			<description>This is a hardy and healthy pot of soup. You can add other vegetables if you like, like peas or chopped green beans. Occassionally, I'll add a cup of cooked rice, pasta or noodles.  A bowl for lunch or dinner will satify anyones hunger or sooth and comfort an ill one. Great way to use up veggies.  It is also low fat content because you will cook the chicken without the skin. There are two prep periods but worth a little extra work. Sometimes I will cut up everything before cooking so it is ready to go. Anyone I have served this soup to not only compliments the flavors but feels that old fashioned grandma touch of healing. This chicken cooks much quicker than a regular whole chicken because of the method that I use. Only 2 ingredients makes this a quick last minute delicious dish. Adjust the amount of rub used according to your own taste; I use 2 tablespoons total. If you don't have rub, you can just use some salt and pepper. I personally love the meat in a folded and fried flour tortilla w/ cheese, guacomole, lettuce, tomato, and sour cream.

			<description>I like lots of flavor to my chicken, and as with many other chefs, a high temp to start is the key for a crispy crust.  I have a very simple olive oil, butter, parsley, salt and pepper rub and then lots of fruit and onions in the cavity which I feel really helps with the flavor. Rather than a rack, just use a couple of thick onion slices or a couple of celery ribs or carrots.  It makes a natural rack and add tons of flavor to the drippings.  Take advantage of what you have in your fridge. You can always use a traditional roasting rack if you want. My son was 5 or 6 and would not eat many vegetables but liked this, so it was a keeper. He never noticed the okra in it. You can also substitue or add what you like to it easily. This makes a huge pot, so be ready to share or freeze some! I cook it on top of the stove in a dutch oven. I serve it with corn muffins and it is a meal. I hope other's enjoy it.

After trying this recipe, I can certainly see why.  PURE comfort food here!  When fall comes, this is what you'll be craving.
   I usually take two days to put these together--stewing the chicken and sauteeing the vegetables on the first day; making the cream sauce and the crust the second day.  Do not be intimidated by the crust!  It's just a top crust and hangs over the side of the dish in a rustic, country fashion.  Very, very easy to roll out and work with.  Also, don't buy any special oven proof bowls for this recipe--I always make it in two 9&amp;quot; pie plates and it fills them nicely.  I add about 10 minutes to the bake time, but watch carefully so they don't burn.

It is a bit time consuming but flaming the chicken is fun for the whole family!! The Capon (which is basically a fattened, gelded rooster) can usually be found in specialty markets but you can substitute a large chicken. I usually serve salad, rolls and baby red potatoes cooked with butter and parsley. Some of the instructions and measurements are a bit vague, but all my mother's recipes tend to be that way. Please use Kosher salt, there IS a big difference. Also, watch your broth, I found that I have to add about another cup so the bird doesn't dry out. I have also added the garlic to mashed potatoes rather than serving the garlic heads with the chicken. Either way, this chicken is a real winner!
