			<description>One of our favorite recipes.  A friend gave me a hummus recipe a few years ago, but my husband has altered it so many times that this is the recent final product.  Tastes so good with great flavor!  Our favorite way to eat this hummus is on bread with sliced avocados and tomatoes on top.  Also tastes great in a pita sandwich with avocados, tomatoes, lettuce, sprouts, cucumber, etc.  You can use it as a salad dressing by doubling the water. He made up this &amp;quot;meaty burger&amp;quot; to fit his tastes and now its a family favorite.  Has a little bit of a different flavor from most traditional sloppy joes, but we think the taste is outstanding! Use less cayenne pepper or omit it if you're afraid it will be too spicy.  It's just enough spice that my kids aren't bothered by it, but I have a few friends that the spice might be too much for them.  If you want to make sure the recipe is completely vegan, check the veggie burger cans because many use egg. You can make an Egyptian version by omitting the cilantro and substituting fava beans for the chickpeas.  To make this truly &amp;quot;Israeli-style&amp;quot;, garnish with tahina sauce (made from ground sesame seeds), harissa hot sauce, pickled turnip, or sauerkraut.  In fact, all types of pickled fruits and vegetables (including regular dill pickles, eggplant, mango) work really well!  If you can't find tahina sauce, you can serve with hummus or a yogurt sauce. 			<description>This is the seitan recipe I came up with after looking at two fairly popular recipes (http://vegandad.blogspot.com/2008/06/veggie-lunch-meat.html and http://www.postpunkkitchen.com/forum/viewtopic.php?id=15959&amp;amp;p=1). This recipe makes a nice sized (7 to 8 inches I suppose) sausage like loaf and can probably be easily changed to your taste based on what spices you use. Note: if you want it to be more like the former recipe (like lunch meat) cook it longer (30-45 mins steaming, 45 mins baking), if you're looking for a nice ground beef substitute 30-35 mins steaming, then another 30-35 mins baking is better. I've used the longer cooked seitan in stuffing and the lesser cooked in dirty rice. Both were thoroughly enjoyed by all involved!
