It says to serve this with a red zinfandel because the spiciness and fruit flavor will stand up to the powerful flavors in the soup. This would be a great soup when you are sick of leftover turkey, but still have lots left.  I would serve this with corn bread. Im sure this could be adapted to the crock pot. 			<description>This is a very versatile chili recipe that also tastes great!  They key is the ground turkey breast, which has almost no fat (1 gm per serving vs. 12 gm for most store-bought regular ground turkey).  You can easily lower the heat by removing the seeds and pith (white stuff) from some or all of the peppers.  If you want to make it Vegetarian, you can remove the turkey and substitute cubed Tofu (or not) and use vegetable broth instead of chicken broth. This would also work well as a vegetarian meal using two 14 oz cans of chickpeas or one 19 ounce can of the same instead, along with vegetable broth. Curry powders vary immensely in their flavor intensity and spiciness so the measurements here serve as a guide. 			<description>Not liking the looks of the skin on my turkey breast, I removed it, then brined the turkey. Worried that it would dry out in the oven without the skin to protect it, I decided to use my slow cooker to cook it. I totally winged it so measurements are approximate, but I was so pleased with the ease of preparation and the results yielded that I had to post this. It makes the richest broth from the carrot, celery and onion that makes the tastiest gravy, and I am a huge gravy fan!  And with the skin removed there was no need to skim fat from it. The carrots were delicious to eat too! I'm not sure if the brine was necessary, but I wanted a way to preserve it until I could cook it the next day, and it definitely helped to keep it moist and tasty. It wasn't salty, but I may brine skin-on next time and then remove it to see if there is a difference. Escarole is a wonderful leafy vegetable, not well known in the US. Spinach or Swiss chard are suitable substitutes.
