Roasted Turkey or Chicken Breast and Walnut Salad

This is a very simple recipe, and tastes delicious. I just whipped it up with ingredients on hand, and wanted to record it to refer to next time. It's great for the South Beach diet, too. I used left over turkey breast (my standby - Herbed Turkey Breast by Kate in Ontario #22235). Note to World Tour participants - California is a large producer of walnuts. This recipe represent that state. -- posted by PanNan

Authentic Hot Brown

This recipe comes directly from the Brown Hotel website. The following is Copied from the recipe page.
In 1923, The Brown Hotel drew over 1200 guests each evening for its dinner dance. In the "wee" hours of the morning, the guests would grow tired of dancing and retire to the restaurant for a bite to eat. Guests were growing rapidly tired of the traditional ham and eggs, so Chef Fred Schmidt set out to create something new to tempt his guests' palates. Thus, the Hot Brown was born, an open-face turkey sandwich with bacon, pimento, and a delicate mornay sauce. Who could have guessed that this chef's dedication to service would start such an enduring and well-loved Louisville tradition… the Hot Brown -- posted by /\rtful ])odger

Turkey Tenderloin With Cranberry Shallot Sauce

Recipe from Eating Well's November/December 2009 magazine; it is low carb and low calorie but packed full of flavor. This would be a great dish to serve on Thanksgiving or Christmas- you'd still have turkey, but it would be cooked in a flash! They recommend serving it with a side of mashed sweet potatoes, brussels sprouts and a glass of Reisling. UPDATE: I just made the cranberry shallot sauce. . .I used 2 large shallots instead of 4 (which was more than enough), added an additional 2T of brown sugar and about 1/4 cup of orange juice to thin it out. Good stuff! Garnished it with fresh thyme. -- posted by JanuaryBride
