Chase's Favorite Taco Soup

This soup is a wonderful change from the normal "tacos". I named it after my 4yr old who ABSOLUTELY LOVES it!!

You can add different beans, or onions etc. I cook without onions as I'm allergic, but am sure they'd be a great addition! -- posted by Chef #851832

Chicken Continental

My mother found this recipe on the can of cream of chicken soup about 35 years ago. She used to make it for Sunday dinners and it was a family favorite. I don't know if the name is made up or if it was the original name on the can of soup. I have seen and tasted similar versions to this, but this is the original and best tasting. It may be a tad more prep time, but well worth the effort. -- posted by designerchef in Chicagoland, Illinois

Mom's Cowboy Chili

FYI, this is NOT a real chili recipe. When we were kids, we began calling this 'cowboy chili' because the beans and beef made us think of chuck wagon food, and my mom went along with it. I've modified this recipe over the years to fit my adult tastes, but it is still kid-friendly (if you prefer, leave out the chili powder and red pepper). This recipe is great fresh, but it's even better as a leftover since the flavors mix better the longer it sits in the fridge. Also, the beans, rice, and tortillas turn this into a large amount of filling food, which helps your kitchen economy. -- posted by Starvin' Single

Mushroom Chicken over Rice

I first saw this recipe in a Good House Keeping Cooking Book years ago. And it has turned into one of my families favorite.

This is a great recipe as you can use just the number of breast you need or add more without having to add more other ingredients.

Follow Rice package instructions for prep on rice. Is good over white or brown.

I usually use milk, at least 1/4 cup as I don't often have cream on hand but the cream does make it scrumptious. We usually use more mushrooms because we love the mushrooms. You can sub canned mushrooms but they don't add as nice a flavor to the finished dish. Try Beef Broth for a heartier taste as well.

If you follow the recipe exactly in preparation it will come out perfect everytime. Even if the gravy starts out lumpy! -- posted by LyndaV

Pantry Challenge Turkey and Rice Casserole

Periodically I make a real effort to use up everything in my pantry and freezer so that nothing goes bad or out of date. Sometimes it gets a little interesting as I try to use up the last of stuff. This is one of those recipes. Pretty tasty though. I used turkey as that is what I had left over from Christmas. You can pretty much throw what ever vegetables you have on hand into the mix. This recipe really allows for substitutions. -- posted by Lucky Chef

Pork With Rice and Olives (Arroz Con Carne De Cedo-Dominican Rep

Wonderful dish that bakes in the oven. Doubles nicely & cooks unattended - good enough to serve guests. I like it spicier & greener - dried habanero (few seeds) & handfuls of parsley from the garden makes an especially nice dish. Serve with fresh pineapple salsa & tossed green salad (full of garden vegies in the summer). Allow 6 hours marinating time - let set in the fridge overnight.

Chicken, Cashews and Red Pepper Stir-Fry

This dish balances salty, sweet, tangy and spicy ingredients. It is truly wonderful! :) Recipe is from Barbara Lauterbach, Cooking Light Magazine, April 2009 edition. She suggests that it be served alongside a quick rice pilaf. Cook a 10 oz package frozen white rice (such as Birds Eye SteamFresh) according to package directions. We had rice already made since there is white rice always around!! Combine cooked rice, 2 Tablespoons drained chopped water chestnuts, 1/2 teaspoon crushed red pepper flakes, 1/4 teaspoon salt (or perhaps one of Mrs Dash's 13 choices) and 1/4 teaspoon freshly ground black pepper and a sprinkling of chopped green onions. Make sure you have it all chopped and ready so that cooking it will be a breeze. ;) -- posted by Manami

This recipe uses canned vegetables, and is easily put together the night before a tailgate. Just mix the uncooked rice, the chicken, and the rest of the combined ingredients at the stadium in a roasting pan and cook on a covered gas grill. Serve with your favorite adult beverage and offer hot sauce. -- posted by Chef #514414

Almond Chicken and Rice

This was in the latest Kraft Foods recipe magazine. I am looking for gluten free, dairy free, garlic and onion free recipes and this was pretty close. I just added salt and left out the garlic powder. I also used precooked brown rice. I had cooked 2 dry cups of rice and added it all in with the broth. Turned out pretty good. I had never thought of browning chicken with Italian dressing! Plus, I just used regular Italian dressing. -- posted by WI Cheesehead

Add 1/2 Tbsp. curry powder to the broth mixture and 1/2 cup raisins with vegetables. Garnish with freshly diced apples, if desired. Another great way to serve this basic is Cranberry Chicken Dinner. Add 1/2 cup dried cranberries and 1 tsp. poultry seasoning to broth mixture.
