			<description>This is another of my family favorites. I learned how to make this rich, shrimp stew when we lived in Louisiana. It is fast &amp;amp; simple to prepare and tastes great. I honestly almost always use the precooked frozen shrimp in this, as they are available year round. I am completely guessing on the prep and cook times - I know I can get this dish ready in under an hour from start to finish, including thawing the fish and chopping the veggies. The cooking goes very quickly. I serve this atop bowls of hot rice and make hot sauce available to add more heat to individual servings. 			<description>Someone once described to me their version of &amp;quot;the perfect fried rice&amp;quot;. This is hardly &amp;quot;the best&amp;quot; by most culinary standards, I'm sure, but it fit their criteria to a tee: dark rice, (not brown rice, but white rice that is dark) separate grains, not sticky and oily, NO peas, NO carrots, EXTRA bean sprouts. I managed to solve my problem of getting the rice &amp;quot;dark&amp;quot;, (without using sooo much soy sauce that it turned into a salt lick), by making the rice using vegetarian mushroom broth instead of water. I am by no means an expert in wok cooking, but I tried to describe to the best of my ability the frenzied way I usually make this rice. The key, I find, for all wok cooking is to have all you stuff prepped and ready to go, cuz once you start, there's no turning back! The type of oil and vinegar is not specified in the original, although I have made some suggestions.  Prep time assumes you are starting with already cooked rice.  This might be an acquired taste for some, and it needs a good deal of seasoning, so please add as much salt, pepper, etc as you feel it needs. It's easier than it looks. I like using chicken and shrimp in mine but you can use just about any kind of meat(s) you want. 			<description>I adapted this recipe from Cooks.com.  I like Basmati or Jasmine rice for this recipe.  Each adds its own subtle flavor.

Note:  I changed the estimated number of servings from 10 to 6 because after making it twice, I can say that this recipe seems to inspire &amp;quot;seconds&amp;quot; and &amp;quot;thirds.&amp;quot; We eat a salad along with it--no bread, soup, etc.   If you are controlling the portions for a dinner party or are serving a variety of side dishes along with this main course, use the higher number of servings.

Note 2:  I had this leftover yesterday for lunch, and it warmed up great in the microwave.  Freezing seems to be fine, too.

Note 3:  Because we were running low, my husband substituted parmesan cheese for swiss, cut the amount of cheddar cheese in half, and mixed the cheeses into the casserole instead of putting them on top. NOTE: I sub 1 can cheese soup &amp;amp; 1 can cream of celery for the two cans of cream of shrimp and add some extra shrimp and I think it is good! Prep time includes time to cook rice and shrimp in skillet. :) Also, I will separate this into TWO casserole dishes, then cook one all the way (follow recipe through to the end) and the other I freeze right before sprinkling with cheese. I am jsut careful to eat it within about one month since there is seafood in the casserole. Also, sometimes I make half chicken/half shrimp or one of each. When I add chicken instead of the cream of celery soup I use cream of chicken. I always use the cheese soup. Really the possibilities are endless :) Also, add some cayenne pepper if you like it spicy!
