Every time I make this dip, everyone wants the recipe. I adapted it from an original recipe in a vegetarian cookbook I have, only I added flavors to suit my own taste. You can add or subtract the powdered ingredients to suit your own taste, of course. Enjoy! -- posted by NatureChef

Iraqi Potato Cakes With Tuna Filling (Batata Charp)

These are crispy fried potato cakes with a tuna and light vegetable filling that is just delicious. DH liked them with the tuna added though it is not traditional. If you prefer you can leave the tuna out for the original vegetarian version. I serve them with a corn free ketchup and plain yogurt to dip them in, sour cream would be good too.
Sarasota's Red, White & Green Cheese Torte

Not sure what to call this...It's an old classic. I didn't come up with this, but I have added my touches over the years, but it is still a favorite. Now I love to make these in 3 small ramiken molds to put on a serving platter rather than 1 large mold (to me it is just a nice presentation), but any decorative bowl, or even just a nice round bowl. You just don't want a dish that is too narrow or deep as you are making layers. It is perfect for parties. Just make sure to serve a variety of crackers, toasted baguettes, vegetables, bagel chips, or just fresh breads and fruits to enjoy all the flavors. Note: using fresh pesto really helps if you have the ingredients. I make a basil pesto, but a good quality store bought or one from your local Deli will work just fine. -- posted by SarasotaCook

Five-Star Mexican Bean Dip or Casserole

At a loss about what to make for dinner or as a snack, and you don't want to go to the store? This is super quick and delicious, and you can eat it as a meal or a bean dip. This is a great way to use up the bottoms of all the tortilla chip bags. If you don't have taco seasoning mix, there are lots of recipes on zaar to make your own. I didn't have enough pinto beans so I also used butter beans, great northern beans, and red beans.
El Torito Red Pepper Dip

When served El Torito's flautas with this dip, I damn near keeled over with pleasure. It's complex without being "difficult", unless you count how hard it can be to find Japanese peppers. If you can't find them, I'm sure you could sub something similar. These are mild, thin-skinned, 3-inch-long peppers with wrinkles running down the length of them and a blunt tip. I found them in a large Asian market's produce section on a plastic-covered styrofoam tray. Though I roasted and dehydrated them, I don't think the drying is necessary. Roasting whatever pepper you use, however, is crucial to the flavor of the dip. My husband and I both agreed this is a versatile dip and we'll be using it on hamburgers tonight. Hope you enjoy it as much as we did! -- posted by Sandi (From CA)

Garlic Feta Toasts With a Warm Olive Spread

I don't know about you, but I'm a bit of a soup and salad person, and once a week I have just a salad or soup/salad, soup/sammy for dinner rather than a heavy dinner. I make this quite often and serve it with a bowl of my potato soup or my chick pea soup, but you can use whatever you like best. Slice a few good fresh tomatoes or some fresh fruit if you prefer, and you have a great easy dinner. Two (2) nights a week, I really try to eat a bit lighter - and this fits the bill. But, it also makes an amazing appetizer, or a great side dish for any meal during the week. Simply put, it is just really good. Now whatever you do ... don't get rid of that cheese - Save! It makes a great spread on baguettes or makes an amazing spread for a sandwich. It will last a couple of weeks in the refrigerator covered. and, make all this ahead of time and just heat up, toast and serve. -- posted by SarasotaCook

Menma - Braised Bamboo Shoots for Ramen Topping

I normally make this using whole refrigerated bamboo shoot that I can purchase in Japanese market nearby in California. If whole bamboo shoot is used, cut lengthwise into about 1/4 in slices first. Then cut into 1/4 inch slices. Finally cut the 1/4 inch slices into half. The slices do not need to be perfect - they will taste great when finished. You can also use canned bamboo as well (although taste will be not as good as the fresh version). Menma is granddaddy of one of ramen toppings. In old days if you ordered ramen in Tokyo this was always one of the toppings along with shoyu or soy sauce flavored soup. You can purchase this in a bottle commercially but the cost is quite high for a small bottle. I like to sometimes serve this as a snack for beer, white wine or sake. If served as snack, it is very good with sprinkling of roasted sesame seeds on top. -- posted by Rinshinomori

Easy Homemade Veggie Crab Cakes/Sliders-Weight Watchers 4 Points

I like thowing these on a salad and they are great for guests. I improvised this so feel free to switch up the veggies! I put this into my WW recipe builder and its

absolutely delicious! From my most cherished cookbook: Moosewood Restaurant Low-Fat Favorites. No vegetarian kitchen should be without it.
To make these completely vegan, be sure to get Chinese wonton wrappers (either from your local Asian food store or from the freezer section of a good grocery). Melissa's wonton wrappers, and other brands, typically sold in the produce section of grocery stores contain EGGS. -- posted by Chef #767224

Harissa-Spiked Houmous

This recipe is delicous -- for a nosh, cocktail party or just an evening snack! I love these kinds of appetizers because they don't take much time, this one is vegan -- so almost anyone can eat it. I like to serve them with Pita Crisps: preheat oven to 375ºF. Split 6 pitas hrizontally into circles, then cut each circle into 6 triangles. Lay them in a single layer, rough side up, on 2 or 3 baking sheets. Use a pastry brush to brush triangles with olive oil, then sprinkle with fennel seeds and a pinch of sea salt or instead of fennel and sea salt use Mrs Dash salt free seasonings. For example: Table Blend, Original or Garlic & Herb, these have a flavor all their own -- try it you might like it. These can be made about a week ahead, just store in airtight container. -- posted by Manami

Artichoke Salsa

Salsa doesn’t have to mean “South of the Border.” This one is 100 percent Italian, loaded with tomatoes and artichokes (1/4 cup of vegetables, and all the nutrients they provide, in each portion) and flavor. Serve it on slices of whole-grain toast, or as a dip for chips, crackers or vegetables. And, if you’re really enterprising it makes a great pizza topping.
