Tuna Pasta Salad

This is a quick and simple lunch or light supper from 2009 Taste of Home Annual Recipes (courtesy of Sue Gronholz, Beaver Dam, Wisconsin). I doubled the recipe to have leftovers during the week. I followed the recipe except I used whole wheat pasta shells, red onion, regular mayonnaise (1 cup instead of 2 cups), and I tripled the peas. I also used 1/2 teaspoon salt and decided to add lemon pepper seasoning at the end for flavor. Works great when you're hungry now and need something quick. Yummy! -- posted by AmyZoe

Penne With Tuna and Red Onion

This is a modified version of a Martha Stewart recipe. It is a light and tasty dish. I don't recommend adding salt to the pasta water since you will be using some of it in the sauce.
Home-Style Tuna Casserole

So I bought some Kraft Deluxe Macaroni and Cheese Dinner on sale thinking it would be a comfort food like the regular mac 'n cheese when you don't have time to cook. I conjured up childhood memories of those "special occasions" when Mom let us eat food from a box. When I actually tried it the fake cheese was the most disgusting thing I ever tasted, and I realized your tastebuds grow up too. This recipe does a good job of covering up that boxed food taste, but it's simple enough you don't have to spend all day in the kitchen. I used cream of mushroom soup and doubled the tuna and the vegetable (green beans in place of peas) to get rid of the macaroni and cheese flavor. I did skip the bread crumbs and butter, but I have to say it's pretty impressive for an instant tuna casserole. If you love Kraft Deluxe Macaroni and Cheese Dinner, you should try this.
Classic Tuna Salad

If you want a tuna salad fresh of a fishy or metallic taste - you need to drain the tuna. put it in a fine meshed colander; don't just drain if from the can. Rinse the tuna with cold water and while rinsing, break up the chunks with your fingers so that the flakes of tuna are uniform in size. After rinsing, put colander of tuna in the refrigerator for 30 mins while it drains. -- posted by Ceezie

Anna's Tuna Soboro (Quick and Easy!)

Soboro is a salty-sweet Japanese dish that is used in many ways - you can put it into onigiri, serve it over rice, stir-fry it with veggies, or put it into scrambled eggs. It keeps in the refridgerator for a week and can be frozen, so you can easily make more than you need and have an easy meal later in the week. It seems that in Japan, they consider it a condiment. This is tuna soboro - there are different soboro recipes for different types of meat. I cannot take credit for this recipe - annathered at wordpress originally posted it on the web. -- posted by freakingdork

Peperoni Farciti con Tonno e Acciuga, Lidia Bartianich's Newletter. The combination of sweet, meaty roasted peppers and well-seasoned oil-cured tuna is wonderful! Any fresh, meaty sweet bell-type peppers are suitable, different colors makes a nice presentation. Peppers always taste better when roasted at home but a jar of roasted red peppers can be substituted.
Tuna Egg Salad

This is the recipe I use for my family and its always a hit. I use an equal amount of finely chopped hard boiled egg added to a can of tuna (I prefer the albacore tuna). For those who don't care for a strongish fish flavor in their tuna salad, this'll do it for you. It truely is awesome.
Tuna & Cherry Pepper Sandwiches

Found this recipe in Cowgirl Cuisine by Paula Disbrowe. In the book she says "her life sounds like a fantasy." After working as food editor at a magazine in NYC - Paula Disbrowe moved to Rio Frio, Texas, to be the chef at Hart & Hind Fitness Ranch. Not long after in 2005, she and her husband bought a 100 acre working ranch in Texas's Nueces Canyon. She shares recipes that exemplify ranch eating but with a lighter approach, like her chili made with turkey, white beans and sage, and tostadas topped with shredded chicken and crunchy citru slaw. This recipe is considered the best of the best exclusive! Have tweaked it slightly because of personal preference! :) -- posted by Manami

Pepper Crusted Tuna, Mustard Sauce and a Pea Shoot Salad

This was adapted by a friend of mine ... who got it from a caterer ... who got it from a friend ... who got it from a magazine, who got it from WHO KNOWS where. Well you get the idea - then I got it. Regardless, I love it and have been making it for a couple of years and it certainly isn't difficult and I love that pea sprouts have become more widely available this days. The sprouts or also known as shoots and tuna mix nicely with the tangy mustard sauce to make a very easy quick dish to make. It literally takes 15 maybe 20 minutes to make. And agreed you will pay a little premium for the pea sprouts but you could also use other micro greens or spring greens, but you don't know what you are missing until you try them. And the tuna ... buy it when it goes on sale, that is when I do. This is rich in flavor but at the same time very delicate and well worth the extra money for a nice Sunday dinner or for company. Just add a soup to start and maybe some grilled bread to make a perfect dinner. -- posted by SarasotaCook

Bacon-Wrapped Tuna Steaks

This recipe came from my husband's cousin, who fishes for tuna off the Oregon coast each summer. The bacon helps hold the tuna together on the grill, and adds a nice moistness to the lean albacore meat. You could try it with other types of tuna, but I've only ever used albacore. -- posted by ScrumptiousWY

I found this recipe on Epicurious. I made some changes, so this is the modified version. I really liked how these turned out, great for anyone who doesn't like the taste of fish but has to eat it anyway! For the cream cheese dip, I used Philadelphia Onion Flavour dips, but I suppose any flavour or even plain cream cheese would work. The original recipe called for cilantro, but I replaced it with parsley since I find cilantro has a bit too strong a flavour for my family. -- posted by CoCaShe

Citrus Pesto Tuna

I got this recipe from Weber's Real Grilling cookbook, and tried it today for my first tuna recipe. The marinade was great, although the cooking time seemed a bit short (the recipe says 3-4 minutes, turning once) so I increased it to 4 minutes per side and it was overdone. I'm including the original cooking times in this recipe, but it depends on the size of the steak, so I'll have to keep experimenting! -- posted by CoCaShe

Turkey Tonnato (Italian Cold Turkey in Tuna Caper Sauce)

This traditional Italian dish is originally made with veal. Turkey is the next best thing and this actually tastes and looks quite fancy. You can make everything ahead of time but ONLY assemble at the last minute. Its just great to serve at buffets, you'd never imagine a can of tuna could be transformed to such heights! Serve with lots of salad and tomatoes and some cold new potatoes. The fresh herbs in the broth are essential as are the capers and the anchovies in the sauce (which you wont really taste) Great stuff! -- posted by robd16
