Carbless-Low Calorie Turkey Lettuce Wraps

I'm not a huge participant in the low-no carb dieting. However, I am always concerned with my calorie intake. I find the easiest way to cut calories, is to cut out unneccessary carbs. One day, I decided to throw out the tortilla and try wrapping my meal in a lettuce leaf. You get the great taste and nutrition of a regular turkey sandwich or wrap, without the extra 200+ calories or added carbs. It's fast, easy, health and tasty! -- posted by happylilhappa mitsuko

Authentic Hot Brown

This recipe comes directly from the Brown Hotel website. The following is Copied from the recipe page.
In 1923, The Brown Hotel drew over 1200 guests each evening for its dinner dance. In the "wee" hours of the morning, the guests would grow tired of dancing and retire to the restaurant for a bite to eat. Guests were growing rapidly tired of the traditional ham and eggs, so Chef Fred Schmidt set out to create something new to tempt his guests' palates. Thus, the Hot Brown was born, an open-face turkey sandwich with bacon, pimento, and a delicate mornay sauce. Who could have guessed that this chef's dedication to service would start such an enduring and well-loved Louisville tradition… the Hot Brown -- posted by /\rtful ])odger

These delicious sandwiches make a simple lunch special or a quick dinner seem not so rushed. Perfect for leftover holiday ham and turkey; or you can use deli sliced ham. This recipe was inspired by a beautiful cool spring evening and left over Easter ham. Our 4 year old loved his - I used a mayo and mustard combo for his. Goes well with a fresh garden salad, oven fries and a nice bottle of California White Bordeaux. -- posted by NcMysteryShopper

Cheddar and Turkey Panini

For a tasty treat this weekend, treat family or friends and serve them paninis of toasted whole grains, melted aged cheddar, lean turkey and a burst of flavour from a Mcintosh apple - so good! I found the recipe in our local newspaper, and it is really good for the leftover turkey at holiday time, it makes something just a little different to use up the leftovers - -- posted by Chef mariajane

Turkey Reuben Sandwich

This is much lower in calories and fat than a corned beef reuben sandwich, and just as tasty!! The best thing is you don't even have to turn on the stove for a hot sandwich!! I always make this sandwich when I have leftover sauerkraut to use up. -- posted by DoubleA's Mom

Turkey Reuben

Lower fat version of a popular sandwich! One of my favorite sammies. I frequently make this in my George Foreman Grill. For me, the greatest part of this is that it doesn't call for the standard Thousand Island dressing, which I hardly ever have on hand. -- posted by kittycatmom

Asian Turkey Burgers With Sesame Mayo

Hoisin sauce gives these burgers a juicy texture, while ginger and garlic provide a burst of flavor and water chestnuts deliver an appealing crunch.
Serve them over toasted whole-wheat buns with a side of tender greens.
We used this tangy mayonnaise to enliven the burger even more or for a chicken sandwich or a dip for a platter of wonderful roasted vegetables or perhaps use it as a dressing for sliced napa cabbage with scallions.:) I had some Apricot Mustard left over from another dish and the combination was great - I served it on the side.
Try a Cashew Chicken Salad in a Sandwich on a Hot Summer Evening

The title is pretty self-explanatory, and I think you'll agree that this is a nice way to spend a summer evening. Kettle (crunchy) potato chips on the side, a couple of home-made cookies or a brownie, some carrot sticks, and you've got a pretty decent brown-bag lunch, too. The original recipe (from Taste of Home, Aug/Sep 09) calls for pumpernickel bread. -- posted by Debber

Kentucky Hot Brown
