I didn't have quick cooking brown rice and just used cooked brown rice instead- about a cup and a half- and it turned out just fine.  I also doubled the tomato sauce because I wanted to use it up and it was delicious.  You can definately play with this recipe. 			<description>Gluten-free, sugar-free, corn-free, soy-free, vegan!  I was on a crazy diet and sharing my food with friends who have allergies, so I developed these.  The rice and chickpea combination makes a complete balance of essential amino acids, so it's good vegan food too.  Oh, and they taste awesome.
I like brown rice flour, but you could easily substitute white rice flour.  I love onions, but you could use less or omit this ingredient entirely if you don't share my enthusiasm.  Sometimes I also add garlic for good measure.
They are best hot out of the oven, but do okay cooled.  I've also tried freezing these with good luck - making a double-batch on the weekend and bagging them 2-3 at a time for use during the week. -- posted by &lt;a href="http://www.recipezaar.com/member/902409"&gt;wormwood&lt;/a&gt;</description>

He says rice salads are among the few salads that don't deteriorate after the dressing is added, so they can be dressed minutes or hours ahead.  He recommends that you cook the rice a bit in advance, and dress it before it gets too cold.  He also recommends that you cook the rice like a pasta, in abundant salted water (for between 15 and 45 minutes, depending on the rice) and then drain it and dress it when the rice is cool enough to handle. 			<description>This is a wonderful way to serve garbanzo beans, AKA chickpeas.  This dish has a rich tomato-cream sauce with a Caribbean flare.  Serve with mildly flavored veggies.  Fry very ripe plantains and add to you meal for a wonderful sweet and salty combo.  Store leftovers in the refrigerator.  Reheat on the stove by mixing the rice and curried chickpeas, or reheat in toaster oven or microwave.

Special Notes:
Use soymilk or coconut milk if you are unable to find coconut cream.

			<description>This is very tasty. It comes from a cookbook called &amp;quot;On Rice&amp;quot; and I fell in love with it the first time I made it.  Definitely use a low-sodium soy sauce unless you love salt! I make lentils and rice quite often in a million and one different ways, and never with a recipe, but decided to post this one for safe keeping so that I can make it this way again. I served this as a rice ring (with easy glazed carrots and raisins in the middle). I had no onions on hand, but this would be excellent with carmelized onions on top. You may need to use a little more or less water depending on the age of your lentils. I used 6 1/2 cups, and it was perfect.
