Quorn Chili

After my inital surprise that there were either very few or no recipes with the versatile vegetarian ingredient Quorn. I thought I should introduce you Americans to this great product. I believe it can be bought in the frozen sections of most large health food stores in the US and in all the big supermarkets (chiller and freezer sections) in the UK.

It's great for vegetarians as well as a change for meat eaters. Give it a try! -- posted by Janette1

Artichoke Risotto

A vegetarian and vegan favorite that can be served as a side dish or entree. Another great recipe adapted from a weight loss tracking website. NOTE: Carnaroli rice is a popular Italian rice used specifically for risotto's. Coming from the Arborio rice
family the grain is larger and can absorb more liquid than other rices. You can find this rice in Italian markets or specialty foods in your local grocery stores. -- posted by Lauralie41

Onigiri can be very hard to handmake. Moulds are available but difficult to get in the UK without paying high prices, small jelly mould or egg cups work really well. -- posted by PinkCherryBlossom

Rice Chile Verde

This is a recipe given to my Mother by friends in the 70's? I was forbidden to share it but I like sharing and think everyone should have a chance to try it! It's ooey gooey cheesy yummy! It uses "mild" green chilies not hot ones. Everyone that tries it requests the recipe. It is very bad for you but worth having at least once a year for a potluck. I've had friends try to make it with lowfat or nonfat ingredients and it doesn't work. I also have tried mixing all the ingredients together and it doesn't taste as good, the layers matter (even though they melt together)! I usually double or triple it and bake it in a removable crock from my crockpot then put it on low in the crockpot for potlucks. If you do this the layers are still the same but double or triple the amount in each layer. I usually assemble it the night before and put it in the oven right before the event. For extra gooeyness add extra jack cheese in the layers to completely coat them. Remember for a single recipe: you are using 3 cups of "cooked" white rice which is made from 1 cup of dry rice. One cup of cooked rice per layer (3 layers). Enjoy! Very yummy with my Recipe#233148. -- posted by Engrossed

Green Rice Casserole

I don't remember where I got this recipe. I think I cut it out of the local newspaper years ago. It's really easy and I think it could be modified easily to meet your tastes. I often use boil-a-bag rice for easy preparation, and have often used dried parsley (still using 1/2 cup) and it always turns out great. -- posted by Karen67

Chinese Fried Rice

This was my mother's favorite way to use up leftover white rice. It really doesn't taste like the fried rice you get at a restaurant, but it still a great meal. I typically throw in whatever vegetables I have in my kitchen, and leave out the shrimp or chicken. I also cut this down to accommodate the amount of rice I have. Cooking time does not include making rice, chicken or shrimp since this is usually made out of leftovers. -- posted by Karen67

Isaiah's Vegetarian Paella [ Kosher ]

This kosher, vegan paella recipe owes its inspiration to Studentchef's "Recipe #175908" (Thank you, Studentchef!) This is a variation of that recipe that contains more traditional paella flavors and is made in such a way that creates a "socarrat", the crusty layer of browned, caramelized rice at the bottom of the pan which adds a certain je ne sais quois to paella. The wider your pan is, the thinner the layer of rice will be and the more flavorful, chewy socarrat you will be able to create. You can also try replacing some of the broth with a splash of white wine, and using marinated artichoke hearts in addition to the other vegetables. -- posted by What's Cooking?

" I Thought I Had Nothing to Eat" Rice

I have no money, so I had to make something to eat out of what I had hanging around (not much). This is what I ended up with!! I had to eat it by itself, but I think it would be good with a juicy steak or some grilled marinated portabello mushrooms. The flavor of the rice depends on the tea; I'm thinking about making some rice with lemon tea and black pepper, basil, dill and red pepper to have with some fish. I used 1/4 teaspoon as a standard measurement for all the spices, they are meant to be "to taste". -- posted by Sarah 11879

Pressure Cooker Risotto With Vegetables Du Jour

This is a good recipe to use up those extra vegetables you have in your fridge at the end of a long week. It's super fast and always gives good results. The long way is better (isn't it always?), but this method will work in a pinch. One word of caution: I have tried being super lazy and putting raw veggies in the cooker with the rice initially but the results are pretty mushy. It's definitely worth the extra effort to steam the veggies in the microwave or steamer and add them when the rice is done. -- posted by Eat Your Vegetables!

Croatian Rizi-Bizi (Rice and Green Peas)

This is very popular side dish in Croatia, served with various meats and sauces. It is almost inevitable Sunday side dish with roasted or fried chicken. The recipe is with fresh green peas removed from shucks but it can be done with canned or frozen peas. This recipe is from Cooking High School in Zagreb, 1st year, slightly adopted to avoid too many steps and dishes (they, students, don’t wash their dishes). -- posted by nitko

Zarela's Famous Creamy Rice Casserole from Aaron Sanchez

I love Aaron Sanchez. He is one of my favorite TV chefs. He runs a number of restaurants. The one he runs with his mother is called Zarela's, his mother's first name. He was on a show called, "The Best Thing I Ever Ate" with his mother. His choice was Zarela's creamy, cheesy rice dish. This is what Zarela wrote after the show. I am posting it here so I don't lose the recipe.

"I was just on the Food Network show The Best Thing I Ever Ate with my son, chef and Food Network star, Aaron Sanchez and within minutes viewers were going to my web site www.zarela.com, signing up for updates and writing me to share the recipe. Thank you very much for your interest and I hope you enjoy our famous creamy rice casserole.
This is a superior party dish that can be easily pre-assembled and reheated just prior to serving. This is why it is high on the list of all caterers in Northern Mexico, myself included. What makes it a favorite of all eaters is that it has layers of flavors - creamy and hot, crunchy corn kernels, and the cilantro adds a refreshing after-taste." -- posted by Felina
