			<description>Very light and yet filling at the same time.  I just put these together the other day, so all of the ingredient amounts are approximate.  You could add any number of things to the salad that you like (bell peppers, red onion, etc.).  Also, my pitas were thin and large.  If you use thicker and/or smaller pitas, obviously you won't fit as much in each portion.  The hummus really adds character to these sandwiches (and also a little protein). 			<description>This sandwich goes waaay over the top! From a local restaurant which sadly does not offer this sandwich on their menu anymore. The restaurant did not skimp on the cheese either. I think the restaurant's manager said they lost their local supplier. It's also been a long time since I tried this that I don't remember if the restaurant added herbs to the sandwich (if they did it was a light sprinkle of dried parsley or oregano). I, however, and thankfully I might add, found Syrian cheese recently at our local Middle Eastern store. I can't tell you the exact type of cheese it is other than describing it as  hard/semi-hard, strongly flavored, white and salty. It could very well have been jibne baida which is what was used for this recipe. If anyone out there knows and is more familiar with Syrian cheese, could you please set me straight? Don't worry - most American grocery stores sell HEINZ and BATCHELOR'S, in the International/European/English/Irish aisle. 			<description>I used to make these all the time in southern Cali for my BF.  Now that I've relocated to the far North, certain fresh ingredients are harder to come by, so I haven't been able to make this sandwich in ages.  I'm not sure where the &amp;quot;m&amp;quot; stems from in &amp;quot;veggiemich,&amp;quot; that's just what we ended up calling it. :) The reason for mixing the mustard and dressing prior to spreading on the bread is to avoid uneven spreading while keeping the calorie count down.  Everything can of course be omitted or replaced to your taste; you can even make it Atkins-friendly by making a lettuce pocket and omitting the bread, hehe!  We loved using a lot of pepper for a nice kick. Enoki mushrooms look like no other mushroom. Long legged, uniformly smooth and cream colored, it resembles a bean sprout or perhaps a straightened spaghetti noodle with a tiny mushroom cap. Other common names are &amp;quot;golden needle,&amp;quot; &amp;quot;winter mushroom,&amp;quot; and &amp;quot;velvet foot.&amp;quot; In Japan it is called enokidake. As a complement to almost any salad, enokis will add crispness and a subtle radishy flavor similar to nasturtium leaves and flowers. Eaten raw, they will leave a hint of pepper on your tongue. Toss some into soup during the last few minutes of simmering, or drop them into stir-fried vegetable or meat dishes just before serving.

			<description>I put this together one night after work. I'm trying a new thing where I only eat meat one meal a day, and I'd already eaten chicken for lunch. When I got home from work my dad had made steak, so instead I used the grilled zucchini side dish and made a sandwich.

The zucchini has the texture of a meat like sliced turkey or ham, so it feels like you're not stuck with a pile of veggies between bread. The hummus is a nice protien to keep your meal well rounded.

There is nothing more glorious in nature then opening a processed and canned dill pickle from the summer months. Just biting into one sets off a whole memory of the previous garden and all the treasures it yielded. The second part of the recipe really is based on the typical and very heart warming grilled cheese sandwich. Talk about memories! Remember when you were a youngster, and the rain was pouring sheets outside? You were chilled to the bone from trouping around in it and  Mom met you at the front door, helped you out of your wet clothes and gathered the old cast iron skillet out of the cupboard. She then buttered two slices of homemade bread with real butter and put two wonderful slices of cheddar cheese between the bread and grilled away until the sides of the bread became crusty and brown? The inside oozed the cheese out, as it was ready to be devoured alongside potato chips and a pickle. Since I saw this recipe from &amp;quot;Rachel Ray&amp;quot; I have adapted this for the use of my summer pickles and pumpernickel or rye bread. But really you get your pickle, get your bread, some great cheese slices and there you go. 			<description>For those who don't like meat but want a totally rich French sandwich. French food was made for primarily meat lovers but I vegi-fied this classic. This is the ultimate French comfort food. (Served with a side salad instead of fries so I don't feel as guilty, haha.) Definitely not vegan friendly because I don't think soy butter and soy cheese could do this right, but you're welcome to try it as such. A great sandwich to have on a rainy day curled up with a good book. IMPORTANT NOTE: Nutritional info is inaccurate because I had to use real ham as an ingredient input or else the recipe wouldn't submit, says that &amp;quot;tofu sandwich slices&amp;quot; (and many other variations I typed) are not recognized in the database. Overall fat and calories are really lower than shown, unless you're a meat lover using real ham. I use Smart Deli brand ham-flavored tofu sandwich slices, they're really thin which is why I use 6 pieces. Per usual, I had this and that on hand and out came this creation.  It's GREAT with ketchup and is the closest I've come to having something vegetarian homemade that tasted like my Mom's meatloaf.  It makes a fabulous burger too! 			<description>This is the seitan recipe I came up with after looking at two fairly popular recipes (http://vegandad.blogspot.com/2008/06/veggie-lunch-meat.html and http://www.postpunkkitchen.com/forum/viewtopic.php?id=15959&amp;amp;p=1). This recipe makes a nice sized (7 to 8 inches I suppose) sausage like loaf and can probably be easily changed to your taste based on what spices you use. Note: if you want it to be more like the former recipe (like lunch meat) cook it longer (30-45 mins steaming, 45 mins baking), if you're looking for a nice ground beef substitute 30-35 mins steaming, then another 30-35 mins baking is better. I've used the longer cooked seitan in stuffing and the lesser cooked in dirty rice. Both were thoroughly enjoyed by all involved! I love them, especially when cut into small trianges and served with a cuppa (cup of tea!). Use the freshest bread - I like to use wholemeal, and a fresh salted farmhouse butter. I have inlcluded a soup idea at the end of the recipe, to be made with the excess stalks!
