			<title>Basic Seitan - Chicken Flavor</title>

			<description>I have been making seitan quite a bit lately, and have been trying various cooking methods (baking, steaming and  now simmering).  One of the more difficult methods as far as consistancy goes, (so I've read), is simmered seitan.  The following recipe I found in La Dolce Vegan cookbook, and it sounded so simple and mistake proof, I had to try it.  I have now conquered my fear of simering seitan in broth!! 			<description>Another recipe courtesy of the great Madhur Jaffrey.  I'm often looking for new eggplant dishes, and can't believe I haven't tried this particular recipe until today, it's really very easy.  From what I've read, traditionally in this dish the eggplant would be fried - in this version it is broiled which obviously cuts down on the calories quite substantially.  I also used light coconut milk.  I only had one eggplant on hand today and it turned out great, a nice side-dish or main for 2.  I can imagine that by using two regular eggplants you would be able to serve at least 3, if not 4, as a main.  Next time you run across good looking eggplants in the store, pick a few out and give this a try! 			<description>I tasted these first at a Saturday Farmers' Market at Stellenbosch (near Cape Town). The lady who sold them had several types of mushrooms on her skewers and grilled them over coals -- so use as many types of mushrooms as you can get -- or one type only, they'll still be good! Having enjoyed them once again at the Market, I imitated them, but I think my marinade is better than hers!! Quick and easy, and grill along with the meat. On hot coals or charcoal this takes only a few minutes -- do not try and get them to be soft, as they'll break up. Put them on with the meat, and turn them gently with tongs, as they shrink and can slide off the skewers easily. If they catch here and there, no matter. 			<description>I blend fresh organic carrots, mango, onions, garlic, and a hint of lime juice with the Habanero. The result is a pepper sauce that harmonizes heat and flavor without the overpowering pungency found in traditional vinegar-based hot sauces.  The capsaicin is not only hot on the tongue, it is brutal on the eyes or in cuts on your fingers.  When preparing peppers you can wear rubber gloves to protect your hands and keep your hands clean.  capsaicin has a way of staying on your hands even after washing.  Safety glasses will help you avoid splashes or touching your eyes while cutting and cleaning peppers.
 The steam from boiling vinegar is very strong.  Avoid breathing it. 
Cooking your hot sauce will help blend the flavors together, break down pieces of solid ingredients and pasteurize the sauce.  It is an important step which should only be skipped if the sauce will be used up completely within 1 week. I freeze in 1 cup plastic containers or zip lock bags to use in soups, sauces, cooking rice, etc. The computer needs volume so I have put approximate amounts for the veggies, but use how much you want. It all depends on what veggies you use frequently.  Sometimes I add a little tomato paste or leftover  sauce, leftover gravy, whatever would enhance the flavor of the broth. Rich taste, full of beta carotene, filling but not fattening &amp;amp; inexpensive  - gotta love these vegies! Used a Golden Butternut to make this soup last night. It was the first use of our version of Sherry Peppers (habaneros, cinnamon sticks, allspice berries, black peppercorns in dry sherry) - turned out mighty well. I subbed hot pepper  &amp;amp; dry sherry into this recipe as Bermuda Sherry Pepper is hard to come by. The squash cooked down to a beautiful thick orange base that did not need pureeing - the carrot bits were soft too but added a bit of texture which was appealing. Keeps well for reheating in microwave  without separating too. Posting at request of DN who wants the recipe after tasting. She says last fall, Garth made a sad statement like only three more months until you make me that awesome German chocolate cake again! She made the cake the next day. She doubles the frosting recipe to frost the entire cake, because Garth likes extra frosting, but one recipe will frost the tops of the layers and do the trick just fine- unless you are Garth! He says &amp;quot;If there is meat around, why waste the time on side dishes?&amp;quot;  He ate two HUGE servings of this......it is THAT good!  If you cannot find candied jalapenos, just use one small fresh jalapeno (seeded and minced) and a tablespoon of sugar....it is just as good.  We love curry, so we add more curry powder.  Taste it and customize it to your taste!

			<description>It's time for all thing pumpkin! Came across this recipe in The Washington Times. It called for breaking up gingersnaps &amp;amp; adding them to the ice cream when it is almost firm. I prefer to serve them on the side. Better to make the custard ahead of time - it needs a 3 hour minimum chill time (preferably overnight) before processing in ice cream maker. Once churned, eat it quick - it gets grainy when stored beyond a few days in the freezer.
