Dijonnaise Potato Salad

Taken from an ad for Hellmann's Dijonnaise Creamy Mustard Blend. My mum lost this recipe recently and it turned into a bit of a crisis when we couldn't find a comparable one online, as this is the best one we've found (and just about the only potato salad I'll eat), so when we found it again, we agreed that it should be preserved on here in case it goes missing in the future! -- posted by Torricus

Warm Chicken and Barley Salad

A very simple easy salad, healthy start to the New Year. A light simple dressing with fresh ricotta salata cheese and served on it's own or serve over a bed of fresh baby greens - I happen to like watercress for this. A rich hearty oat bread on the side. You can use leftover chicken, or cook a couple of chicken breasts up, or better yet, finish off that turkey in your freezer. -- posted by SarasotaCook

Cauliflower, Broccoli, Olive Salad With a Parmesan Dressing

A nice salad for company or for any night of the week. Lightly blanched broccoli and cauliflower (still warm), tossed with olives, onions, a creamy Parmesan dressing and topped with crisp bacon. If you want, blanch the broccoli and cauliflower ahead of time and keep in a ziplock container or bag until you are ready to serve. If you want to serve it warm, just reheat in the microwave. I also do the bacon ahead and just keep in a small ziplock bag or container. This is a great salad that you can do ahead. Then just toss and serve. And any leftover dressing is great over vegetables, chicken or just as a standby salad dressing. -- posted by SarasotaCook

Southwest Four Bean Salad Supreme

Tim and I came up with this recipe after having a deli salad that we thought we could make on our own...and better. This is a very versatile recipe. I have served it on a bed of greens and have added chopped grilled chicken on occasion. You can also add a can of quartered artichoke hearts and a jar of chopped roasted red bell peppers. ( Be sure to drain both.) It's a great day before shopping recipe as most ingredients are canned, bottled or frozen. Be prepared...this makes enough to take to a potluck. It makes approx. 18 cups. -- posted by Laura911RN

Mexican Salad in a Tortilla (Ww 6 Pts)

This is a delicious recipe from Weight Watchers New Complete Cookbook.
The crunchy tortilla cups soak up the yummy dressing and become a treat on their own.
To make the tortilla cups use my Recipe #381215
The Weight Watchers cookbook calculates the calories to be 307. Zaars calculation is lower which would make the points value lower as well. I think the cooking spray might be counted in the calorie count by WW. -- posted by Dreamer in Ontario

Sarasota's Fresh Crunchy Creamy Celery Salad

This is just a nice twist on a celery salad. I would love to say this is my recipe, but I can't. This is from a small Bed and Breakfast in North Carolina. The Owner / Chef was nice enough to share her recipe with me, and had many other recipes that looked wonderful, but this is the only one I asked for. Unfortunately, the Bed and Breakfast is no longer there and the owner can't be contacted. She was a fantastic cook. The cherries with the combination of the pecans and the creamy dressing, just make it a perfect combination. I love to serve this with a honey roasted chicken, just something light and simple. Enjoy it! -- posted by SarasotaCook

Broccoli Salad With Fresh Herb Vinaigrette

I created this salad for Thanksgiving 2009 with a dressing based on a recipe I already had. This is a make-ahead salad. You can certainly change up some of the vegetables here. The possible addition of asparagus or tomato is intriguing. The marinated mushrooms had an especially wonderful taste and I wouldn't leave them out for anything.
Karen's Caesar Salad

This is the result of many years of trial and error...as well as the generous base recipe donated by a girlfriend about 27 years ago when we went on a girls' weekend to Mendocino and tried to out-cook each other. Her salad was a huge hit and eventually evolved to this recipe, which has been a family favorite ever since. The croutons are boxed/purchased but made special by sauteeing them in butter just before adding them to the salad. The dressing is mixed up in a blender in a matter of just a few minutes. Enjoy! -- posted by Epi Curious

Russian Potato Salad

This salad was first served in Moscow in the 1860s, by Chef Lucien Olivier, and the recipe was a closely guarded secret. It is also called "Salade Olivier", "Russian Salad" or "Sour Russian Potato Salad". This classic dish has many variations. Here's mine. I use the pickles found in recipe #408712, but dill pickles will do. The garnish includes the tomatoes found in the same recipe, but fresh will do just as well. -- posted by Ice Cool Kitty

Dagwood Salad

My mom always made this salad for BUNCO nights and I've been searching for the recipe for a long time. Mom is no longer around and her recipes are unavailable. I finally found it in a cookbook I have here at home. This is my all time favorite salad and dressing combo and I think this recipe I found finally got it right. Keep the salad, dressing, and bread separate until ready to serve or it gets all mushy. Shake the dressing well before adding to salad. -- posted by OKCPmed

I couldn't find a good scallop and spinach salad recipe, so I googled around and this one came up. It's from a diabetic recipe site. I prepared the mushrooms in a frying pan for convenience' sake and served the salad with a baked potato.

Enough of the justification: this is just plain good. At the end, you've got meaty smokiness from bacon; that incredible sweetness of corn; the fruity acidity of tomato; the tender, smooth fattiness of avocado, and the sharpness of chili.
Spicy Coleslaw

I am a single woman living on my own. When I come home from work the last thing I want to do is slave over a hot stove or spend hours making dinner. I need quick and easy options. I try to utilize as many "convenience" items as I can in order to help spend less time in the kitchen and more time relaxing. I like to keep the condiments from takeout and fast food places if I think I can use them for something else. I like to experiement with recipes and make them simple. This has to be one of the easiest recipes I make. The only thing that might be a problem for some people who want to make it, is you need to be near a Chick-fil-a. I use their spicy dressing. I don't normally like typical coleslaw dressing, so this is my little spin on it. I also like to double and even triple the recipe up for family bbq's and potlucks at work. Feel free to add your own items that you like....diced red onion, julienned bell peppers, etc. That's what is so great about recipes, you can make them your own. Enjoy! -- posted by Chef #188403

Pear, Cranberry and Stilton Waldorf Salad

This is an adaptation of one of Emeril's Waldorf Salad recipes. The key to making it delicious is using very hearty, crunch lettuce.
I was recently sold on quinoa and how awesome it is! Gluten free, an almost perfect protein, easy to prepare, the list goes on! This is a combination of two recipes, one of which I altered. The first is from this site, (#16399, Quinoa-Toasted). The second is from Allrecipes.com (Caron's Kickin' Quinoa Salad), to which I made some changes. We thought it tasted a bit like sushi and loved it!
