			<description>During Thanksgiving turkeys were on sale at my supermarket for less than $5, so I couldn't resist getting an extra one, and I wanted to prepare it in a different way.  This is a deliciously different way to prepare turkey, created by Wolfgang Punk.  Slow braising the turkey makes for a succulent result.  I've recreated the recipe here, using less exotic ingredients (foie gras was originally used). 			<description>A pot pie that will please people who love an easy recipe and a tasty hot and hearty meal.  I invented this using things I had in the house on a night I just didn't feel like going to the super market.  Its also a good way to use up leftovers from a holiday dinner.  The best part of this recipe is there isn't a pie crust in site!  As always, it's all about taste so don't be afraid to experiment.  Note: If you know how to make mashed potatoes its pretty difficult to mess this up, you can even use instant if you have them around. You don't have to follow portion sizes allotted below either, just make as much or as little will fit in the dish of your choosing. Even though this is a healthy makeover dish, it is just as good, if not better, than the original! I always pack the meatballs together tightly before placing them in the pan, and turn them over halfway through the cooking time. Also, sometimes I make the gravy sauce in a crockpot and let the cooked meatballs stew in there for a few hours. Just a few suggestions! This recipe is for one pack, but we usually double it since I use it for taco salads, while my husband throws it in a tortilla for a snack.  IF YOU DON'T LIKE SPICY....change out the Rotel's variety to the the mild or the Mexican (tomatoes, lime, and cilantro) style.  This is a basic recipe, so play with the spices and the Rotels for the taste you like. I've tried Negra Modelo, Pacifico, and Blue Moon. Negra Modelo's been my favorite so far, but each of these beers has been really good. 			<description>This is a FABULOUS recipe by The Pastry Queen, Rebecca Rather, from her cookbook &amp;quot;The Pastry Queen:  Royally Good Recipes from the Texas Hill Country's Rather Sweet Cafe.&amp;quot;  She says she can never make enough of these wonderful pot pies to satisfy her loyal customers.  After trying this recipe, I can certainly see why.  PURE comfort food here!  When fall comes, this is what you'll be craving.
   I usually take two days to put these together--stewing the chicken and sauteeing the vegetables on the first day; making the cream sauce and the crust the second day.  Do not be intimidated by the crust!  It's just a top crust and hangs over the side of the dish in a rustic, country fashion.  Very, very easy to roll out and work with.  Also, don't buy any special oven proof bowls for this recipe--I always make it in two 9&amp;quot; pie plates and it fills them nicely.  I add about 10 minutes to the bake time, but watch carefully so they don't burn.

UPDATE:  I just made the cranberry shallot sauce. . .I used 2 large shallots instead of 4 (which was more than enough), added an additional 2T of brown sugar and about 1/4 cup of orange juice to thin it out.
