Excite Me Tonight! Chicken!

Dress up that ordinary grilled chicken to create an exotic Mediterranean meal that will excite your family and friends. These 4 marinades will transform your menu into an international culinary delight. Whether you use whole butterflied poussins, game hens, broiler halves, chicken parts or boneless chicken cubes on skewers, you will find the following marinades intensely flavorful. Marinate the meat overnight in the refrigerator and bring to room temperature before cooking. If you like, thread blanched vegetables such as sweet pepper and onion chunks, onto skewers and cook alongside the chicken (or thread them on the same skewers). Serve the chicken with fresh lemon wedges and a traditional side dish or salad with bread or pitas and watch it disappear. Cooking times vary.I have been told the Egyptian marinade is especially good on whole butterflied squab (pigeon). I adjusted the amount of lemon juice in the Lebanese marinade if you love lemon, go for the 1/2 a cup.... if lemon is just "okay" stick with the 1/4 cup. -- posted by NcMysteryShopper

Turkish Tavuk Sote (Chicken Saute)

This recipe is one of the handful of easy Turkish recipes that I learned while studying abroad in Turkey. The dish consists of cubed chicken in a tomato sauce...quite simple, but it tastes good! Turks usually eat it with bread, however it can be eaten alone as well. If the tomatoes don't seem to provide enough juices I have sometimes added a little water (probably not necessary, but you can judge this towards the end). Serve in a sided dish or shallow bowl. Afiyet olsun! -- posted by MSU_Girl

Tavuk Doner - Chicken Doner

This is not quite the chicken doner from the restaurants but it's quite easy to make and satisfy my cravings. You must use fresh chicken and not use chicken that has been previously frozen. You will need to prepare the chicken overnight and freeze. I had trouble slicing my chicken with an electric knife so I would defrost it a little longer then 45 minutes. This recipe comes from www.turkishcookbook.com - For the Aussies ground chicken = minced chicken - Does not include overnight marinating time -- posted by Chef floWer

Chef Flower's Turkish Cypriot Taro Casserole - Kibrisli Kolokas

This is a traditional Cypriot Turkish recipe, that past generations have been cooking. My mother is away so my friend has given me the recipe. *** Thanks Bet's *** I think my mother also uses diced celery ribs but I can't be sure. Note: There are few varieties of Taro, but this dish is normally used with colocasia root. Enjoy -- posted by Chef floWer

Turkish-Style Grilled Chicken With Yogurt and Cumin (Tavuk Izgar

This is from "The Mediterranean Kitchen" by Joyce Goldstein. I haven't tried it but it sure sounds good! It's meant to be cooked over charcoal, or under the hot oven broiler. It gives a choice of 4 half-chickens, but I couldn't get the system to accept them. I'll probably make this with bone-in thighs as that is what I usually buy, and skewers would be an unnecessary step/cleanup. -- posted by firefly68

An appetizer in which chicken wing drummettes are rolled in a mixture of sesame seeds and seasoned bread crumbs, then roasted until golden and crispy.
