Chicken Breasts Stuffed With Sun-Dried Tomatoes and Green Olives

This recipe is from the September 2009 Costco Connection magazine, but originates with Fine Cooking magazine. Another excellent recipe. I typed it here exactly. However, when I prepared it, I used chicken breasts without the bone, and just spread the mixture on top of the breasts, and covered and baked. Very tasty, very easy recipe to prepare. -- posted by DeidreJane

Chicken Parmesan Bite-Bake

Okay it sounds silly, right? I find it hard to fry the chicken breasts because they're different thicknesses from one end to the other. I just cut them into bite sized cubes and continue on with the recipe. My mom likes it with pasta under it, but I really just like it with a nice salad and some cheesey bread. Add as much or as little as you like; this is just a basic, tasty recipe. Enjoy. :o) -- posted by NicolinaSurel

Turkish-Style Grilled Chicken With Yogurt and Cumin (Tavuk Izgar

This is from "The Mediterranean Kitchen" by Joyce Goldstein. I haven't tried it but it sure sounds good! It's meant to be cooked over charcoal, or under the hot oven broiler. It gives a choice of 4 half-chickens, but I couldn't get the system to accept them. I'll probably make this with bone-in thighs as that is what I usually buy, and skewers would be an unnecessary step/cleanup. -- posted by firefly68

Turkey Meatball and Escarole Soup

From The Italian Slow Cooker, by Michele Scicolone. I have not made this yet, but it seems like a natural. Because the meatballs are added halfway through, it's not a recipe for those who need to be away all day. However, I think I would freeze the meatballs, and add them at the beginning. Escarole is a wonderful leafy vegetable, not well known in the US. Spinach or Swiss chard are suitable substitutes. The original recipe did not specify, but spinach should really be added only towards the end of the entire cooking period. -- posted by duonyte

Best Turkey in the World - Jamie Oliver.

This looked so fab on his Christmas TV special. I am making it for christmas lunch this year, and a few other of the recipes provided. Cannot give a guarantee that it will be as brilliant as it seems, but fingers crossed it is.

I'll post the recipe for the stuffing too, but I guess you can use any favourite recipes for stuffing you like if you want to.

Make the butter and apply the night before cooking.

The amount of butter required will depend on the size of the bird. For a 6 kilo turkey, around 150g-200g is used.

approx 30 minutes per kilo on 400 plus 20 minutes at the end.

Preparation time based on preparing the butter, spreading it, and packing the turky with stuffing. No refridgeration time, or stuffing prep. Cooking time based on a 5-6 kilo turkey. -- posted by JinxTheCat

Tandoori Chicken (Made Easy)

Indian food is my all-time favorite cuisine, and even I am surprised I haven't posted a single recipe yet... until now! Tandoori chicken is a classic North Indian favorite dish which is baked in a clay pot or oven. While you don't need a clay oven for this recipe -- the results are still fabulous (wow is it good)! I usually serve this with fresh lime wedges, creamed curried cauliflower in coconut milk, Recipe #408115, naan bread with mint-yogurt sauce and chilled lassi... a delicious meal surprisingly easy to make. -- posted by Bazaar®

Pound the chicken fairly thin. Once you start this dish, don't walk away from it. Do grate the fresh black pepper over the top at the very end when the chicken is on the plate. Not too much.

A simple and quick chicken saute--a restaurant quality chicken dinner ready on your table in just 30 minutes! The key to this recipe's success comes in flattening the chicken breasts to an even thickness before cooking them. They will cook evenly and stay perfectly moist throughout.
Pheasant Casserole

This recipe calls for Beau Monde seasoning. Beau Monde is a mellow beefy flavor with broad tones of celery, onion and garlic. Widely sought for use in party dips and Bloody Marys. Marvelous on salads, green vegetables, or pot roast. It can be hard to find. Spice Island is one brand. There seems to be a lot of recipe for making Beau Monde seasoning with a lot of ingredients in them, I'm sure they're all good so if you can't find the seasoning in the grocery store make your own or just omit altogether. -- posted by Catnip46

Chicken Fillet Skewers

This is the most delicious marinade ive ever tasted! I found the recipe in a magazine, thought id give it a try, and its been a favourite of mine, and everyone elses, ever since!
Ive found the chicken skewers are great for a small but fancy dinner or to bring along to dinner parties - but make sure you bring printed out copies of the recipe or youll be in big trouble!
Ive also made this marinade seperately for pasta, couscous and stir-frying vegetables, and each time its been a huge hit!
The spices are a bit random, but its the most delicious flavour in the world! .. Straight from New Zealand!
Go on, I dare you to try it! -- posted by vanessaro

Balsamic Chicken Taco Salad

My wife and I were traveling through Old Quebec and ordered a version of this at a roadside diner. WOW...we just about fell over from the first bite. Robin said she could copy this at home...we had no idea what to use for flavoring the chicken until she suggested Balsamic Dressing...and this is the wonderful result. So easy and good. A quick change of pace.
The great thing about this recipe is that all the prep can be done in the time it takes to cook the chicken. Fast and good. -- posted by Chef #1308572

Taste of India Rotisserie Chicken

My hubby came up with this recipe based on a desire to have a rotisserie chicken in our Showtime Rotisserie but was a little tired of the same 'ol rub that we traditionally use. We are both HUGE fans of Indian Cuisine and therefore this fabulous recipe came to be! Hope you enjoy it as much as we do! We have not experimented with roasting the chicken in the oven, but I assure you, if you can let the skin crisp up the same way that it does in a rotisserie..you won't be disappointed! -- posted by Marly Deschauer

Buffalo Chicken Wing Dip

a great way to enjoy chicken wings without the mess. great served with celery or tortilla chips for dipping. I like to use a crock pot to keep this dip warm during parties, just mix everything up on the stove than transfer to the crock pot or you can use a electric fondue pot on warm too. If you don't want to use those then separate into small batches in oven safe dishes so you can keep the dip warm. Not sure where the recipe came from, everyone I know has their own spin for it. -- posted by Chef ChristinaMac

Steamed Taiwanese Meatloaf

Got this recipe from my friend's mom, who makes it with pork. I haven't tried it with the pork, only turkey. Kids love this recipe - it goes well over rice. Best part is that it takes no time at all to make. On days when I don't have time, I simply mix everything together beforehand, cover it in saran wrap and throw the Corel bowl (which I can put directly into a steamer) into the fridge until 30 minutes before dinner time. To avoid using the chicken bouillon I have tried using chicken broth, but I really see no difference in taste. So I normally just make it using water and skipping the chicken bouillon altogether. -- posted by Fluffkins
