Turkey Asparagus Stir-Fry

Turkey and asparagus get together in a low fat dish that cooks in no time, making it the perfect, flavorful recipe for those busy weeknights when time is scarce. To save time, prep the vegetables the night before; when it's time to cook, the slicing and dicing is already done! -- posted by TGirl,RN

Yah Mon! Jerked Turkey Jerky

I went on a bit of a tangent when I created this turkey jerky marinade... I used some typical jerk-style seasonings; you can make it as hot as you wish. I use pre-sliced (about 1/8"-1/4" thick) turkey breast meat for this; it doesn't take nearly as long to dehydrate as beef, so keep an eye on it! Prep time includes overnight marinating. -- posted by EdsGirlAngie

This recipe came from Country Home magazine's "Stay for Supper" cookbook. It's one of the first recipes I learned how to cook when I was a newly-wed and has been a favorite ever since. Serve it over slices of your favorite cornbread. Also good over steamed rice. -- posted by Ppaperdoll

Teriyaki Turkey Breast

This recipe is so moist and tender with a wonderful sweet soy flavor. I used apple juice rather than sherry and my kids loved it. I loved using only the turkey breast since I didn't have mountains of turkey left over. I also made soup from the turkey carcass which was really good and retained enough of the flavor of the marinade to make it interesting. It's from Taste of Home's Quick Cooking, submitted by Marvin Hayes. Be sure to allow time to marinate overnight which I have not included in the cooking time. -- posted by LonghornMama

Turkey Mushroom Sorta Scaloppine

Wandering through the market, trying to decide what to make for dinner, I found some inexpensive frozen turkey breast. In the past I've used flattened chicken breast with salsa as a mainstay and I thought I needed to try something a little different this time. I knew I had leeks at home so I got some mushrooms, too, and the below is what I came up with. It's very tasty, and flattening the meat makes it quite tender! -- posted by Julesong

Mexican-Style Turkey

Turkey breasts, caster sugar, chilli powder, chocolate and coriander: just some of the ingredients that are brought together in this recipe. Perhaps not surprisingly, I couldn't find another quite like it on Zaar! This is another recipe from the International Masters '1001 recipes for pan or wok' recipe cards, posted for the 2005 Zaar World Tour. The word chocolate comes from the Aztec word 'xocolati'. The Aztecs often used cocoa beans to make unsweetened drinks. See notes below about the sort of chocolate most suitable for this recipe. 15g = 1/2 ounce. The preparation and cooking times do not include the 2 hours chilling and marinating time. -- posted by bluemoon downunder

Kittencal's Juicy Crock Pot Turkey Breast

This method creates a very moist flavorful turkey breast, the low slow cooking will create juice if you want more juice just add in a can of low-sodium chicken broth undiluted although you really don't need to --- do not add in any extra salt the onion soup mix is salty enough --- for best flavor I recommend not to use previously frozen then thawed turkey breast, use fresh if possible, since every crock pot cooks differently the cooking time is only estimated, a bone-in breast will need slightly longer to cook --- see my recipe#145064 -- posted by KITTENCAL

North Carolina Sweet Potato Turkey Hash With Eggs

As the daughter of a daughter of North Carolina, I was delighted to come across this recipe on the North Carolina Sweet Potato Commission website. (Mom never made it, but she would have, if the internet had been around before she passed - this was her kind of dish.) Not only is this dish relatively easy and good comfort food, it's a nice way to use up leftover turkey if you have it. * This is the recipe, as written. I have to double it for my family, and leave out the bell pepper as hubby doesn't like it. * -- posted by windy_moon

Turkey Jerky

This recipe comes from Carol Costenbader's cookbook, "Preserving The Harvest".The turkey is pre-cooked before going through the jerky-drying process, to eliminate the bacterial worries that are associated with raw poultry. This recipe involves a two day process, one day of marination time, and one day of drying time.* As per the reviewer, the fabulous mama's kitchen, the drying time on this recipe has been reduced from what it was as originally posted. -- posted by Bert's Kitchen Witch

The rub is fantastic, and the turkey turned very moist and delicious. Make sure you make a rich turkey stock with the leftover carcass and skin.

Delicious casserole that can be made any day of the week! Fancy enough for guests yet so comfy and tasty your family will ask you to make it. So versatile, it can be made from leftovers or pantry items. GREAT for those Thanksgiving leftovers. I know all these items are on my turkey day table in one form or another. A wonderful meal in one or serve with some plain noodles, rice or mashed potatoes. You can choose to make this FAST in the microwave or slower in the oven. Either way it is still on the table quickly and another of Mama's sneaky ways to get those veggies into the mouths of her babes!
Italian Turkey Burgers (Reduced Fat)

I have been playing around lately with trying to make different kinds of reduced fat burgers to go with the low fat eating plan I am on. This is my latest attempt. I used ground turkey breast so that I didn't feel that bad about having a little bit of fat from the sundried tomatoes but at least it is 'good' fats. The cooking time includes the one hour chilling time. -- posted by Sarah_Jayne

Kittencal's Moist Oven Roasted Turkey Breast

Cooking time is only approximate for a 6-pound bone-in turkey breast, for a larger breast cooking time will need to be adjusted, whatever the size of turkey breast roast until a meat thermometer reads 160 degrees F, for perfect doneness a meat thermometer (instant or regular) should be used --- for the very best flavor a turkey breast with the skin left on is an absolute must and the bone left in would be another plus --- don't forget to save the pan juices to make your favorite gravy or see my recipe#145064 --- a 6-pound turkey breast should feed 4-6 people if you are serving more I suggest to make two or even three depending on how many people you are feeding, you may make all the breasts in the same roasting pan --- NOTE for the best flavor and tenderness it is strongly advised to use a fresh only turkey breast not previously frozen then thawed. -- posted by KITTENCAL

Stuffed Turkey Breast (Martha Stewart)

This wonderful recipe is from "Martha Stewart's Cooking School" and is delicious any time of the year! It is a bit tedious to assemble, but well worth it! It is very moist and each slice is swirled with stuffing. It makes a beautiful presentation! I first made it for Thanksgiving when I was also serving pork loin and did not want to make a whole turkey. It was a huge hit! I make it with America's Test Kitchen's Classic Bread Stuffing with Sage and Thyme (Recipe # 354309), but you can use your favorite stuffing recipe. A moist stuffing works best! To save time, ask your butcher to bone and butterfly the turkey breast. Make-ahead tip: This can be assembled (through step 2) and refrigerated up to 24 hrs before roasting. -- posted by CindyMarie

Creamy Italian Turkey Fillets With Mushrooms
