			<title>Eggplant Curry &amp;quot;no-Fry&amp;quot; Sri Lankan Style Using Coconut</title>

			<description>Another recipe courtesy of the great Madhur Jaffrey.  I'm often looking for new eggplant dishes, and can't believe I haven't tried this particular recipe until today, it's really very easy.  From what I've read, traditionally in this dish the eggplant would be fried - in this version it is broiled which obviously cuts down on the calories quite substantially.  I also used light coconut milk.  I only had one eggplant on hand today and it turned out great, a nice side-dish or main for 2.  I can imagine that by using two regular eggplants you would be able to serve at least 3, if not 4, as a main.  Next time you run across good looking eggplants in the store, pick a few out and give this a try!  (One last note, apparently the original version of this normally calls for 2 tsp of cayenne...wow, that would be hot.  1/2 tsp, as called for here, was just about right for us, but of course, season away as you like!). -- posted by &lt;a href="http://www.recipezaar.com/member/953275"&gt;magpie diner&lt;/a&gt;</description>

			<title>Mushroom Kebabs for the Grill</title>

			<description>I tasted these first at a Saturday Farmers' Market at Stellenbosch (near Cape Town). The lady who sold them had several types of mushrooms on her skewers and grilled them over coals -- so use as many types of mushrooms as you can get -- or one type only, they'll still be good! Having enjoyed them once again at the Market, I imitated them, but I think my marinade is better than hers!! Quick and easy, and grill along with the meat. On hot coals or charcoal this takes only a few minutes -- do not try and get them to be soft, as they'll break up. Put them on with the meat, and turn them gently with tongs, as they shrink and can slide off the skewers easily. If they catch here and there, no matter. Unlike traditional couscous, pearl couscous which takes its name from its pearl-like shape and size is often described as a toasted pasta specialty. Like regular pasta, it is made from hard (durum) wheat and water. But instead of being dried, it is toasted in an open flame oven. It has a rich, nutty flavour and a chewy texture, with a smooth, almost buttery mouth feel. It makes a perfect side dish to meat, poultry, or fish instead of potatoes, rice, or traditional pastas or couscous. It cooks in around 10 minutes by the absorption method  just like rice  and you can also use it in a variety of dishes  just like rice and other pastas.  Product ambassador, chef Gabriel Gate, has developed a number of recipes using pearl couscous. 			<description>I blend fresh organic carrots, mango, onions, garlic, and a hint of lime juice with the Habanero. The result is a pepper sauce that harmonizes heat and flavor without the overpowering pungency found in traditional vinegar-based hot sauces. Creating a spicy but not overpowering sauce that allows you to spice your food without drowning out the original flavor.
 The capsaicin is not only hot on the tongue, it is brutal on the eyes or in cuts on your fingers.  When preparing peppers you can wear rubber gloves to protect your hands and keep your hands clean.  capsaicin has a way of staying on your hands even after washing.  Safety glasses will help you avoid splashes or touching your eyes while cutting and cleaning peppers.
 The steam from boiling vinegar is very strong.  Avoid breathing it. 
Cooking your hot sauce will help blend the flavors together, break down pieces of solid ingredients and pasteurize the sauce.  It is an important step which should only be skipped if the sauce will be used up completely within 1 week. I freeze in 1 cup plastic containers or zip lock bags to use in soups, sauces, cooking rice, etc. The computer needs volume so I have put approximate amounts for the veggies, but use how much you want. It all depends on what veggies you use frequently.  Sometimes I add a little tomato paste or leftover  sauce, leftover gravy, whatever would enhance the flavor of the broth. I took this dish to a vegan potluck last night, and it disappeared in seconds. This morning I was awoken at gun point (exaggerated for dramatic effect) to post this recipe.... So, I thought it wise of me to comply. This recipe takes me about an hour of prep time, and about an hour to cook. There are shortcuts one may take to cut down on the prep time, but the first time, I suggest leaving ample time to prepare. I have used a variety of nuts for this recipe, all working out well (this last time I ran out of sesame seeds, so I used 2 tbsp of my tamari roasted pumpkin seeds, and 1 tbsp of raw pecans). I also like to make my dishes gluten free for potlucks, so I used &amp;frac12; cup of blue corn meal, and &amp;frac12; garbanzo flour in place of the whole wheat pastry flour, the taste was amazing, but a little more crumbly then whole wheat pastry flower. For years now, on the day before Thanksgiving my mother has made what in my family goes by the slightly unappetizing name of &amp;quot;Tuscan Onion Goo.&amp;quot; Inspired by a visit to a family-owned gem in Florence called Ristorante del Fagioli, this sour-sweet onion confit was originally served to her as an antipasto. She enjoyed it so much that she asked, in halting but enthusiastic Italian, if the waiter would tell her how it was made. He promptly ushered her into the tiny kitchen, where the sweaty, grinning chef himself showed her how to put together the dish. She took mental notes and then came home and recreated it, with a few small adaptations.

The recipe has since become one of my mother's signatures, and Thanksgiving would simply not be Thanksgiving in our house without &amp;quot;Tuscan Onion Goo.&amp;quot; It's a great addition -- or alternative -- to cranberry sauce. While the flavors are very different, it serves a similar role: the sweetness provides a counterpoint to other, more savory sides, and the acid in the vinegar cuts through some of the richness that often pervades the meal.

The confit couldn't be easier to make, although it does require a bit of a time commitment. You can use frozen pearl onions, but it's worth trying with fresh cippollini. My mother insists that you have to be crazy to make it with anything other than frozen onions after the first time, but I find peeling cippollini somewhat cathartic. Once the peeling (or the opening of the bag) is done, you briefly saut&amp;eacute; the onions in a bit of olive oil and deglaze them with sherry (my mother's addition -- the chef at Ristorante del Fagioli used Cognac), then simmer them slowly with some water, sugar, red wine vinegar, raisins and toasted pine nuts, until the onions are limpid and soft and all of the flavors have had a chance to meld. It is usually served with roti/chapatti &amp;amp; yogurt or sometimes with Masoor Dal (lentil) here is the recipe of a basic okra curry that was passed down from my grandmother to my mom &amp;amp; down to me. Its the tomatoes that give it a different taste compared to the other recipes posted so far. 

Note if you want to make &amp;quot;Bhindi Gosht&amp;quot; (Okra curry with mutton) after frying the onions add mutton, let it cook on medium low heat for 20 minutes, then follow the rest of the recipe. 			<title>Twice Baked Sweet Potatoes</title>

			<description>Sweet potatoes are oh so healthy.  The drawback is when people add all the junk.  So how could I make something a little more dressed up that plain old baked sweet potatoes, but healthier than a sweet potato pie.
