Quick Chicken and Shells With Fresh Mozzarella Cubes

This is a perfect dish for those week-night dinners where you want to get something quick and healthy on the table in under 30 minutes. When first made it I was pretty much cleaning out my pantry and allowing my son to pick out garden ingredients. -- posted by Melanie B.

Perfect Spaghetti Sauce (Crock-Pot)

As a kid, I was pretty picky about spaghetti sauce, and then mom got this one from a friend...SO good! Now that I have kids of my own, they love it and I've been able to improvise on the recipe myself to make it both kid- and adult-friendly! An easy meal that you don't have to think about and will make your house smell delicious! Plenty for freezing,as well, for another day. Hope you enjoy!

*Sometimes, I'll replace some of the tomato sauce with crushed tomatoes and add a little more spice and garlic to compensate*

**I use hot Italian sausage mixed with ground beef for a little more of a kick** -- posted by Chef #1240616

Very simple and quick to whip up. Serve with Multi-grain tortillas, toasted pitas, or baguette slices.
Tomatillo Stew

A versatile stew base that can be switched to suit any palate. The tomatillos give this stew base a plenty of citrus flavors, so feel free to leave out the additional lime juice. The roasted poblanos provide a very subtle heat that is not at all overpowering. If more heat is desired, add a couple of chopped chipotles in adobo or 2-3 chopped serrano or jalapeño chiles.

Serving Ideas: When the stew has cooked about halfway (step 4), add meat of choice: shredded roast chicken or thinly sliced boneless pork chops would be equally good. In the original version, I used 1 1/2 pounds of pre-cooked beef tongue; the richness of the meat paired quite well with the tart flavors in the stew. For a veggie version, stir in some cubed eggplant or winter squash or whatever protein substitute you like. -- posted by Hungry Hogareno

Nana King's Sweet Chili Sauce

Similar to a chili sauce my mom and grandma used to make; we always had it chilled over cream cheese to spread on crakcers. This recipe was adapted from one by a bridge pal, Robert King. He was gracious enough to share it from his southern grandmother's recipe file. The traditional way to enjoy this sauce down south is spooned over black-eyed peas. If you are a tomato gardener and find yourself with an overabundance; substitute 4 quarts of peeled and chopped fresh tomatoes for the canned. -- posted by Hungry Hogareno

Restaurant Salsa

Bring the mexican restaurant to your home with this easy to make salsa. You'll never buy store bought again. You can add more jalapenos(or a habenaro) to make it hotter. I know everybody has their preferences when it comes to salsa, so tweek the recipe as much as you want(fresh garlic, red onion, franks red hot, etc). I would however stick with the recipe first.
Salsa

A mild tomato and sweet pepper salsa with cilantro and lime. Easy and fast to make using a food processor, but can be prepared by chopping the vegetables by hand if a food processor is not available. For a thicker salsa squeeze some of the juice out of the peppers and onions after processing and before adding the other ingredients and strain some of the liquid from the canned tomatoes before adding them to the mix. -- posted by Chef #578370

We love minute steak... our butcher does a really nice job and I always want to try a new way to prepare it, I have done this before but I really liked it today...maybe it was the wine? The wine I put into the sauce... lol
Minute steak is really tender off the bat but I am sure that if you simmered round or serlion steak about an hour it would be really tender too.
This is especially yummy with mashed potatoes, but nice with rice or pasta too. -- posted by Marmie's

Barbecued Shrimp BLT Sandwich With Lemon Butter Sauce

This is a Wolfgang Puck recipe and it is delicious! I found it again when I was surfing the net - as always, looking for something else, and voila I found it! I had eaten this a long time ago when a friend prepared it for us, my friend left for somewhere in Cuba -- never to be heard of again, more than likely she is very busy trying to build a house for her folks wheeling and dealing, so as to get what she needs -- she doesn't have time to write and then find someone that she trusts to deliver the letter to me! Anyway -- the recipe is truly wonderful! :) Wine pairing: If you're feeling adventurous try a full and oakey Chardonnay from Australia like Rosemount, Petaluma or Lindemans. This dish goes great with a number of the micro brews, such as Anchor Steam, Sierra Nevada or the most popular Samuel Adams. -- posted by Manami

Beautiful Tomato and Mint Salad

Good enough to serve on its own, with plenty of good bread and decent white wine. Perfection satisfaction and simplicity all rolled into one. You'll never want to use basil again! The only specification is that you use the best fresh tomatoes you can find, preferably on the vine and deep deep red in colour. I prefer to chill the tomatoes to make for easier slicing, then allow the finished dish to come to room temp.
Easy Pizza Pancakes (Thick Crepe Style)

Some of my friends from Rio will remember when the heavy rain flooded our apartment and we spent hours trying to scoop up and drain the water away. None of us had eaten so half way through, ankle deep in water (!), I devised these lovely little pizzas to give us all a break and a laugh as I'm flipping the pancakes!. I think they taste so good because the 'base' is fresh. Feel free to add extra toppings as you wish but I think they're great plain.
Zanzibari Chutney (Part of Zanzibari Pulao/Pilaf)

Growing up in Dubai there was a tiny restaurant my father would occasionally take us to. They were famous for & only served Zanzibari Pulao along with a cold glass of the drink Tang. After moving out of Dubai the only option I had to still eat the pulao was to come up with something at home. After many trials my mom came up with this chutney recipe. This chutney is part of the Zanzibari Pulao that I have posted. Pakistani Bhagaare Chawal (Stir Fried Rice) or Zanzabari Pulao recipe #282570
Soon I'll post Zanzibari Fried Fish's recipe as well.
Already warning people with low tolerance to spices. This chutney is spicy & sour . It can be stored in an air tight jar for 2 weeks in the fridge. -- posted by Bint e Naeem
