Crock Pot Baked Beets in Warm Raspberry Vinaigrette

This is copied from "Not Your Mother's Slow Cooker Cookbook" and it is made in 2 parts. I haven't tried it yet. You could add butter, salt and pepper to the crock baked beets if you like and not make the viniagrette. It seems like an easy way to "bake" beets. *You need foil to wrap the beets. -- posted by Oolala

Vegan Mushroom Cholent in the Crock Pot

This is one I have been looking at for a long time. I haven't tried it yet but wanted to post it here for safe keeping and to allow others to try. From "125 Best Vegetarian Slow Cooker Recipes." I'd probably leave out the celery as I'm not a fan. The time to make does not include overnight soaking. Also, feel free to use a different soaking method, just make sure the beans are soaked and ready to go when you put this in the crockpot. -- posted by ladypit

Spiced Red Pears in Wine (Crock Pot)

This is one I'm considering for the holidays. It is originally from "125 Best Vegetarian Crock pot Recipes). The original says this is best in a 3 1/2 quart crock pot because that allows the pears to be submerged. This is served cold so it needs time to chill. Depending on the size of your pears you might need more wine. -- posted by ladypit

Easy Crock Pot Apple Butter

This is the first recipe I ever used to can apple butter. Recipe starts out with applesauce, great for any time of year. It was my first time canning and it turned out great! This would make great Christmas gifts. I gave a lot of mine away earlier this year and everybody loved it. Their only complaint: put it into bigger jars! This recipe make a dark, spicy, and sweet apple butter. Makes a great sandwich with PB.

Note: 3 quarts is equal to 12 cups or 96 ounces applesauce. -- posted by Watkinslady30

Pantry Clearing Chili Bean Soup

December 26 and the last thing I want to see as another store. Desparation leads to inspiration and this was the result. A soupy chili with a complex flavor that is part spicy and smokey with slightly sweet undertones from the pineapple. Since this was a pantry clearing experiment, you should feel free to do the same. Replace the pink beans with kidney beans or use red peppers instead of green ones. -- posted by justcallmetoni

Slow Cooker Mixed Yellow Dal

This recipe was inspired by a Trevti Dal --"three dals" -- recipe from my favorite Indian cookbook author Tarla Dalal. My recipe is actually four different types of dal but can be adjusted to accommodate pretty any type of split or quick-cooking legume. Preparing this in a slow cooker results in an amazingly creamy and flavorful dal that can be eaten on its own as a soup, or enjoyed with its more traditional accompaniments of rotis and rice. -- posted by Mrs Joshi

Homemade Stock

Saving all the odds and ends in the freezer while doing your daily cooking will give you an endless supply of stocks to cook with. You will not waste even those parts of the vegetables or meat that you paid for (usually by the pound), and will never again need to buy canned stocks. This will save you money and allows you to control the contents of your stocks. All the vegetables I have listed in the ingredients list are just ideas of things to save in your bag. You do not need each and every one of them to make a stock. Everything is optional. When you peel carrots or anything else, wash them first. It is rather difficult to wash peelings. I do not recommend strong flavored herbs like cilantro or vegetables that could color your stock strangely like beets. Note: In order for the recipe to post, I had to include measurements, but you don't need measurements. Just use what you have saved in your bags using more or less of whatever is there. -- posted by Karen From Colorado

Winter Squash, Chickpea & Red Lentil Stew

Inspired by the flavors of North Africa, this vegetarian stew replaces the tagine with the crock pot. The combination of saffron, ginger and cinnamon give of a wonderful aroma and flavor. It would tempting to substitute canned chickpeas here but you will get a different result. In this dish the chickpeas while tender have greater firmness than the canned type. Time saving tip: Prepare the ingredients the night before, placing the cubed squash, carrots, onions, tomato paste, garlic and ginger in one sealable bag or covered container, the lentils and dried spices in another. In the morning add the contents of both bags/containers, the soaked chickpeas and broth to your crock pot, turn it on and go. -- posted by justcallmetoni

Quinoa and Barley Breakfast Porridge

Here is a yummy alternative to oatmeal in the morning. Very healthy whole grains, too. "Super foods" some people call them. Takes a little while to make it, but very yummy. Add your own spices, sweeteners and dried fruit, to your taste. This recipe can be easily halved if you use a small saucepan. Supposedly you can cook in a small crockpot overnight, but I've personally only ever tried this on the stovetop. -- posted by MathMom.calif

Crock Pot Baked Beans

This is an adaptation from a slow-cooker recipe book. It is great because you can come home to a yummy meal. Some of my family likes this with hot dogs and/or brown bread. I often prepare everything the night before, then set it to cook in the morning. For the calorie-conscious, you can substitute Splenda for some or all of the sugar. -- posted by Laura Meehan

While this stew is no longer made with beef, the carrots, potatoes, onions, celery, and tomato cook in a thick brown gravy.
Crunchy muesli that the whole family will adore. Beats any store bought Muesli hands down and much cheaper too. PS: If you enjoy 'Fast Food' and lots of sweet things, please don't try this recipe. It is quite possibly a recipe that is not designed to appeal to an American palate. It is more of a low fat/low sugar version, a breakfast that will keep you going for hours without the hit of a low blood sugar levels within a short period of time.
A former roommate of mine gave me the basic recipe for this spicy aromatic stew. Don't be put off by the long ingredient list...you are in for 10-15 minutes of chopping and that's it!
Cholent D'or

This cholent is a very special veggie cholent that I have spent the past 9 months or so trying to perfect. Cholent was always something that I looked forward to having, but when I went vegetarian, I found it extremely hard to differentiate between "veggie cholent" and just another variety of bean/barley stew. Something was missing from all of those recipes, and I would like to say that I have finally found an acceptable replacement. Also good for those who just want to try something new. Enjoy!

Notes:
One thing about this cholent that is absolutely necessary is the brown sugar in the sauce. Please don't omit it! It adds a unique savouriness to the final dish that really helps this taste more like a real cholent. If you try to avoid sugar in recipes, try substituting agave nectar (very scant 1/4 cup) or if veganism is not a concern, substitute honey. -- posted by .ryan.

Crock Pot Oatmeal With Dried Fruit

Steel cut oats and your favourite dried fruits make for a delicious breakfast that's ready and waiting for you when you roll into the kitchen for breakfast. There's absolutely no need to add any sugar to the oatmeal, as the sugars in the fruit take care of that for you. Use any combination of fruit you have on hand; I've used apples, prunes, dates, apricots, cranberries, raisins, cranberries, strawberries, and pineapple and all are great but my favourites are apple/raisin, and dates all by themselves.
Frijoles Negros- Crock Pot Mexican Black Beans

At last I have achieved the perfect flavour of traditional black beans with the crock pot. It takes long but it is because of the crock pot; preparation really takes you few minutes of your time. Waiting is worth it and freezing some is an excellent way to enjoy this versatile dish any day.

After you have cooked them you can garnish them with diced tomatoes, fresh onion, oregano and some olive oil. If served cold it is great to add some fresh finely chopped jalapeños and some drops of lemon juice.

Still hot, you can separate the juice from the beans and use it for cooking rice or just drinking it in a cup with diced avocado and sour cream. There are many ways you can enjoy black beans, this is just the starting point.

Sloppy Joe Lentils (Slow Cooker or Crock Pot)

This is a semi-homade version inspired by the other sloppy joe lentil recipes here (thanks, guys!). This is for the 5-6 qt. slow cooker too. Hubby tried it and liked even though he's a carnivore. I made this one afternoon and froze half of the batch for another time. With a 6 qt. slow cooker, you can probably double the recipe easily (I ended up adding extra lentils to the recipe because I used too much water at first...ended up with 1.5lb. lentils and I still had plenty of room in my crock pot). -- posted by Honeywine

No Mess Crock Pot Steel Cut Oats

After being a zaar lurker for years, I finally am posting so I can find this recipe again. My husband gets up early for work and likes steel cut oats, but I don't want to be slaving over the stove or have a nasty crock pot mess. So I found this method on a blog (I don't know where exactly), and tried it last night. It worked perfectly! The oatmeal brulee came off a different blog and I haven't tried it but it sounds absolutely yummy! -- posted by Jonesy

Vegetarian Slow Cooker Split Pea Soup

Got this recipe online a couple years ago. I've tweaked it a little bit and will probably continue to experiment by throwing other vegetables in. It's a great soup for a cold day when I know I won't have time to cook dinner. I usually make a batch and freeze what we don't eat. It tastes the same when reheated after the freezer, but the texture does change slightly. Lasts a few days in the fridge as well. -- posted by whifflellama

This came from a cookbook I borrowed from the library and I am sorry I didn't write down the name of the book. We first made this in the dutch oven over the camp fire. Anything over a fire is good! But this is just as good done in the crockpot for 8 hours or on the stove for 35 minutes! I use a lot of garlic and a LOT of heat - so feel free to tone it down to your tastes!Enjoy - it's healthy! -- posted by Chef #694088

Split Pea and Parsnip Soup - Crock-Pot

The parsnips add a creamy sweetness that complements the flavor of the split peas. If parsnips are unavailable, use carrots instead. Because the peas have a tendency to settle on the bottom of the pot, a quick stir midway through the cooking process is helpful. The Liquid Smoke adds a "bacony" flavor to the soup and is available in most supermarkets. While this is intended to be vegetarian, from Fresh From the Vegetarian Slow Cooker, I also made this with a ham bone instead of the liquid smoke and was delicious. -- posted by ~Jen~

Lentil Barley Soup

From fatfreevegan.com, adapted from NewCenturyNutrition.com

Based on a recipe by J. Raymond

Thick enough to be called a stew, this hearty soup is easy to prepare and cooks in a single pot. Add more water or stock if you wish to have a thinner soup.

Pearl barley is the variety most commonly sold in supermarkets. Natural food stores offer hulled barley, which is slightly less refined and cooks in about the same amount of time. -- posted by Chef #1109421

Vegan Red Beans and Rice

I'm a Michigan native, and don't do a lot of creole cooking, but I enjoy french creole food quite a bit. I developed this vegan version of the classic New Orleans recipe for my fiancee. It is a healthier version of the original that nobody will object to.

You can add ham or sausage for a more traditional take. Traditionally this dish was made for Monday supper with the left over ham bone from Sunday. It could simmer away on the back of the stove while folks were buisy with the Monday laundry. -- posted by Chef #1180651

Veggie Chili

This is a recipe in development.
I've made it for years without a recipe, but now I'd like to start perfecting it. This last time was the first I've used dried beans, but because we know that it takes more energy and fossil fuels to ship canned beans, my husband and I are learning how. In order to capture what we ACTUALLY did in order to perfect the recipe, I'm including the days between initially boiling them and cooking the chili... this was necessity, and I'll edit the recipe when I make it next.

This is a spicy, vegetarian chili that freezes VERY well. I like to serve it with cornbread or spoonbread and some cheese. -- posted by Kendra PeloJoaquin

Rice Cooker Chocolate Cake

This dark, rich, chocolate cake is perfect with coffee on a lazy afternoon or as a special treat for a birthday cake. It has no eggs or milk so is ok for Vegans. Top it with your favourite frosting, or just sprinkle powdered sugar on it to 'finish' it for the table.I love the recipe as I alway seem to be out of milk and eggs, so this recipe suits my house!

Vegan Baked Beans a La Crock Pot

At the time I'm posting this there are two other vegan baked bean recipes on the Zaar, both look really good. I didn't find one for the crock pot however, using dried beans and no tomatoes.....so hopefully this fits that bill for someone else out there! I found the recipe online - http://www.beanbible.com. There are only a few things I tweaked, one being Bakon yeast. Unfortunately not something I'm at all familiar with or have ever seen in the stores, but I found out a little more about it and replaced it with some nutritional yeast & liquid smoke. Adjust the heat as you wish. NOTE: Soak the beans ahead of time (night before). The cooking time doesn't reflect the overnight soaking of the beans, but it does reflect the crock pot cooking time if set to low. Hope you enjoy! -- posted by magpie diner

Butternut Squash and Potatoes With Rosemary

From the Italian Slow Cooker by Michele Scicolone. It's wonderful to be able to use the slow cooker to make side dishes, especially on those occasions when the oven is engaged by the main event. You cannot go wrong with butternut squash, potatoes and rosemary.
Vegetarian (Or Vegan) Black Bean Chili

I cut this recipe out of the Philadelphia Inquirer years ago and have adjusted it to suit my tastes. I've made this often enough that I don't measure the spices but you should adjust them to your desired level of spiciness. My new favorite way to eat this chili is over baked sweet potatoes, topped with sour cream and Frank's Red Hot Sauce. -- posted by Chef #673508
