Shrimp Shooters

Whenever I cook for an Hors D'oeuvres party, everyone's always looking to see what type of shooter I'm going to do, this time. This is one of my most popular ones.

As in all my recipes, if you want this one to be "hot", just use more blacken on the shrimp.

This is not the recipe where you want to use large expensive shrimp. I use 41 - 50 count which are a single mouthful after you've cut them in half. -- posted by Cap'n Ron

Spicy Pan-Seared Salmon

I made this salmon to accompany "Zataran's Black Beans and Rice". It was a quick and easy fix for a busy workday dinner. The salmon turns out juicy on the inside, crispy and brown on the outside and spicy from the combination of seasonings. If you desire to tone it down a notch, cut the amount of cayenne pepper in half.
George Foreman Simple Grilled Salmon

I am sure you can do this just as easily on the regular grill, but it was too hot outside today, and I was just cooking for myself, so the George Foreman worked out better for me. This recipe is tailored for 1 person/1 serving, however you can change the serving size if need be. Unfortunately, I am the only one in the house who likes Salmon. You can marinate this before hand if desired, however, I did not. -- posted by Ann Marie Wilson

Crab and Havarti Omelet

Skagit Bay Hideaway, La Conner, Washington. One of the most iconic foods of the Northwest, Dungeness crab is caught along the ocean coast, in the Puget Sound, and in numerous bays such as Skagit Bay. Here the sweet crabmeat is paired with mushrooms, tomato, Havarti, and green onion for a savory breakfast dish. At the Skagit Bay Hideaway, they often garnish the omelet with nasturtium flowers from the garden.

Peter Canlis Shrimp

Canlis, Seattle, Washington. Peter Canlis was one of the most influential restaurateurs in Seattle's early years of fine dining. A testament to his impact is the fact that Canlis is still open more than fifty years later, the tradition now continued by his son, Chris, and daughter-in-law, Alice. For the complete depth of shrimp flavor in this recipe, use the optional shrimp butter to finish the dish. It is made by cooking the shrimp shells with butter, which draws a surprising amount of flavor into the butter. From The Best Northwest Places Cookbook (Volume 2) Cynthia C.
Potted Shrimps for a Traditional Yorkshire Shrimp Tea

Delicate pink shrimps nestled in spiced butter that are packed into earthenware pots, and sealed with golden clarified butter - quintessential British fare that is tinged with timeless elegance of an old-fashioned Seaside teatime treat!
Although Morecambe Bay in the North West of England is most famous for its potted shrimps, I remember these amazing Yorkshire Shrimp Teas from my childhood; you would see signs outside country cottages and farmhouses along the Yorkshire coastline near Scarborough and Whitby. Potted shrimps are traditionally served with hot toast and lashings of hot (preferably Yorkshire) tea! Serve these potted shrimp as appetisers, or for a real “Yorkshire Shrimp Tea” - with hot buttered toast, fresh lemon wedges and a pot of tea. This recipe is based on a 19th century recipe found in an old country cookbook, which I bought in an antique bookshop in England.
Shrimp and Chanterelles in White Wine Cream Sauce

This sauce was a combination of a recipe we found in La Vera Cucina Italiana by Donaldo Soviero and DH's creativity. We used med-lge shrimp, about 41-50 size. We had a lovely crop of Chanterelles in the woods and DH made fresh pasta using the recipe on the back of King Arthur's Perfect Pasta Blend. There is a copycat version of this pasta blend posted here, Recipe #227629. This is a fantastic dinner to share with good friends. All you need is a green salad with a simple vinaigrette and some nice Chianti, light some candles and get ready to enjoy dinner! -- posted by Trinkets

Seared Ahi Marinade

I wanted a recipe that was similar to the ones I have had a restaurant in the past. I searched the site and found some good sauces for seared ahi- but just not what I was looking for. I found one a lot like I was looking for at Simple Recipes- I tweeked it a bit and I'm posting it here for safe keeping because it was so yummy!! Mind you- it was fresh, wild caught ahi- which can make a difference. I'll let you know how it goes with frozen fish, should I break down and try it (but with two avid ocean fisherman in the neighborhood hood, it will be a desperate move!) -- posted by kda949

Real Gambas Pil Pil

This is the famous SPANISH Tapas dish that has been messed up by so called chefs around the world.
I know there are other recipes for this dish, but, I live in Spain and this is how they are made here. Fresh RAW prawns should be used, pre cooked prawns turn tough if used and spoil the dish. I eat this every week at the local tapas bar. For the best result the dish should be cooked and served in a earthenware dish. Serve with some crusty bread to soak up the liquid. -- posted by Brian H

Whole Trout Amandine

Most trout amandine recipes call for use of fillets and frying with a breading.
I think these techniques mask the real flavor of fresh water trout.
I prefer to broil the fish and deboning a cooked trout is quite easy and gives the chief a chance to show off.
To debone a cooked trout use 2 tablespoons, first using a spoon remove the head & tail of the fish. Then make sure all the skin is cut. Using the spoons with the rounded side to the meat, carefully open the fish in butterfly style. Take the bones from the tail side and with a flourish remove all the bones at once. -- posted by Chef Rag Mop

Lobster Bisque

This recipe is based on the one from "The Silver Palate" cookbook by Julee Rosso & Sheila Lukins. They say, “Lobster Bisque is one of those extravagant and quintessential soups that must be prepared with tender loving care. Our version is made in the basic classical French tradition, though we’ve managed to eliminate a few of the time-consuming steps without sacrificing flavor. Savor this rich and soothing blend on a very special occasion.” We would have lobsters on New Years Eve, then I would make the bisque on NY day. -- posted by WorkingMom2three

Lighter Shrimp Scampi

(From Everyday Food)
Scampi minus the butter and wine. Keep a bag of frozen (raw) shrimp in the freezer and you can have a quick and easy weekday meal on hand. (It just takes a few minutes to quick thaw the shrimp, follow the directions on the bag.) I always have a jar of minced garlic in the fridge and I often sub bottled lemon juice for fresh. I serve with steamed broccoli and a salad. You could also serve with a side of pasta, rice, or garlic bread. -- posted by Pomtini

Little Smoked Salmon Cucumber Cups With Peppered Creme Fraiche

Delightful and EASY little smoked salmon and cucumber appetisers, and healthy too, with NO pastry! These are a breeze to make but they tick all the taste boxes, as well as being elegant. Cucumbers do vary in size, and I have suggested a medium cucumber, which is about 10" to 12" long.........however, any size will do!! Adjust the crème fraiche to how many cups you yield from a cucumber, I managed to make 30 cups and used 10 tablespoons of crème fraîche for that amount, 1 teaspoon per cup. Serve these with cocktails and pre-dinner drinks, or as part of a buffet. The cucumber cups and crème fraîche can be prepared beforehand, but these should only be assembled 1 hour before serving (at the most) and covered in cling film to ensure the smoked salmon does not dry out. Allow 2 to 4 per person, depending on what else is served. -- posted by French Tart

Dalmatian Salted Anchovy Salad

This meal is very old, probably from Greek and Roman times 2000 years ago. We in Croatia are very lucky because we can buy salted anchovies from direct producers who make these salted anchovies the same way old Romans did. And I must say, these home made salted anchovies are much, much better than grocery-stores one. Beside anchovy we also salt “srdela” a.k.a. sardine. Srdela is “heavier” to eat, and more cleaning work. It is very salty meal and a person should not eat more than three salted anchovies per day (that’s 6 fillets). This is how we prepare this meal in Dalmatia. -- posted by nitko
