			<description>I wanted something that was cool, crunchy, tangy, spicy and a little sweet that would meet my diet requirements and was not your typical diet food. 

This is my version of a fresh veggie relish/salad that is great alone or when paired with seafood, beef, pork etc...

Perfect in a warmed flour tortillas wrap with some shrimp,  or a lettuce wrap with a bit of Avacado.  It can be used with seafood, chicken, beef or pork as a relish.  Or as I like it, alone for lunch.  High fiber, low fat and awesome taste.    I hope you enjoy it. (Just another idea for dressing this fresh fruit salad up with frills!) This is not only healthy, but it is SO festive and colourful - my photo shows the one I made this Boxing Day (26th December), I usually add kiwi fruit too, but we had run out of them.......oooops! My quantities listed here make enough for 6 to 8 people, but this can be increased as well as reduced to suit personal requirements. I normally serve this with cr&amp;egrave;me fraiche or vanilla yoghurt, but its also wonderful when served naked, the salad that is, not me! It is an update on an OLD recipe that calls for a cooked dressing --she has gone modern and uses the microwave and add cool whip instead of making her own whipped cream.She makes about a triple batch in a big tupperware bowl and keeps the leftovers in the fridge -- be sure to stir leftovers and eat with in about a day.
