			<description>I don't know if any of you have friends that won't eat 'raw' fish but I've conformed a bunch of my leary friends after they had this extremely rare tuna which was described by them more like a steak. Lots of oooos and ahhhhs. I like to add Asian Seasoning in the sauce also from the Pampered Chef line. Very Good and do not over cook the tuna, should be rare. How cool is that for a luncheon entree or even a cold starter for a dinner party? It will admittedly have greater appeal to an adventurous palate, but I happen to have such a palate! Make it with tuna for  ITALIAN TUNA SPAGHETTI: Boil 14oz spaghetti. Soften the onion, rosemary, garlic and anchovies in the oil for a few mins. Pour in the tomatoes and capers with the wine, if using, and simmer for 5 mins. Drain a 7oz can tuna and flake into the sauce. 			<description>This was adapted by a friend of mine ... who got it from a caterer ... who got it from a friend ... who got it from a magazine, who got it from WHO KNOWS where.  Well you get the idea - then I got it. Regardless, I love it and have been making it for a couple of years and it certainly isn't difficult and I love that pea sprouts have become more widely available this days.  The sprouts or also known as shoots and tuna mix nicely with the tangy mustard sauce to make a very easy quick dish to make. It literally takes 15 maybe 20 minutes to make. And agreed you will pay a little premium for the pea sprouts but you could also use other micro greens or spring greens, but you don't know what you are missing until you try them.  And the tuna ... buy it when it goes on sale, that is when I do. This is rich in flavor but at the same time very delicate and well worth the extra money for a nice Sunday dinner or for company.
