			<description>This cake has density to it, it can be served vegan by substituting extra virgin olive oil for butter and water for milk, it will taste just as good. Traditionally its cut in small squares and each square has a pine nut or blanched almond, I've served it with toasted sesame seeds when I wanted Sfoof and was out of pine nuts and almonds. You can omit the anise, however the flavor adds a little sweetness and takes it to another level.
I absolutely love this cake and I hope you will too!

			<description>I discovered a very interesting product at Wild Oats a while ago.  It's called Montina Pure Baking Supplement.  Its a gluten free, high fiber,protein product. You can check it out at: http://www.amazinggrains.com/  I replaced 1/3 cup of the flour in this recipe with this supplement. This recipe originally called for 2 cups of flour.  You could just use flour instead if you prefer.  Montina gave the muffins a bit more bulk and the flavor was excellent. I couldn't include it in the ingredients as recipezaar didn't recognize this product.
I baked my muffins in a large muffin tin that holds 6 muffins. When the muffins cooled slightly, I coated them with a mixture of sugar and cinnamon. I found this recipe on the Raw Chef site and tweaked it a little to suit my tastes.  Its really good, and a little goes a long way as holds true with most raw foods.  The reason raw food goes further then cooked IMHO is that the enzymes in the food are &amp;quot;alive&amp;quot;, and because of this the ability for your body to process and digest them is better.  You get the full nutritional benefit from the food when its raw.  The satisfactory factor goes up when you eat raw.  Please use organic where ever possible.

Dont let the word vegan put you off this cake is every bit as decadent as its fat-and-calorie-filled cousins. Ive sampled my fair share of vegan cakes, and this is by far one of the best!

Note: if you use water-packed tofu for the filling/frosting, the tofu needs to strain for 24 hours. If you use the aseptic tofu, the filling may need to chill for 1-6 hours before being usable, so make the filling/frosting the day before baking the cake. But if you wish to make a layer cake out of it or turn it out of a pan you will need to add a couple of egg for integrity's sake :) As a layer cake I tend to dress it in an old fashioned way with jam or marmalade between the layers and boiled icing (usually Fanny Farmers Seven Minute Frosting).

This is an odd little recipe that came from my mother-in-law's friend and supposedly came from a diabetic cookbook. I've tweaked it quite a bit since then.

Sorry about the halves and quarters but they come from adjusting to fit two 8'&amp;quot; rounds.

 For this recipe, you will need to create a cold version of a double boiler. Fill a small pot about half way with cold water and ice cubes, and place a bowl on top of the pot ( you may want to do some measuring first, because you do not want the bowl to fall into the pot). This is a great way to make sure the whipped cream stays chilled while you give it a good whip!

			<description>This is so easy to make and yet delicious. Even tough I do not like rice crispies at all I enjoy these muffins. I was acctually  looking for a recipe like this here but could not find it so i posted my recipe here. In Iceland you will hardly find a potluck where these are not one of the treats. But don't be late as they are usually gone soon. Your kids will love these!
Note: You may use cornflakes or Cheerios or a mixture of these instead of rice krispies but they are in the original recipe.
