Banana Colada (Non-Dairy Mocktail)

A luscious-looking drink for all you coconut lovers out there (like me!) who want something smooth and creamy, but don't want or can't have alcohol or dairy. I found this over at the World's Healthiest Foods site while browsing their recipe collection. This variation on the more traditional pina colada recipe is a good cure any tropical cravings you might have! You'll want to make sure to use ripe bananas for this recipe, as it will provide more flavor and sweetness that way. Also, make sure to use only enough liquid to keep the blender going. NOTE: Cook time is freezing time for the bananas. If you're like me and usually have leftover ripe bananas already in the freezer waiting to be used, this recipe is a snap to put together. -- posted by Lynne the Pirate Queen

Frozen Mango Rum Cocktail

A tropical drink that remind me of the islands and summer. You can make this non-alcoholic for the kids and non-drinkers by substituting 2 cups of orange, peach or mango juice for the white rum and 1/2 cup of coconut milk for the coconut rum. -- posted by Jociecee

Banana Passionfruit Smoothie (21 Day Wonder Diet: Day 16)

This is Day 16: Breakfast, on the 21 Day Wonder Diet. This is a delicious smoothie, and one of my favourite breakfasts on this diet! You can use a different flavoured yogurt if you prefer, but I think the passionfruit is perfect in it. This breakfast is to be followed by a mid-morning snack of 1 lebanese cucumber, cut into sticks and served with 1 tablespoon of low-fat cottage cheese. -- posted by Sara 76

Avocado, Banana and Mango Muffins

An unusual combination, to be sure, but one that looks so good I just had to share! I've recently discovered the wonders of avocados, and have been trying to find new ways to enjoy their heart-healthy benefits. Though I haven't yet tried these muffins (from the Kiwi Gardens B&B in Kailua-Kona, Hawaii), I will certainly do so the next time I have some extra avocados on hand. You can save some time by using thawed frozen mango chunks instead of fresh mango. -- posted by Lynne the Pirate Queen

Use It or Lose It Smoothie

I bought a ton of fresh fruit at the start of the week and it is now Saturday and there is the odd bit of fruit still left in the fridge that must not have much time left in it. I hate throwing food away but know I won't get to eating it all one bit at a time before it goes off. So, I threw it all in the smoothie maker and decided to see what would happen. I ended up really enjoying the results. I used Greek yoghurt because it is what I had and my lactose intolerance doesn't flair up if I use it. I am sure you could use any fat free yoghurt though. This made two big smoothies for me but could easily be four smaller ones. -- posted by Sarah_Jayne

Superfruit Smoothie

My absolute favorite smoothie - banana, kiwi, mango, peach, and clementine! When fresh fruit is in season, I like to play around with different combinations, but this is the one that I make the most. Not only does it taste absolutely amazing, but it is loaded with natural nutrition too; Vitamins B & C, potassium, dietary fiber, omega-3 F.A.s, antioxidants, calcium...much more wholesome (and yummier!) than a vitamin pill in my opinion. And because of the fiber and protein, it is filling enough to be a hearty snack or a meal substitute. Before you get too excited, a quick word of warning about the kiwi - if you eat too much at once it can make your mouth feel tingly and raw (yes... I've had this happen. I can't help myself!) I hope you like this smoothie as much as I do! :) -- posted by Oenophilly

This is really refreshing on a hot day. I'm sure you could add rum to make this an interesting cocktail although I've only tried the non-alcoholic version!
Jazzy Fruit Salad

Fruit salad is one of my go to favorites to take to summer events. Light fresh and easy, you can always please a crowd. The color contrast between the tropical fruits and the bright berries will be an eye-catcher with the addition of ginger, lime and mint giving it jazzy finish that everyone will remember.
Fabulous Fruit Salad

From TOH magazine. I love fresh fruit--and this salad is sooo chock-full of fresh fruit, that it is well-named! I can't make the dressing for myself (due to a food intolerance), but I think it would make a tasty dressing. Cook time is the minimum of 1 hour chilling time. -- posted by Halcyon Eve

Caribbean Baked Pineapple

Grown only in the New World tropics, pineapples belong to the bromeliad family. Bromeliads are epiphytes, or air plants, which means they absorb water and nutrients from their environment through microscopic hairs at the base of their leaves.Their roots function only as an anchoring support. It takes 13 to 18 months for a pineapple to mature.
Hawaii Da Kine Burgers W/ Sweet-Chili Glaze & Goat Cheese

Sutter Home's 2008 Build a Better Burger ® Winner!!!!
"Da kine" is a key phrase in Hawaiian Pidgin, the language of the "locals." It can mean almost anything, but commonly refers to something good or genuine, or as in this case, "the best."

This burger is as local as it gets, both in taste and ingredients. The patties are tender and juicy, thanks to fresh papaya and sweet onion, and are spiced with Hawaiian Portuguese sausage, which is so popular in Hawaii that it is on every breakfast menu (including McDonald’s). The accompanying salad employs heating oil to its smoking point, a local cooking method, resulting in a dynamite burger accompaniment. To complete the Hawaiian flavoring, I added a sweet glaze (Hawaiians love sweet and savory) and was inspired by our award-winning goat dairy to create a mouth-watering ginger-infused cheese spread. Ho, dat's da kine!

My daughter loves these, and it's a great morning treat, especially before school, it helps get her moving! I let her choose what flavour she wants the night before, and bring it up to her while she's getting ready for School.
The key is the vanilla yogourt, it gives it a great flavour. -- posted by ~Leslie~

Cottage Cheese With Banana and Blueberries

One of my favorite snacks growing up in southern California with plump berries from Portland, OR. Now that I'm in Norway and surrounded by free-for-all blueberry bushes, I can't wait until the blueberries become ripe and ready in August, so I can start enjoying this simple treat again. I don't add honey when I make it for myself. Feel free proportions to adjust to your own cottage cheese to fruit ratio preferences. :) -- posted by FuzzyKiwi

I made this one when I had one mango and some coconut macaroon cookies to use up. It is light and refreshing, great for summer. Use a clear bowl for a pretty presentation. -Note- the cookies that I use for this are flat and crunchy. I use about 32 cookies.
Grilled Pound Cake Sundaes

Grilled pound cake with pineapple, fruit, and ice cream. A good no bake recipe for hot weather. If fresh pineapple is not available use canned pineapple slices, drained, 2 per serving. Substitute any fresh fruits in season. For a no-grill option, broil pound cake and pineapple separately on a rack set 6” from heat source until lightly browned, turning once, 1 or 2 minutes per side. Instead of cooking spray, use additional melted butter to coat pound cake slices. The original recipe from Woman's World magazine called for serving with caramel topping and dulce de leche ice cream. I skipped the caramel topping and served it with French vanilla ice cream. -- posted by foodtvfan

Banana Almond Date Soy Smoothie

This vegan smoothie is amazingly rich, creamy, filling, and healthy. It has a nice texture to it from the almonds and a natural sweetness from the banana and dates. I like that there is no refined sugar added or any animal products, all good for us and the planet. I like using a frozen banana to make the drink cold, but room temperature works well too. If you want to freeze bananas, peel them before freezing. Peeling frozen bananas doesn't work! And place them separated in the freezer so they don't freeze together. -- posted by Chef #1363287

Kiwi, Strawberry and Grape Juice.

I got this recipe from 'The top 100 juices' by Sarah Owen, published by Lifetime Distributors, Castle Hill, Australia.
Sarah Owen says "All three fruits in this juice provide a massive infection-fighting boost of vitamin C and can help to shorten the duration of a cold. The kiwi fruit a also contain lutein, a phytonutrient known to reduce the risk of cancer, heart disease and eye disease. Both strawberries and grapes are high in ellagic acid, which neutralizes carcinogens. The tannins, flavones and active compounds in the grapes combine to make them energizing and strengthen the cell walls of blood vessels"
You could make more than one serving, and serve with lemonade and ice in a punch bowl for a party if desired.
I haven't made this yet, as I don't have a juicer, but if I ever get one, this will be the first juice that I make.
Enjoy! :) -- posted by TALIA #3
