			<description>In a pathetic attempt to make eggplant parmigiana, I created this instead. It's very easy and uses basic ingredients that are probably already in your kitchen. I've made it about a dozen times in the past few months and my husband loves it. It's a very flexible recipe and I've tried it a few different ways already and it always tastes great and surprisingly like pizza. 			<description>Here is another one that doens't last long at our house.  Everyone loves it.  A nice green salad or green beans go well with this.   For my make ahead weekends, I prep the chicken and ham and combine with the cheese and freeze. Prep time does not include time to cook ham and chicken.  The day to cook - just defrost in the refridgerator while I'm at work - and then make the sauce while the oven preheats. I had to do further research and hours later, found a recipe that I was happy with sharing. There are American versions of this and Italian versions of this. The Italian version has you begin by reducing the anchovies into a paste, reducing their fishy taste. It also has you cook the sauce longer, mingling the flavours and reducing the tomatoes into their own paste. Although excellent the 1st day, it is even better the second so plan ahead to make more! And please, RESIST the urge to cover this with cheese! 			<description>This is a great recipe that a friend of mine has been bringing to office pot-lucks for years.  I just got the recipe from him and made it myself.  It's a unique and pretty decadent twist on traditional enchiladas.

You can adjust the amount of green chiles and jalapenos to your particular taste.  This recipe carries a little bite, but is not particularly hot (even using green chiles rated HOT).  To pep it up, use 3 cans of green chiles and 2 cans of jalapenos.

			<description>Got this recipe from my friend's mom, who makes it with pork. I haven't tried it with the pork, only turkey.  Kids love this recipe - it goes well over rice.  Best part is that it takes no time at all to make. On days when I don't have time, I simply mix everything together beforehand, cover it in saran wrap and throw the Corel bowl (which I can put directly into a steamer) into the fridge until 30 minutes before dinner time.  To avoid using the chicken bouillon I have tried using chicken broth, but I really see no difference in taste.
