Quickie Tuna Noodles

Disclaimer - this is NOT gourmet! This is one of my "Emergency Quickies", when dinner needs to be done, and needs to be done NOW. I've made several variations of this, with either cheddar or parmesan cheese, and whatever "Cream of..." soup I had on hand. My kids prefer their veggies on the side, so we usually have peas or carrots as a side dish, but I'm sure they'd be great just thrown in the sauce, too.
Send me a review with your modifications, I could always use new ideas for this one! -- posted by Gatorbek

Not Your Momma's Tuna Noodle Casserole

This fabulous Tuna-Noodle Casserole certainly isn't the one Mom used to make, but is just as comforting.

This is based on a recipe found in the Weight Watchers New Complete Cookbook, but altered to fit what was in my pantry at the time. While not as low in points and calories, this one is still a healthy alternative to classic Tuna Noodle Casserole. -- posted by Maggie_the_spy

Ahi Tuna Marinade

Our family was first introduced to the concept of "rare" Ahi Tuna when my sister-inlaw opened an inland NJ seafood restaurant. Frequently, she tested new recipes on us as well as her family & friends. The first time I tasted it, I was surprised to find out how good the rare tuna was! I then decided to create my own marinade that was more to our liking. The trick is to just sear the fish on a hot frying pan for 1-2 minutes per side and then serve immediately. -- posted by Acadia

Grilled Tuna With Chipotle Ponzu and Avocado Salsa

My daughter made this last night and had a taste and was pleasantly surprised! This is a great example of how bold Asian and Latin flavors can work well together. The orange and lime juice are in place of the rice vinegar = the acidic ingredient used in a Japanese ponzu dipping sauce. The hot, smoky chipotle chiles give it that extra kick! The avocado salsa gives it that cooling feeling. Cooking Light Magazine, November 2005. You can also use the ponzu with chicken! -- posted by Manami

Ceviche

Ceviche is a light and refreshing, chilled citrus-marinated seafood salad which originated in Peru. The acidity of the marinade denatures the protein structure of the fish, essentially "cooking" it. The result is a less fishy-tasting dish than other uncooked seafood.

Note: Other types of fresh seafood (such as lobster, shrimp, scallops, octopus, etc) may be substituted for the fish, if desired. Always purchase the freshest seafood you can find, preferably sushi-grade. -- posted by Sephardi Kitchen

Citrus Tuna Salad

Easy to put together, this salad is low cal and low fat. No mayo or sour cream. Serve with saltine crackers, baked tortilla chips or tostadas. I like to add a chopped jalapeno (canned) or a good splash of Mexican hot sauce (Tapatio is very good). Adjust the amount of veggies and citrus juice to your taste. This also packs well for lunches as long as it's kept cold. -- posted by Mami Janine

Tuna, Lime and Cilantro Baked Potato

This zesty baked potato is very easy and light on calories.
If you wish, chop a red pepper into small pieces and stir into the mix.
If you're cooking an ovenful of potatoes, increase the temperature. Use metal skewers or baking prongs pushed through the potatoes to reduce the cooking time by up to a quarter. Rubbing a few drops of oil into the skin before cooking and sprinkling salt around the potatoes makes the skin extra crispy. -- posted by English_Rose

Roasted Red Peppers With Tonnato Sauce

Fast, Healthy, Make-Ahead, & Staff-Favorite!! Tonnato sauce—a smooth puree of olive oil–packed tuna, mayonnaise, capers and anchovies—is traditionally served in Piedmont with slices of roasted veal. At his Brooklyn, New York, restaurant, Franny’s, chef Andrew Feinberg spoons the sauce onto a plate then tops it with a layer of wood oven–roasted peppers.;) The freshest peppers are weighty with sturdy green stems; avoid any peppers that rattle.
Catherine Ann's Enticing Tuna Salad - the Longmeadow Farm

This recipe was saved from many years ago (35) when my then future MIL and I would enjoy a cool, refreshing "time-out" on her screened in porch. Never finding tuna in a can" or a tuna from "anywhere" to be especially great tasting, particularly to my immature palette (I was probably 19 yers.old) I would hem and haw about how I was already full, wasn't hungry, etc...etc...until one day, I thought I would take the plunge and just eat it. And it was as delightful as promised. Maybe it was the time spent with this woman that had such an impact on my life, maybe it was the summer breeze softly making the wind chimes "tinkle" in the distance, either way, I have loved this method of making this simple sandwich ever since. So with great fondness for a great woman, I present to you, the reader, Catherine-Anne's simply lovely tuna salad. -- posted by Andi of Longmeadow Farm

My fiance and I love cooking for each other, even though most of the time we end up cooking up a box of mac 'n cheese. I try to change things up a bit by adding things I have on hand. This is one I came up with one night that ended up being very good and I make it over and over on those nights when I don't have a lot of time and I don't want to make just another box of macaroni. -- posted by Mrs. Regan

Butter Bean, Tuna & Celery Seed

Big creamy butter beans give a tuna and celery salad terrific heartiness! The salad would also be delicious spooned over slices of warm grilled country bread. Recipe by Melissa Rubel from Food & Wine Magazine.:) From Pairing of the Day, April 2008 - Canned Bean Cuisine. They suggest a crisp, citrusy Sauvignon Blanc 2005 Brassfield Estate High Serenity Ranch.I just made a mistake - I marked this for Diabetics (only if you eat it as a whole meal) otherwise I will try to have it removed). -- posted by Manami

Home-Style Tuna Casserole

So I bought some Kraft Deluxe Macaroni and Cheese Dinner on sale thinking it would be a comfort food like the regular mac 'n cheese when you don't have time to cook. I conjured up childhood memories of those "special occasions" when Mom let us eat food from a box. When I actually tried it the fake cheese was the most disgusting thing I ever tasted, and I realized your tastebuds grow up too. This recipe does a good job of covering up that boxed food taste, but it's simple enough you don't have to spend all day in the kitchen. I used cream of mushroom soup and doubled the tuna and the vegetable (green beans in place of peas) to get rid of the macaroni and cheese flavor. I did skip the bread crumbs and butter, but I have to say it's pretty impressive for an instant tuna casserole. If you love Kraft Deluxe Macaroni and Cheese Dinner, you should try this.
Anna's Tuna Soboro (Quick and Easy!)

Soboro is a salty-sweet Japanese dish that is used in many ways - you can put it into onigiri, serve it over rice, stir-fry it with veggies, or put it into scrambled eggs. It keeps in the refridgerator for a week and can be frozen, so you can easily make more than you need and have an easy meal later in the week. It seems that in Japan, they consider it a condiment. This is tuna soboro - there are different soboro recipes for different types of meat. Not long after in 2005, she and her husband bought a 100 acre working ranch in Texas's Nueces Canyon.
Tuna Patties

Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac & cheese or fried potatoes.

You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture.

The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that!

You can cook these in a George Foreman grill, or in a skillet or frying pan. We like them fried! -- posted by Angel Stowe

Festive Tuna Salad

You could serve this as a 1st course for company; it is not your usual mayo/tuna salad. The addition of fresh mushrooms and green peas really does the trick. I usually make a lighter version where I will strain the whey out of some plain yoghurt in a sieve and use 1/3 strained yoghurt and 2/3 mayo. If using this method the yogurt must be drained really well. I add the peas when they are still frozen; they thaw quickly and I like them cold in the salad and they do not get mushy -- posted by Deantini
