Vietnamese Sugar Cured Beef Salad

A Vietnamese family who own and run our local fish'n chip shop gave me this recipe. The beef takes up a beautiful flavour. Make sure you use fresh beef for the recipe. I prefer to use the rib eye fillet cut. It is easier for me to carve. A great summer dish for those hot, hot summer days. -- posted by Chrissyo

Leftover Roast Beef Spicy Salad

Vietnamese Caramelized Chicken Marinade

Hue Chicken Salad Ga Bop

The two main ingredients in this recipe are the chicken, which must be juicy and cooked just right (the technique here for cooking the chicken is based on the Chinese method of submerging a whole bird in boiling water. This simple method produces moist, succulent chicken every single time), and the rau ram (Vietnamese Cilantro), which must be used liberally. This dish originated in Hue, the ancient imperial capital of Vietnam where ga bop is served as a snack with beer or as a side to chao ga (chicken rice soup) or with just a bowl of steamed rice! -- posted by ~Rita~

Lorie's Vietnamese Salad, Hanoi Style

I got something like this recently at a local Vietnmese restaurant except they used shredded pork and grilled pork combined. It was light, yet filling, and perfect for warm weather. I bought my meatballs from the freezer section of my local Asian market, but you can make your own using any pho vien soup recipe that includes meatballs.
In some ways this is like bun salads, but is arranged like a composed platter.
