Coconut Cherry Dump Cake

This recipe is more like a cobbler than a cake, and so easy to prepare! Just dump the ingredients into the pan one by one and bake. Would be great for a baby or bridal shower or another celebration. Enjoy! -- posted by averybird

A Simply Grand Napoleon Dessert

Originally conceived as an RSC #9 contest entry, this dessert recipe has simplicity as the heart of its appeal and combines it with an easy, make-ahead method to reach a special outcome. It is easily halved to serve 2, is bold with the flavor of Grand Mariner and is certain to convince your family or guests you have slaved for them.
Banana-Coconut " Cream Pie" Smoothie

This is adapted from Smoothies & Summer Drinks. Freezing the bananas ahead of time makes for a thicker smoothie. To freeze the bananas I usually peel, slice, and then place them in an airtight container and then freeze. This can be made in a blender or in a large pitcher and puree using an immersion blender. -- posted by cookiedog

Pineapple Macaroon Bars

I was looking for pina colada bars without rum, and couldn't find exactly what I wanted: a bar cookie that had 3 layers: cookie, pineapple, and coconut. So I found two recipes and combined them to make what I wanted. (They are Cherry Pineapple Bars and Cherry Macaroon Bars.) I omitted the cherries (marashino - yuck!), and already reduced the sugar to half, since most recipes have too much sugar. It was just right. You may want to adjust to your taste. -- posted by Triplit Mom

This is more for people like me that need a lot of calories. However, you can easily reduce the calories by ommitting the coconut oil and using regular milk or water. Not that it's as yummy then.;)

Crispy Coconut Chicken With Mango Salsa

Totally Tropical! I served this for our church at a Girls Night - Tropical Breeze event, which we held at a friend's house. We had the hot tub going and served this plus many other great dishes. Not your typical church lady luncheon! If you want, you can easily make this into a great appetizer. Cut the chicken into bite sized pieces before breading and serve with a bowl of salsa on the side. This works well with chicken thighs too, and those pieces are cheaper. -- posted by Jess4Freedom

Lemon Pop Cake With Pineapple Coconut Topping

From "Cake Mix Magic." The author notes that "The pop is in the cake; it's not the cake that 'pops.'" A lemon cake mix with lemon-lime soda in it is matched with a tropical toasted coconut and crushed pineapple whipped topping. The plain cake can be prepared and frozen for later. Just thaw and top it when you need to. If you are using a cake mix with pudding already in it, you may choose to eliminate the package of pudding mix that the recipe calls for. Prep time is an estimate. -- posted by the_cookie_lady

Banana Colada (Non-Dairy Mocktail)

A luscious-looking drink for all you coconut lovers out there (like me!) who want something smooth and creamy, but don't want or can't have alcohol or dairy. I found this over at the World's Healthiest Foods site while browsing their recipe collection. This variation on the more traditional pina colada recipe is a good cure any tropical cravings you might have! You'll want to make sure to use ripe bananas for this recipe, as it will provide more flavor and sweetness that way. Also, make sure to use only enough liquid to keep the blender going. NOTE: Cook time is freezing time for the bananas. If you're like me and usually have leftover ripe bananas already in the freezer waiting to be used, this recipe is a snap to put together. -- posted by Lynne the Pirate Queen

Hawaiian Tea Bread

I love this bread. It's so moist and versatile. I make it for breakfast, brunch, tea parties, and even desert. I like to use a mini loaf pan and give the loaves as gifts in a gift basket along with other "Hawaiian" treats. I also use valtrompia bread tubes in different shapes and then slice. The slices look so pretty on a plate. If you use the bread tubes, be sure to fold wax paper to fit over both ends of the tubes before fitting the lids on. I learned this recipe when I used to be a consultant for Pampered Chef. -- posted by JeanieK

I made this smoothie, trying to copy a store-bought kind and this is so much better! The fresh pineapple gives it such a light, fresh flavour- it's just not the same with canned pineapple.
If any of this smoothie makes it to the fridge, you may like to water it down with some pineapple juice as the coconut milk thickens as it cools. -- posted by Shuzbud

Tropical 7 Layer Twist Bars

Coconut Ice - Old-Fashioned Sweet Shop Coconut Candy

A trip down Memory Lane! This is my mum's recipe for Coconut Ice, little coconut squares which are coloured pink and white, and used to be popular in old-fashioned British sweet (candy) shops. My mum used to make trays and trays of these for our Church fêtes, as well as for Christmas and for gifts. These lovely little coconut morsels are very popular in Scotland where I think my mum's recipe originated – either from my Scottish grandmother or an auntie. These are great fun to make with the children, as they are easy as well as being "no-cook". If you plan to make them for gifts or to sell, pack them into attractive cellophane bags, glass jars or boxes and add a pretty ribbon as well as a label of ingredients and storage details. This recipe is part of my Old Fashioned Sweet Shop collection of recipes, sweets, candies, fudges, sugar plums and chocolates! -- posted by French Tart
