			<description>I got this recipe off the internet a while back, but I can't remember which website.  It is my favorite way to serve rice.  It's simple to prepare, very tasty and turns common rice into a tasty side dish to complement just about any main entree. I've been making it for a long time now, and I find that it goes really well with just about any main dish.  But my all-time favorite is to serve it with baked chicken breasts served with a tangy lime sauce.  UPDATE....based on feedback, I have worked on improving this recipe.  Specifically, I increased the amount of water (from 3 1/2 cups to 4 cups, which I think produces a much fluffier rice. We were able to find a 200 gram vacuum-sealed package of cooked chestnuts from France that made that ingredient very easy to add. We didn't add any salt at all...your choice.

			<description>This is a recipe that I have been making since I was a teenager. My Step-Father was Armenian, and we ate this pilaf often, with our evening meal.  It has a great buttery flavor, and can be made with either brown rice or long grain, white rice. It's YUMMY either way. 

I learned to make it with just butter. However, using a combination of oil and butter, helps to keep smoking and burning to a minimum, while still imparting the great buttery taste. I have also made it with just olive oil, and also with a combination of butter and olive oil. Of course, the flavor is slightly different. 			<description>This recipe is adapted from Ingrid Hoffmann's Green Rice recipe (foodnetwork.com) so that it will work in a rice cooker.  It has great flavor with just the right amount of heat.  I now use this recipe instead of the standard red rice with Mexican dishes.  It is great as a side dish with almost any Mexican food.  The hub and I have even put left over rice in lightly-fried tortillas to make rice tacos that were out of this world.  
Note - I use sushi grade rice almost exclusively in my cooking becuase I love the stickier texture.  Accordingly, I have not tried making the recipe with standard or brown rice.  You may need to adjust the amount of chicken stock, especially if using brown rice.  This recipe is very easy to double or triple when feeding a crowd. Although the recipe calls for basmati rice, I think you could use any long- or medium-grain white rice. Although it is traditionally served as a side dish for any type of meat I usually eat it all by itself as a meal.  I just season it with black pepper and red pepper and find that it doesn't need any additional salt.  The soups are salty and I use salted butter so no need to add more.
