Kaf's Stuffing Bread Bowls

This recipe is from the www.kingarthurflour.com website. These crusty, single-serve bread bowls are scented with sage and thyme, reminiscent of the stuffing you enjoy with your holiday bird. We've filled them here with turkey (or chicken) pot pie filling, the perfect solution to "what can I do with this leftover turkey?" NOTE: The directions on the website contain step-by-step instructions with pictures. -- posted by senseicheryl

Pasta Saltata Alla Medici (Tossed Pasta Medici Style)

The Medici, lords of Tuscany, were not only lovers of art and literature but also of good food. At their court, artists, poets and intellectuals gathered in front of tables richly prepared. Sumptuous banquets, famous for their choreographic splendor, where meals were served and refined foods of all kinds: sauces, soups, game, omelettes, meatballs, and chicken, but also beans, tomatoes, chocolate coming from the New World having just been discovered. This recipe reflects the Tuscany style served at court during the Renaissance. -- posted by Celticevergreen

Pepper Crusted Turkey (Or Chicken) Cutlets With Chutney Sauce

Having tried lots of different recipes through adventure, events and tag games, I now find myself with a pantry full of condiments and spices that I like but don't use very often. That has recently lead me to find new dishes which are simple, healthy and take advantage of these ingredients. This originated from a turkey recipe website and includes my modifications. Though I prefer it with turkey, it works well with chicken cutlets. Preparation includes 30 minutes to chill the poultry. This recipe is 4 pts per serving. -- posted by justcallmetoni

Stuffed Turkey Breast (Martha Stewart)

This wonderful recipe is from "Martha Stewart's Cooking School" and is delicious any time of the year! It is a bit tedious to assemble, but well worth it! It is very moist and each slice is swirled with stuffing. It makes a beautiful presentation! I first made it for Thanksgiving when I was also serving pork loin and did not want to make a whole turkey. It was a huge hit! I make it with America's Test Kitchen's Classic Bread Stuffing with Sage and Thyme (Recipe # 354309), but you can use your favorite stuffing recipe. A moist stuffing works best! To save time, ask your butcher to bone and butterfly the turkey breast. Make-ahead tip: This can be assembled (through step 2) and refrigerated up to 24 hrs before roasting. -- posted by CindyMarie

Citrus Grilled Turkey Breast (Light)

Instead of the usual outdoor barbecue, treat your guests to a sit-down dinner featuring this delicious grilled entree with a luscious herb and citrus gravy. Recipe comes from the test kitchen of Light and Tasty Magazine. Could substitute several chicken breasts with skin, but would need to cut back on grilling/cooking time. Recipes states that a serving is 4 ounces cooked turkey with 3 tablespoons gravy equals 192 calories and for diabetic exchanges = 5 very lean meat and 1/2 fruit. -- posted by diner524

This recipe is from Joan Nathan's book "The Foods of Israel Today". It's a basic recipe and you can add whatever spices you like. Paprika is standard. Cumin is nice, as are garlic, turmeric, cardamom, and za'atar. Enjoy! NOTE: You can also bake the breaded schnitzels in a 350-degree oven for a few minutes ahead of time. *To roast sweet peppers: Halve peppers; remove stems, seeds and membranes. Place peppers, cut side down, on a foil lined baking sheet. Bake in a 425 degree F oven for 20 - 25 minutes or until skin is bubbly and browned. Place in a clean brown paper bag; seal and let stand for 10 to 30 minutes or until cool.

Hoisin sauce gives these burgers a juicy texture, while ginger and garlic provide a burst of flavor and water chestnuts deliver an appealing crunch.
Serve them over toasted whole-wheat buns with a side of tender greens.
We used this tangy mayonnaise to enliven the burger even more or for a chicken sandwich or a dip for a platter of wonderful roasted vegetables or perhaps use it as a dressing for sliced napa cabbage with scallions.:) I had some Apricot Mustard left over from another dish and the combination was great - I served it on the side.

A tasty looking recipe I am dying to try found in my June 2009 issue of TOH's Simple and Delicious. This recipe uses meat cooked in a sister recipe - Roasted Turkey Breast Tenderloins & Veggies ( also posted). I am sure you could make them ahead using the similar seasonings too. :)
***Prep/Total time is listed as 25 minutes for the meal. I haven't made it yet so I can't say until I do. I assume the chopping will take a few.... -- posted by Mommy Diva

Day-After-Thanksgiving Turkey Breast With Pumpkin Chutney

Twas the day after Thanksgiving and all through the house, the family was
pleading with all of their might, "PLEASE, PLEASE NO MORE TURKEY TONIGHT!"

If this little verse strikes a familiar cord, then turn your leftover turkey into this delicious entree, and I promise your family won't be complaining about eating turkey another night. Slices of turkey breast are garnished with a pumpkin chutney that is flavored with apples, currants, and warm spices. -- posted by Feast Your Eyes!

Chicken and Broccoli Stir-Fry (With Variations)

The recipe might look wordy and long but it is quite easy to follow and puts together rather quickly. You can use turkey breast in this if you like, or even shrimp. Just be aware the shrimp cooks faster than poultry and pull it off the heat just as it begins to curl. Tightly curled shrimp are really kind of tough and stringy. -- posted by Sue L

Try a Cashew Chicken Salad in a Sandwich on a Hot Summer Evening

The title is pretty self-explanatory, and I think you'll agree that this is a nice way to spend a summer evening. Kettle (crunchy) potato chips on the side, a couple of home-made cookies or a brownie, some carrot sticks, and you've got a pretty decent brown-bag lunch, too. The original recipe (from Taste of Home, Aug/Sep 09) calls for pumpernickel bread. -- posted by Debber
