			<description>My DH found this recipe in a Paul Prudhomme book and has adjusted it to our preferences.  Great side for just about anything  (especially grilled foods) with a light flavor - which doesn't end up competing with your other dishes.  Really easy to make, just toss it in the oven and forget about it (so to speak) while you work on other things.  :)  We tend to like the gorgonzola cheese lately, but feta also works really nicely.  It all depends on what your main dish flavor is and your preference. 			<title>Upma Kozhakattai With Thuvaiyal - a Mouthful of Joy</title>

			<description>This is a hurried entry to my own event. Funnily enough, I was so enamoured by the beautiful entries that people have sent in, I nearly forgot about sending my own entry. 
Upma Kozhakattai-now what kind of confusion is this? Upma is a mainstay breakfast in most Indian homes and Kozhakattai is something that Tamilians offer to our beloved Lord Ganesha to keep him happy. Upma Kozhakattai is none of these. This is a fine example of 'saatvic' food. Check out what 'saatvic' means here. As I write this, a doubt arises in my mind as to does food cease to be saatvic if it has chillies, even though the end result is not at all spicy.

My grandma used to make this one, once in 3 months or so- making it one of my favourite tiffins. (You get the drift? The rarer it's made, the more it's liked- or as goes the saying-familiarity breeds contempt) The common fellows like Idli, Dosai, Upma used to fall in the second category. I guess grandma would soak, dry and then grind the rice to obtain the base for making this dish. In today's times, the above three steps are replaced by these three steps-a visit to the supermarket, pick up a packet of idli-rava, pay for it!

Upma-Kozhakatti is steamed rice flour balls with a bit of seasoning and coconut. This is served with a lentil-coconut spicy and sour chutney. 			<description>This recipe is adapted from Ingrid Hoffmann's Green Rice recipe (foodnetwork.com) so that it will work in a rice cooker.  It has great flavor with just the right amount of heat.  I now use this recipe instead of the standard red rice with Mexican dishes.  It is great as a side dish with almost any Mexican food.  The hub and I have even put left over rice in lightly-fried tortillas to make rice tacos that were out of this world.  
Note - I use sushi grade rice almost exclusively in my cooking becuase I love the stickier texture.  Accordingly, I have not tried making the recipe with standard or brown rice.  You may need to adjust the amount of chicken stock, especially if using brown rice.  This recipe is very easy to double or triple when feeding a crowd. Prep time includes time to cook rice and shrimp in skillet. :) Also, I will separate this into TWO casserole dishes, then cook one all the way (follow recipe through to the end) and the other I freeze right before sprinkling with cheese. I am jsut careful to eat it within about one month since there is seafood in the casserole. Also, sometimes I make half chicken/half shrimp or one of each. When I add chicken instead of the cream of celery soup I use cream of chicken. I always use the cheese soup. Really the possibilities are endless :) Also, add some cayenne pepper if you like it spicy! Whole milk and cinnamon rice milk really work best for this recipe, but some tasty variations that really add to this pudding's richness are vanilla rice or soy milk, and Silk Pumpkin  Pie flavored soy milk (which is only seasonal, I wish it was available year-round! And is it just me or does Silk Pumpkin Pie Soymilk taste just like Silk Nog that's available around Christmas, only they package it differently? So if you're making it around Christmas, use Silk Nog!) This awesome dessert is great for parties and potlucks,

If you don't have a poblano chile, you can use a jalapeno, or any other green pepper like it.  If you don't want spicy, you can use a regular green bell pepper. 			<description>I grew up eating a Filipino version of Congee called &amp;quot;Arroz Caldo&amp;quot;. My grandmother would have lots of dark chicken meat in it and huge chunks of ginger that I would end up biting into (not fun when you're 7 years old). Since then my own kids have developed a love for the traditional Chinese-style congee (also called rice soup) they serve in restaurants, especially during cold Autumn and Winter days. Some people may be uneasy about using the 'century duck egg' (or 'thousand year old egg' is really just as egg that is preserved in salt, ash and lime) but don't judge it in it's unpeeled, chopped up state - added to the congee, it really adds a yummy complexity to this dish, even my 2yo daughter loves it. This recipe is for you if you want a warm, hearty, simple and economical meal. Enjoy!
