Almost Original Impossible Taco Pie

This is a variation of the original taco pie recipe that I have been using for years It's yummy and so easy. I cut out some of the fat by using ground turkey and skim milk

Notes:
Kitchen Staff Tip: If you prefer to make your own "Bisquick" from scratch, simply combine 4 cups All-purpose Flour, 3/4 cups Non-fat Dry Milk, 1/8 cup Baking Powder, 1/2 Tbs. Salt, and 1 cup Shortening in a very large bowl. Cut in shortening until it resembles coarse cornmeal. Store in a tightly sealed container in a cool place. Makes about 5 cups. -- posted by Prrs4me

Very adaptable to your own taste, try adding chopped olives, altering the herbs to your own taste and adding crispy bacon or spinach leaves. Lite Sour cream is an alternative to mayonnaise. Make sure to roll them quite tightly.
Healthy White Bean Turkey Chili

I decided to get back on Weight Watchers and was googling recipes. I found one for white bean turkey chili, but decided to put my own spin on it. It is so good, hearty, and has a nice creamy and smoky taste. I only used one teaspoon of red pepper flakes because I was going to be serving it to my 2.5 year old. I was shocked she actually had like 4 hearty bites and was dipping her spoon in the liquid and slurping it up. This is a huge feat for my very picky eater. My hubby said it was a keeper. Also, I used two pounds regular ground turkey and one pound extra lean ground turkey. This recipe can also be OAMC and you could probably get 2 or 3 dinners out of it, depending on your family size. You could also use your slow cooker, just brown the turkey and your spices in a skillet, then transfer the rest of the ingredients into the slowcooker for the exception of the half and half. I would add that 30 minutes before serving. Enjoy! If you are counting points, there is 12 servings. We had hearty helpings, so I would say 6 to 8 servings if you are not restricting your portions. -- posted by Midwest Foodie

Cajun Turkey Meatloaf (Low Fat) Hubbie's Favorite

A healthy version of meatloaf that does not sacrifice the taste for a healthy alternative! Leftovers are great on onion rolls with lettuce and tomato for a great sandwich treat. Your can use either Creole or Cajun seasoning.

I've been making this for years, and I can't remember where I got it.

Sometimes, I put slices of pancetta (or bacon) on the outside. Of course, it isn't as healthy - but it sure is pretty and tastes great. -- posted by Jb Tyler, TX

Low-Fat Hearty Turkey and Ton of Veggie Soup

I don't like canned soups and my DH is allergic to MSG so in an effort to eat healthier, I came up with this wonderfully flavorful and robust soup that is super easy, filling, and easy to keep on hand. This freezes really well. I don't generally mesure but the great thing about this soup is it can be adjusted to suit your pallete. I kinda just emptied my cupboard and freezer with stuff I had on hand including left over turkey. Feel free to use chicken, tofu, or whatever you have on hand and the beef boulion could easily be substituted with chicken or vegetable if you prefer. Hope you enjoy! -- posted by kalamitykris

Roast Turkey With Prosciutto, Rosemary and Garlic

Every Thanksgiving, we've tried a different turkey recipe. This is a good one that we have tried. A mixture of prosciutto, rosemary and plenty of garlic rubbed under the skin of the turkey gives it a distinctively delicious taste. True garlic lovers can squeeze some of the pan-roasted garlic into the gravy for even more flavor. Begin the meal with an appetizer of chilled shrimp with lemon and dill, and offer a radicchio salad as a first course. Pour a Chianti Classico Riserva.
The Pastry Queen's All Sold out Chicken Pot Pie

This is a FABULOUS recipe by The Pastry Queen, Rebecca Rather, from her cookbook "The Pastry Queen: Royally Good Recipes from the Texas Hill Country's Rather Sweet Cafe." She says she can never make enough of these wonderful pot pies to satisfy her loyal customers. After trying this recipe, I can certainly see why. PURE comfort food here! When fall comes, this is what you'll be craving.
I usually take two days to put these together--stewing the chicken and sauteeing the vegetables on the first day; making the cream sauce and the crust the second day. Do not be intimidated by the crust! It's just a top crust and hangs over the side of the dish in a rustic, country fashion. Very, very easy to roll out and work with. Also, don't buy any special oven proof bowls for this recipe--I always make it in two 9" pie plates and it fills them nicely. I add about 10 minutes to the bake time, but watch carefully so they don't burn.
This recipe is super flexible; feel free to add in your favorite vegetables. I always add carrots to mine--I love the sweetness they add--a perfect contrast to the savory flavor of the pie. -- posted by Chef SuzyQ

My husband and I love chili but I wanted to try something new and for starters I just used a different meat since turkey meat is leaner. I love the way all the spices are infused. This is best served with my jalapeno corn muffin or a cracker.
This is my favorite turkey casserole. Chicken can be substituted. Great for left over Thanksgiving or Christmas turkey. I found this recipe many years ago in a newspaper. My sons especially liked the cheese topping so I used to double the topping ingredients. Whether I serve it at home or bring out, I always get compliments and often asked for the recipe. -- posted by Truffle Lady

Hearty Ground Turkey Chili

DH and I enjoyed this hearty chili from Norman Kolpas' "The Chili Cookbook." While the recipe calls for masa harina, I think I would omit it next time as the chili really did not need extra thickening and I think it detracted from the flavor just a bit. Also, DH and I ate this chili in a bowl, we did not serve it over rice. It lent itself well to this method. I used baby bellas for the mushrooms. Finally, we sprinked colby jack (I think that was what I had in the fridge) shredded cheese over the top, which I think is a must. Cheddar or a mexican blend of cheeses would also be good. -- posted by Dr. Jenny

Make-Ahead Roasted Turkey Gravy - Tyler Florence

This is a GREAT make ahead gravy, even a day ahead! There is an error in the directions tho. I watched the show and after he was done roasting the wing and vegetables, he added the flour and stock and then added the turkey wing back in before simmering for about 15 minutes more.
This gravy warms up beautifully, and is an extreme crowd pleaser and EASY. From Tyler Florence at Food Network. Hope you enjoy! -- posted by Scoutie

Sarasota's Easy Leftover Turkey, Leek and Potato Tart

A unique way to use up turkey, mashed potatoes and cranberry sauce. Add a couple of fresh ingredients and this goes together in no time. Now, if like many, who have steamed green beans for Thanksgiving, try reinventing them by a quick saute with shallots, mushrooms, and a little balsamic vinegar. Just 4-5 minutes and you have a great way to use up those beans and it makes a great side dish with this. And don't forget to use up that pumpkin pie in a parfait with honey whipped cream, walnuts and ginger snaps. -- posted by SarasotaCook

Turkey Tonnato (Italian Cold Turkey in Tuna Caper Sauce)

This traditional Italian dish is originally made with veal. Turkey is the next best thing and this actually tastes and looks quite fancy. You can make everything ahead of time but ONLY assemble at the last minute. Its just great to serve at buffets, you'd never imagine a can of tuna could be transformed to such heights! Serve with lots of salad and tomatoes and some cold new potatoes. The fresh herbs in the broth are essential as are the capers and the anchovies in the sauce (which you wont really taste) Great stuff! -- posted by robd16

This will be the BEST roasted turkey you’ve had, hands down! I prefer this over deep fried turkey as it is about as moist and has much more flavor to it. I compliment this turkey by serving giblet gravy, sautéed herbed mushrooms and Apple Wine Stuffing.

Before cooking the bird, I typically use a rub with olive oil or melted butter/margarine. I quarter an apple and stuff inside the cavity for cooking, tenting the bird until the last hour. -- posted by CooksInHeels
