Feel free to use the basic outline of the recipe to create your own petit fours.  Just use the basic components (sponge cake aka genoise, simple syrup, some sort of filling like frosting/jelly/buttercream/fruit curd, and glaze such as marzipan/fondant/ganache) and follow the assembly instructions given. I used Giardelli's bittersweet choc. chips, Sucanat and whole wheat flour, but you may use whatever you have.  I doubled the recipe and got 5 custard cup sized cakes.  If you want more choc. lava, bake them for 10 minutes, less, 11-12.  This is so quick and easy and it looks like you slaved in the kitchen, yet takes a total of 20 minutes from beginning to end! Don't be scared of the tiny bit of coffee it only deepens the flavor of the chocolate. These don't require any frosting but the kids love it with frosting and some colored sprinkles so that's what I typically do. I like to use my lazy version of Recipe #19353 (a little bit of this, a little bit of that) and they always look and taste wonderful.
