Quick Raspberry Banana Loaf

Found this recipe on the back of a sugar packet. I hate Bananas in anything and this is the only recipe I've ever come across where I don't mind the bananas. When I make it I put the batter into 12 Medium Muffin moulds instead and halve the cooking time. The family loves them as a snack, lunchbox treat or breakfast on the run. -- posted by Possum Chef

Chicken Stew

This is a very hearty stew. I got this recipe about 30 years ago from "Family Circle". My son was 5 or 6 and would not eat many vegetables but liked this, so it was a keeper. He never noticed the okra in it. You can also substitue or add what you like to it easily. This makes a huge pot, so be ready to share or freeze some! I cook it on top of the stove in a dutch oven. I serve it with corn muffins and it is a meal. I hope other's enjoy it.
Note: If using left over turkey, use chicken broth instead of water. -- posted by Chef #1388586

Creamy Pumpkin Rice Pudding

Even though the phrase "leftover pumpkin" doesn't exist in my household, most people often wonder what to do with the leftover pumpkin after making a pumpkin pie. I like to make this tasty, simple, and quick dessert when I have a huge can of pumpkin I haven't completely gone through. Whole milk and cinnamon rice milk really work best for this recipe, but some tasty variations that really add to this pudding's richness are vanilla rice or soy milk, and Silk Pumpkin Pie flavored soy milk (which is only seasonal, I wish it was available year-round! And is it just me or does Silk Pumpkin Pie Soymilk taste just like Silk Nog that's available around Christmas, only they package it differently? So if you're making it around Christmas, use Silk Nog!) This awesome dessert is great for parties and potlucks,
it travels and freezes well, and was a big hit at my sister's Halloween party! Both the kids and adults loved it. (Note: Prep time does not include cooling time.) -- posted by the80srule

Crock Pot BBQ Chicken & Peppers

I use this recipe many different ways...sometimes I make rice and serve the whole chicken breast on top w/ leftover sauce or I shred and use in BBQ sandwiches! I always like a little crunch in my sandwiches so that's why I've added the peppers, they are sweet and cut thin so they don't take away from the chicken! I have also used the leftovers in roll-ups for lunches...so many possibilities. -- posted by Rollin in the Dough!

Tangy, Zesty Oil and Vinegar Potato Salad

The best potato salad you've never had. For when your craving that certain ZING from vinegar...I don't like regular potato salad. I don't like sweet relish, eggs, or miracle whip in my potato salad. The sharp onion with the vinegar balances the soft potato texture. Inexpensive and college budget approved. For more of a bite, add two to three teaspoons of whole grain mustard along with the olive oil. Try this!! Yumm....From Bon Appetit, 2009.

Yogurt Breakfast Smoothie

I make one of these shakes for breakfast almost every morning. Sometimes I make extra for a quick snack mid-morning too. The intent of this is something filling, but healthy.

Sometimes I will sometimes mix in 1t of some kind of protein powder (e.g., whey powder) if I need the extra filling nature of protein. Be mindful of how much protein powder is added as it can make the shake very filling -- I used to to 1T but that was far too much.

As a note, I used to mix with a hand blender wand. I found that did not give the smoothie the same fluffiness, but it was passable. -- posted by John W

Tuna & Cherry Pepper Sandwiches

Found this recipe in Cowgirl Cuisine by Paula Disbrowe. In the book she says "her life sounds like a fantasy." After working as food editor at a magazine in NYC - Paula Disbrowe moved to Rio Frio, Texas, to be the chef at Hart & Hind Fitness Ranch. Not long after in 2005, she and her husband bought a 100 acre working ranch in Texas's Nueces Canyon. She shares recipes that exemplify ranch eating but with a lighter approach, like her chili made with turkey, white beans and sage, and tostadas topped with shredded chicken and crunchy citru slaw. This recipe is considered the best of the best exclusive! Have tweaked it slightly because of personal preference! :) -- posted by Manami

Roast Eggplant With Walnuts

This wonderful appetizer, when served with warm pita, marinated strips of red pepper & tasty olives, can be a meal unto itself... or tucked into a pita with the aforementioned for lunch, a very nice lunch. Per the Times: "This Turkish recipe is from Paula Wolfert's upcoming book, "The Slow Mediterranean Kitchen," which will be published in October by Wiley. Wolfert notes that the slower the grilling, the smokier the flavor of the eggplant. She thanks Dr. Ayse Baysal for sharing the recipe."
Note: When large eggplants are roasted whole, you may notice black juices seeping out of the skin. If this happens, immediately slit the eggplant on one side and drain on a slanted board in the sink. -- posted by Buster's friend

Sturdy, abundant and inexpensive, cabbage is a long-standing dietary staple throughout the world and is so widely cultivated and stores so well that it is available throughout the year. They belong to the Cruciferae family
of vegetables along with kale, broccoli, collards and Brussels sprouts. Cabbage is very high in vitamins C and K, and a decent
source of dietary fiber.

Oil Free Oven Fried Rice

This is another recipe my BF's mother gave me that I have revamped and made healthier. The original recipe called for 1/2 cup oil which I felt was unnecessary, I removed it completely and the recipe still turned out great. It also called for 3 ½ cups water and 2 chicken bouillon cubes; I cut down on the sodium by using low sodium chicken broth instead. -- posted by katdi

Healthy Green Chili & Potato Gratin

Unless you are a carb-hater, potatoes are pretty healthy...low in calories, some fiber. This recipe mimics a very rich and creamy Potato Gratin but uses low fat ingredients and my FAVORITE ingredient of all time - Green Chilis - one of the many bags that I roasted and froze during the last NM Chili season. -- posted by Melanie B.

Simply Healthy Veal Jerky

I had some extra veal I didn't know what to do with and figured I'd try making some jerky out of it. It was surprisingly good. I think I could have turned the oven off much sooner though, it was very brittle. A nice slight hint of BBQ flavour and it was great. I used calorie-free Walden Farms BBQ because I'm on a diet, but I'm sure another full flavour BBQ sauce would add much more flavour. Also, I eyeballed the BBQ sauce, I used enough to cover all the meat, so it might be more than 1/2 cup.

I'm looking forward to trying this with Teriyaki Sauce and other seasonings. I don't add salt as I'm trying to watch my sodium right now. I found the bbq sauce was just enough flavour. -- posted by Seamor

Candy Corn Onigiri (Rice Balls)

For Halloween bento boxes! This is a lunchbox friendly recipe, quick to put together. Prep time does not include cooking of rice, as you can prepare the rice the night before, or use leftover rice. I like cooking my rice fresh in my rice cooker while I fix the rest of the lunches. These would also make good non-sweet treats for a Halloween party. You can also add a smidge of filling to the rice ball before you decorate it, like chicken, squash, or whatever. :) -- posted by CraftScout

Brown Rice Tangi Salad

This is an easy to make family favourite given to me by my mother years ago. A delicious, high fibre way to include more brown rice in your diet. It improves on standing so if I'm wanting to take it to a BBQ or pot luck dinner, I'll make it the day before then chill it over night. The brown rice gives it a lovely nutty, chewy texture in a sweet sour dressing. Everyone will be coming back for more and want the recipe.
Barbecued Shrimp BLT Sandwich With Lemon Butter Sauce

This is a Wolfgang Puck recipe and it is delicious! I found it again when I was surfing the net - as always, looking for something else, and voila I found it! I had eaten this a long time ago when a friend prepared it for us, my friend left for somewhere in Cuba -- never to be heard of again, more than likely she is very busy trying to build a house for her folks wheeling and dealing, so as to get what she needs -- she doesn't have time to write and then find someone that she trusts to deliver the letter to me! Anyway -- the recipe is truly wonderful! :) Wine pairing: If you're feeling adventurous try a full and oakey Chardonnay from Australia like Rosemount, Petaluma or Lindemans. This dish goes great with a number of the micro brews, such as Anchor Steam, Sierra Nevada or the most popular Samuel Adams. -- posted by Manami

Chicken and Veggetable Pasta

Simple and quick pasta that you can make with almost anything you have in the house (only a few of the ingredients are things you may not have). Doesn't use pasta sauce, olive oil and spices instead, and tons of veggies or just a few. (can be made for anyone who loves or hates veggies!)

Savory Loaf (Abm)

I've baked this 5 times before I posted it on RecipeZaar. It's a big hit with my friends and family. It's wonderful for ham & cheese sandwiches, or sopping up the bowl from beef or chicken stew. I've made it both with sugar and with honey, with margarine and with butter. The cooking time is a guess on my part, as I set the machine to bake and fugeddabouddit. Do give it at LEAST three hours to do its thing. -- posted by SnoBahr

Borracho Beans

Borracho is translated from Spanish to English as drunk. It specifically refers to the beer that is an added ingredient.

If you are unable to soak the beans overnight just account for additional cooking time. I generally use the Casserole brand of dry pinto beans because they seem to cook faster. I have found them at most Albertson's locations. However, any brand will work.

You can also substitute the Mexican dark beer for any beer you have on hand.

I took about 4 or 5 recipes and combined them with the way my Mom makes them also. You can make them as spicy as you want! I noted the variances for the Cumin, Chili powder, and jalapenos. I also always use fresh ingredients - no canned jalapenos or tomatoes.

The crock-pot liners are purely optional. I normally take two of them and line the crock pot just in case one breaks. They make it 100% easier and virtual no clean-up is required if you use them to line your crock-pot.

The recipe is very forgiving, so you can take away or add to it as you see fit. It's very hard to mess up. -- posted by Chef #1097715

A Trifle Decadent

This delightful, low-cal trifle comes from Canadian Homemakers Magazine /2004. Thickened yogurt and angel food cake replace whipped cream and pound cake to make a luscious light trifle. Berries can be frozen or fresh. The custard part can be made ahead of time and yogurt must be drained of it's liquid ahead of time -- posted by Inverchef

It would be an awesome side dish for some grilled chicken or fish, or just all piled up for a meatless meal. You can change up the veggies, depending on your preferences and what you have on hand, too. -- posted by ChefMamaBlogger

This is my FAVORITE salsa recipe. It is so easy to put together. I usually use a red onion and sometimes add fresh cilantro -- posted by Chef #1037972
