Jon and Vinny soak the livers in buttermilk and coat them in flour, then repeat the process for extra-crispy results. &amp;quot;I'm into livers of all kind now&amp;quot;, says Dotolo especially duck and lamb.&amp;quot;  I tried this with great trepadation and it was really very good, believe it or not! This is a staff favorite at F&amp;amp;W test kitchens and here as well! This is a recipe that has been handed down through the generations in my family as long as anyone can remember.  My grandmother (peacefully rest her soul) recalled learning this recipe from her grandmother.  She also told stories of her grandmother recalling learning it from her grandmother.  This is a truly old-world Italian version of this recipe.  Many of the versions that people know have been Americanized or have been updated in some way. This historic restaurant is truly where I obtained my love of lettuce salads when I was a youngster. I went with my mother and father, downtown (sometimes even during the week!) to enjoy the great American &amp;quot;classic dinner&amp;quot;. I always felt like a grown-up ordering my own salad, which was made table side. I absolutely fell in love with the big old woodened, seasoned, salad bowls and large wooden forks to mix up the ingredients. I could eat anyone under the table eating one of these salads, and to this day, this salad is a favorite of mine. Just recently, this inspired &amp;quot;Marconi Chopped Salad&amp;quot; showed up in the &amp;quot;Baltimore Sun&amp;quot; paper by Brucie White who answered a request for this recipe. Although &amp;quot;Marconi's&amp;quot; never officially published this recipe, Mr. White has tried to put together the components that were so inspired for so long in memory of this great establishment. Fresh off the cob is perhaps the best way to eat summer corn, but corn tossed with beans and tomatoes is a close second. The sweetness of the beans and the acidity of the tomatoes bring out the flavor of the corn. We wanted to find the best way to combine and flavor this trio. Heres what we discovered:
Boil the ears of corn until just tender, then cool them quickly under running water so that they dont overcook.
Canned black beans taste fine, as long as you rinse and drain them thoroughly to remove any of the liquid in which they come packed.

Ripley tomatoes are from Ripley, TN and I have no clue if you can get them outside of TN &amp;amp; MS. If you can't get one, just get the biggest firmest one you can find! Ripley tomatoes are so red they almost look fake when they are ripe. Use low fat cheese and dressing to save calories. I use fresh ground black pepper and fresh ground sea salt. I use a TON of basil b/c I LOVE it -- use it to taste. PS This is the ONLY way I eat tomatoes -- period. Just remember the veggie ratio is 1:1:1 and you'll do fine!  **Unless you live in a warm climate and can grow or get locally grown tomatoes all year long, don't bother making this in the winter!
