Vegan Applesauce Nachos

I know it sounds weird, but bear with me! The applesauce sweetens it, but a flavorful salsa, salty chips, and earthy beans help to balance it out. This recipe is vegan and easy to prepare, best enjoyed hot. The ingredients are estimates, since I make this by sight or to taste, but it's easily doubled or tripled. Feel free to vary the recipe, for example using black beans instead of kidney beans. -- posted by Qzxyntop

Pasta and Beans

I found this recipe in a Nancy Clark Sports Nutrition Guidebook, but had to change it up for a vegetarian and a lactose-intolerant person! An easy and quick version of pasta so you can have some variety with the pasta! Finished with a salad, its a great, well-rounded meal! You can also add extra veggies and spices as you want (I like to add some garlic and red pepper flakes). You can also add cheese on top- I didn't so it would be lactose-free (although you can add goat cheese for lactose free as well!).
I also suggest a smaller type of pasta, like shells, rotini, etc) -- posted by Chef #1294045

Quatre Épices (Four Spices)

Based on a recipe from Simply French, the cookbook where Patricia Wells presents the cuisine of Joël Robuchon. Per the introduction, “Quatre épices, literally 'four spices,' is a classic French mixture designed to season terrines of pork or duck liver. Use the best-quality spices you can find, and grind them yourself in a spice or coffee mill. I generally prepare only the amount I will need for each terrine.” -- posted by mersaydees

Simple, Simple Green Peas and Sweet Onions Salad

This is a real quick and easy recipe. I got it from my Mother and I've been making it for over 40 years. It uses simple ingrediants you probably have in your pantry. You can adjust the amount of onions to your personal taste. I like it with a lot of Vidalia onions and lots of fresh ground pepper. It taste better if you prepare it an hour or two ahead of time. Can be served at room temperture or cold. -- posted by Naturelover

Pierogie Casserole

This is one of the first recipes I learned while away at college. Its a very simple side dish or main course. And great to take for a potluck dinner. This recipe freezes nicely and the leftovers are wonderful the next day. If you want, you can sauté onions in some butter and serve on the side. I would recommend using an 8x8 casserole dish and trimming the lasagna noodles to fit, but you can certainly use a 9x13; just add an extra sheet of lasagna to each layer. Enjoy!! -- posted by coffybean

Truly British Brandy Butter: for Festive Figgy and Plum Pudding!

Make your own brandy butter to smother over delicious, homemade Christmas Figgy or Plum pudding, and in only 5 minutes with this easy recipe,..........no Christmas table would be without this "naughty but nice" accompaniment! This is also wonderful when served with hot mince pies......prise open the pastry lids and dollop some brandy butter inside, preferably when they are warm, so the brandy butter runs through the pies!
Ming Tsai's Three-Vinegar Syrup

I'm a big fan of Ming Tsai and found this at ming.com. Sounds interesting! He says:

This vinegar reduction, which adds intriguing sweet-tart flavor to dishes, takes advantage of the fact that when balsamic vinegar is cooked down, its inherent sweetness is intensified. Three-Vinegar Syrup combines the complex flavors of balsamic, rice wine, and Chinese black vinegars. It does wonders for beef and seafood, but it can also be used to intensify the taste and aroma of sweet foods including fruit, or as a dessert sauce; I serve it over vanilla ice cream with great success. And because it is syrupy, you can use it decoratively, too, to beautify plates while adding a flavor accent. -- posted by firefly68

Brussels Sprouts in Soy Sauce

My wife and I love Brussels sprouts and this is our favorite way to prepare them. It's our own creation and so good that I'm amazed I have never seen a similar recipe anywhere. The flavors of the sprouts and the soy sauce seem made for each other. The recipe is quick and so simple that it can be thrown together as a side vegetable any time sprouts are on hand. I always use Tamari soy sauce, but anything you have on hand will do fine. And I always use olive oil, but butter or another vegetable oil would be fine if you prefer. -- posted by Cowshill

Creamy Coconut and Rum Baked Pineapple

I came up with this as a solution to leftover coconut milk and a fresh pineapple. And even on Weight Watchers, it was worth saving points for this dessert. The whole recipe has a total of 8 points. The rum for this dessert should be golden- a light rum will not produce the same depth of flavour. Number of servings will depend on the size of pineapple used- increase the sauce if using a large pineapple. -- posted by Shuzbud

Was surprised when I saw so many recipes for tomato soup calling for peeled tomatoes....but no instructions as how to peel them!
Make Your Own Single-Serve Vanilla Yogurt

Although it lacks the portability of something like Yoplait, Dannon, Stoneyfield Farms, etc. it's a good alternative if you like a cup of yogurt with breakfast. Most are 6 oz instead of a full cup, so I decided to use that measurement instead. Except for when I can get them really cheap or need to carry them to school or work, I think I'll use this method to make vanilla yogurt from now on.
Natural Drain Unclogger

Based on a recipe from my Shaw’s grocery store’s Wild Harvest November 2009 holiday pamphlet. It says, “Along with potato peels and onion skins often comes a clogged sink. Thankfully, there is a way to unclog sinks without sending toxic chemicals down the drain and out into the environment.” Cook time is boiling water time.
Southern Breakfast Biscuits - Easy but Light and Fluffy

Having run through a range of biscuit recipes, this has become Kimberly's favorite way to have them. I'm not going to complain, they're lovely and fluffy, and if I have to make them, it's easy as pie.

They're a little crispy on the edges, top and bottom, deliciously soft on the sides, and almost impossible to get wrong.

All credit to the talented Kimberly for the recipe's creation.

Animal-Free Raspberry Vodka Gelatin Jigglers

This recipe for vegetarian-friendly, alcoholic gelatin jigglers (think Jello Jigglers meets Jello shots) combines fruit flavored vodka, uses seaweed-derived gelatin called agar-agar (as opposed to nondescript gelatin, which is likely to be animal-derived), and reduces paper/plastic waste (no cups). The ratio of water to alcohol is 1:1, so these jigglers are quite alcoholic! For better taste/less alcohol, you might consider reducing the amount of alcohol to 1 1/2 cups and increasing the amount of boiling water to 2 1/2 cups. Of course, it's all a matter of personal taste and preference.

This is from "The Liver Cleansing Diet" by Dr. Sandra Cabot. I am posting it for safekeeping. It has a delicious nutty flavor. I have categorized it as a breakfast food, but it is very versatile and can be used as a topping, in salads, etc. It is intended as a nourishing food when you are on a cleansing or raw-ish diet, and gives you extra protein, fiber and essential fatty acids. LSA is named after its 3 ingredients: Linseed (Flaxseed), Sunflower seed and Almonds. -- posted by coconutty

Victorian Watercress Tea Sandwiches for High Tea and Picnics

During Victorian times, children used to take watercress sandwiches to school in place of meat ones. I love them, especially when cut into small trianges and served with a cuppa (cup of tea!). Use the freshest bread - I like to use wholemeal, and a fresh salted farmhouse butter. I have inlcluded a soup idea at the end of the recipe, to be made with the excess stalks! So a soup and sandwich recipe then! -- posted by French Tart
