Ranch Clam Spread/Dip for Crackers

I had this at Costco of all places! I came home and had to post it because it is so easy and it was very good. In fact, I had one and then I liked it so much, I came back later and had another! Don't report me! You can adjust the amount of dressing and cream cheese to suit your taste. *in light of Elissa's review that it was good but thin, I would add less ranch and more cream cheese to adjust. You can alter these 2 ingredients to your liking (and texture). It should have the consistency of tuna salad. Serve on your favorite cracker. I like Ritz for this. -- posted by Oolala

My Favorite Broccoli Casserole, OAMC Style

I'm just starting on my OAMC adventures. I LOVE LOVE LOVE broccoli casserole and would probably keel over and die if I couldn't have it anymore. Yes, that's right...die. Mom and Pop always raise some broccoli in the summer and this my favorite way of eating it (other than my soup). So, I mix up a batch of this when it's fresh and throw it in the freezer. -- posted by Redneck Epicurean

Esther's Dill Coleslaw

This recipe came from the Savannah Country Cooking cookbook, Paula Deen's very first cookbook. It is served by Esther Shaver in her bookstore cafe. If Paula thinks it's that good, well...it must be! So, I tried it, and it is. Different from a normal coleslaw, but goes well with just about any meal! Cook time would be chill time, but will vary if your serving immediately or chilling. Also, the prep time will vary if you have to shred all the ingredients. Both are guesstimates. -- posted by Redneck Epicurean

Swirled Caramel Cranberry Meringue Squares

This came in my e-mail today from Very Best Baking. I haven't tried it yet, but it looks delicious and Very Best Baking usually has good recipes. It actually calls for Nestle Toll House Milk Chocolate and Caramel Swirl Morsels, but the computer would not let me put that. I'm sure that it would also be good with regular milk chocolate chips. I will update as soon as I make it. -- posted by Chef Schellies

Sweet Potatoes (Yams ) With Apricots

From the San Antonio, TX, Junior League cookbook called "Flavors" posted by Mrs. Sallie Riester. It sounds like an easy recipe since it uses canned yams and apricots. The note by the chef stated: To double the recipe you need only 1 1/2 of the sauce to twice the amount of potatoes, apricots and pecans. This is Mrs. Riester's Mom's recipe. -- posted by Oolala

Suzanne Somers' Green Beans and Vinaigrette

Green Beans with a garlic vinaigrette. Can serve this hot or cold and the vinaigrette can be used over other vegetables or as a salad dressing. I find that if you make the vinaigrette in advance, it allows the flavors to blend and infuse the oil. I have added Parmesan cheese, Emeril's Essence spice mix and even some splenda and honey. My kids loved it. You could use the dressing as a base and just add ingredients to taste (Dijon and Worcestershire work well too). -- posted by Oolala

Best-Of-Show Cherry Pie

Hosted a 4-H Food Project meeting at my home featuring "Fall Produce". Although I had planned to use pumpkins, apples and cranberries for the from-scratch fillings, I figured this is another way to make a pie (from the can). She made a beautiful job of it by putting a lattice top-crust on it, then glazing with an egg wash, and sprinkling with baker's sugar crystals. When it came out of the oven, the kids and I decided this was "Best of Show" -- it was so pretty and perfectly beautiful. -- posted by Debber

Grant Achatz's Mac and Cheese

You would expect Chef Achatz’s macaroni and cheese to have some chef tricks, but it doesn’t. He uses a white sauce, elbow macaroni and cheddar cheese, just like the rest of us. His personal touch: a tablespoon of paprika (to enhance the color of the sauce) and lots of smoky, crisp bacon bits. We love this recipe, which we tried out on resident's to see if they liked the pasta and cheese sauce. Have tweaked it a bit!
Hg's Rockin' Lean Bean Casserole! - Ww Points = 1

Here is yet another Thanksgiving Day recipe from Hungry Girl! The holidays are here. Know what that means? It's green bean casserole time! But did you know that even though the main ingredient in the classic dish is green beans, each serving can have about 250 - 300 calories and TONS of fat? How can that be? It's all those crazy canned fried onions that are crammed into and piled on top of the thing. One little can of those crispy catastrophes has roughly 900 calories and 70 grams of fat! Eeeks! The good news is, with just a few easy swaps, you can make your own version of this holiday fave, for a fraction of the fat and calories. Check out HG's NEW recipe and share it with everyone you know...

(Serving Size: 1/8 Casserole - 80 calories, 1g fat, 255mg sodium, 13g carbs, 4g fiber, 3g protein -- POINTS® value 1)

Please note that all of the can sizes are approximate as none were provided in the recipe from Hungry Girl. I will update this when I make the recipe! :-) ANOTHER NOTE: ***This recipe will rock your holiday world!!!! The key ingredient here is the Crispy Delites Red Onion Chips. You can buy them online at heavenlydietstore.com or yummydelights.com. In a pinch, you can use an ounce of onion-flavored soy crisps instead. -- posted by senseicheryl

Quick & Easy Gourmet Corn Muffins

I wanted a corn muffin recipe I could double and triple easily to bring to our Thanksgivings this year. Finances are tight so I wanted to make something that tasted and looked more expensive and gourmet than it really was. I remembered having some delicious gourmet corn muffins at a breakfast a few years ago with real corn kernels that were very sweet and moist and I wanted to make that deliciousness for everyone else.

They turned out wonderful and picky DBF requested I make them again. Major compliments everywhere. A definite crowd pleaser!!!! (and very simple per Jiffy box). I recommend doubling the ingredients to make 16 because these are yummy and disappear fast! :)

I made 5 batches for thanksgiving so $2.15 for the 5 Jiffy boxes $1.00 for the eggs (and I had extras to make breakfast for days) $1.50 for the cans of creamed corn and I had milk, honey, and spices on hand. I spent about $4.65 for 40 yummy corn muffins so not too shabby! I guess I'm sort of the "Frugal Gourmet." lol -- posted by Kikiloveshercop

Celery Salad With Walnuts, Dates and Pecorino

This impressive cool-weather salad is an extra-ordinarily addictive mix of sweet, crunchy and salty ingredients. You can feel free to sub dried cranberries or cherries in place of the dates. They recommend it for a Thansgiving side dish, as it can be made ahead by refrigerating the salad and dressing separately for up to 1 day (store the walnuts in an airtight container and add to the salad just before serving).
Vegan Green Bean Casserole

"This is meant to be a vegan version of the traditional green bean casserole served at holidays, etc., for those of you who loved it and were sad to not have it at the holidays once you went vegan. Many of my non-veggie friends like this better than traditional green bean casserole because it has more veggies and more herbs and spices." - from the website

Creamy Pumpkin Rice Pudding

Even though the phrase "leftover pumpkin" doesn't exist in my household, most people often wonder what to do with the leftover pumpkin after making a pumpkin pie. I like to make this tasty, simple, and quick dessert when I have a huge can of pumpkin I haven't completely gone through. Whole milk and cinnamon rice milk really work best for this recipe, but some tasty variations that really add to this pudding's richness are vanilla rice or soy milk, and Silk Pumpkin Pie flavored soy milk (which is only seasonal, I wish it was available year-round! And is it just me or does Silk Pumpkin Pie Soymilk taste just like Silk Nog that's available around Christmas, only they package it differently? So if you're making it around Christmas, use Silk Nog!) This awesome dessert is great for parties and potlucks,
it travels and freezes well, and was a big hit at my sister's Halloween party! Both the kids and adults loved it. (Note: Prep time does not include cooling time.) -- posted by the80srule

Grandma Linda's Thanksgiving Dressing

My mother has made this dressing for our family since I was a little girl. It is the only Thanksgiving dressing my family will eat. I would weigh 500 pounds if I made this dressing as often as I craved it! Although I know most people prefer holiday recipes that have been passed down in their own families, I hope you will enjoy this Thanksgiving dressing recipe that the McWell's have enjoyed for many, many years! My mother used Jiffy corn bread mix in the old days, then later switched to Marie Calender's corn bread mix. In this recipe, I am using the "sweet corn muffins" recipe on a box of Albers Yellow Corn Meal. Because I am using Albers brand corn meal, all ingredients up to "12 Tbs butter" are for this particular brand cornmeal. If using any other cornbread mix, follow directions on the box, then add ingredients beginning with "1 Lb bacon." This recipe is for Thanksgiving so it makes quite a large amount. Thanks Mom! -- posted by Mrs Cook

Major Grey's Chutney Cheese Ball With Cherries and Pecans

This is a great tasting cheese ball that is very simple and easy to prepare! Requires several hours chilling-- so plan ahead. Serve with assorted crackers or crusty bread, add a nice bottle of wine and grapes for a party or tucked into the picnic hamper.
