Whole Trout (Or Fillets) Stuffed W/Bacon & Eggplant Dressing

DH is an avid fisherman & our freezer has a near endless supply of trout he catches in the summer. We're also fond of eggplant & I have a cookbook devoted to it. I found this recipe at the Food Network site & it has been a favorite for yrs now. The recipe uses whole trout cooked on a grill, but DH usually filets our trout b4 freezing. In that case, I oven-broil the trout to an almost flaky state, spread the dressing atop the filets & complete the dish under the broiler to finish cooking the trout & heat the dressing. This is incredibly good & worth the extra effort. Enjoy! -- posted by twissis

My first time ever cooking trout, altho I've eaten it twice at O'Charleys restaurant. Delicious, easy, and tasty way to prepare trout.. found this online, but I did list the type of trout I just fixed. The cooking time depends on the thickness of your fillets. Also, I've tried this with Catfish fillets too, and its just as good.It would work on any of your favorite fish fillets. -- posted by blgpts

Trout in Almonds Sauce – Croatian Way

This is northern Croatian recipe. In Mediterranean part they put garlic on trout (they put garlic on everything) but garlic as a very strong spice damages the delicate trout taste. Almond sauce is my invention, but as you can see, there is not much to invent. This gentle flavour combines very nicely. -- posted by nitko

Smoked Trout and Asparagus Salad

Another salad which takes advantage of the bounty of the Mid-Atlantic. A poached egg perched on a bed of mixed lettuces, toasted croutons, spring asparagus and rich trout makes a delightful weekend brunch salad or a quick weeknight meal. Don't be intimidated by the many components of this recipe — this salad can be tossed together quickly. -- posted by Chef Kate

Smoked Fish ( Brine Recipe and Smoking Directions)

This is a long time family recipe that was recently shared with me. Looking for something different to do with fish? This is it! We usually plate this and allow everyone to serve themselves. Wonderful fresh off the smoker as well as COLD from the refrigerator as you would smoked salmon, regardless of they type of fish used. After smoking this will keep for about a week in the refrigerator. I do not care for oily types of fish done this way but many prefer them. I like to smoke whitefish, salmon, perch, or trout. Feel free to use any fish you prefer. Plan AHEAD! Need to brine for about 12 hours and smoke for about 6-8. -- posted by mama's kitchen

Grilled Trout Florentine

I got this recipe at elk camp north of Bayfield, Colorado more years ago than I care to remember. While us 'manly types' were hunting, Gus, our camp cook spent his spare time fishing. He never ceased to amaze me with the things he hauled out the drawers and bins of his chuck trailer. In the middle of nowhere he had fresh spinach to make this wonderful dish. Until then the only way I'd had trout was breaded and pan fried. This was the start of my lessons in some of the better ways to prepare trout. The lessons haven't stopped since then, thank you very much. -- posted by Pierre Dance

Thyme for Trout

A simple but flavorful preparation for trout. I am currently in love with thyme and have been putting a concerted effort into adding more fish to our diet. This recipe was a big winner with the whole family. Trout is a nice fish since it doesn't have an overwhelming flavor on it's own. Prep time includes time for marination. -- posted by Cookworm

Steamed Whole Tilapia

This is a recipe that appeared on a card at my local ShopRite, and the card states it comes from a magazine named Simply Seafood. It works best with an Asian bamboo steamer or equivalent. The card states the recipe is also delicious with trout, rockfish, and small striped bass. I haven't tried these fishes in this dish.
Smoked Trout & Cucumber Sandwiches

Delicate and delicious finger sandwiches which are super-quick and super-easy to make. Smoked salmon or canned red salmon can be used instead of the smoked trout. This yummy recipe has been adapted from a recipe by Sophie Hansen in from the current issue of the 'BBC Australian Good Food' magazine. If the occasion does not demand elegance - if you are simply making these for yourself for lunch, for example - use whatever is your favourite bread, crusts on! I enjoyed these today with crusty ciabatta! There was a suggestion for plating before you place the trout on the plate - "In the centre of a large plate, place 5 oz. wild rice pilaf. Arrange 4 seared asparagus on top of rice Place trout on top of rice & asparagus".
