of the other ingredients to taste.
All of the seasonings are to taste, including salt and pepper. If you can't find pimentos, use a jar of roasted red sweet peppers (they are essentially the same thing).

The most time consuming portion of this recipe is removing the store cooked chicken from the bones.

Super easy and delicious, for brunch, a casual dinner, a picnic, potluck or an office party. It tastes even better the second day. -- posted by Callinectes Sapidus

Chicken and Potatoes With Mustard Vinaigrette

This is a quick and delicious Chicken Salad that always gets devoured every time I make it. It can be eaten all on it's own without another dish because it has everything your body needs in a meal. I found it in the March 2005 edition of Real Simple. I've given the recipe exactly as it was printed, *but* I generally double the dressing, and use a whole bunch of watercress.
Also, for potlucks or picnics, ignore the part about adding the watercress "just before serving" it travels just fine all mixed up. -- posted by Kendra PeloJoaquin

Carolina Rotisserie or Roasted Apple Chicken

Lavender, Lovage and Lime Roast Chicken With Honey

A delectable and elegant way of cooking a whole chicken for a special dinner party or for Sunday lunch! I have also cooked this chicken to take on a picnic - it is wonderful cold, AND in sandwiches or salads. Try to use an organic reared chicken - the flavour is more superior than a poor factory/battery farmed chicken - and, you will be doing your "bit" to stamp out this unnatural way of rearing poultry. -- posted by French Tart

The Classic 1953 Coronation Chicken Salad Recipe

This is my adaptation of the much loved and famous recipe created by Constance Spry for the Queen's Coronation lunch in 1953. I make this regularly for picnics and buffets; it is also amazing as a sandwich filler. In 1953, curry powder would have been used - but I find that curry paste works better. Use any type of poached or cooked chicken - I usually cook a couple of chicken breasts just for this recipe, however, a whole cooked chicken works very well; don't forget to remove the skin and check for bones first. This recipe is based on the Coronation Chicken recipe in:
The Constance Spry Cookery Book

Restaurant-Style Tandoori Chicken in the Oven!

As a lover of Indian food, I searched and experimented for a long time before finally coming up with this recipe for genuine Indian restaurant-style tandoori chicken that you can make in your own home oven.

This recipe was just voted best tandoori chicken in San Francisco by our "completely unbiased" review panel (consisting of several friends who have haunted San Francisco's Indian restaurants with us for the last few years!)

Seriously, if you like Tandoori chicken, you are going to love this one -- and it's easy, on top of that...

The quantities below make enough marinade for 4 generous servings -- we usually make a package each of 6 drumsticks and 6 thighs, but it would work equally well for a breast and leg quarter each for 4, as well. -- posted by JewelerByTradeChefWannabe

Mom's Grilled Chicken (Aka Chicken Delicious)

Another winner from my mother, whom I believe is the greatest cook ever :-) My mother makes this every weekend and my 4-year old asks to go to my mother's to have some of what he calls "chicken delicious". Prep time does not include marination time. I have never measured ingredients when I make this so increase the spices if you wish.
