Scrumptious Thai Coconut Red Curry

This is probably my favorite dish to make...and what my DH calls my "signature dish." It's easy, yummy, and healthy! I loosely based the recipe off instructions on a bottle of Thai Kitchen red curry paste. Rice expressions has an organic frozen short grain rice package that is perfect with this dish. -- posted by surfin' chef

Crispy Orange-Glazed Salmon (Thai Inspired)

From the magazine Cottage Living 3/2007. I like the way this sounds so it's here for safe keeping. The description in the magazine states that the sweetness of orange juice tempers the heat of the chili pepper and red pepper flakes in this Thai inspired dish, but it still has quite a kick. You can garnish with sprouts, fresh cilantro, carrot and pepper strips, and edamame. Serve over hot rice. -- posted by Oolala

Thai Steak and Pasta With Peanut--Pepper Dressing

I decided to enter into the dark, scary unknown! Thai food! I have seen pictures, smelled the aroma, read, or tried to read some of the recipes. Didn't work! It's still scary unknown.I bought the ingredients, prepared them, rolled up my sleeves, and went to it! Then a funny thing happened, YES! it was delicious! Now, I wondered why didn't try this before? Now, I'm going to get my feet wet in another scary unknown! Enjoy! You might want to add the red pepper flakes slowly, and taste before you add more. The pepper flakes will even be hotter the next day, so be careful. If you have trouble finding the lemongrass, ask your produce man to stock it. Asian markets will have it also. There are lot of steps here, but so well worth it. Times don't include time for marinating. -- posted by FLUFFSTER

Sweet Jasmine and Mango Rice

Compliments of Success Rice. Rice and mango are my favorite non-chocolate dessert recipe. Using the Success jasmine rice makes it easier and just as good. If you can't find fresh mango, use 1 1/2 cups of slightly thawed frozen mango. You can also substitute your favorite fresh or frozen fruit for the mango. -- posted by mandabears

Easy Thai Coconut Shrimp and Rice

Chicken Pad Thai

This is another 'whip up at the last minute' ideas... I made it with all organic ingredients and sauces (other than the Sriracha- a spicy 'Asian Ketchup' which, if you don't have- you MUST get- and the jiff, which you will NEVER get me off of- I will never do organic peanut butter- that is the one thing I REFUSE to give up- haha).
Thai Chicken & Cashews

One of our favorite recipes - I found it on worldwiderecipes.com back in 1998. It is fairly easy and fast to make - the largest amount of time is in the prep work of chopping, as is the case of most stir-fries. Adjust the spiciness by the number of chili peppers - I have used up to 9. I love using jasmine rice, cut the chicken while partially frozen, and try to pick the chili peppers out before serving (in interest of my 19mo old). -- posted by Goji Girl

Thai Style Fried Rice... With a Curry Flavor, Hmmm!!!

My husband once had this Thai fried rice that was not only spicy-hot, but had a distinct curry flavor. After visiting a Thai restaurant in Jacksonville and him exclaiming "That's it!" I knew I had to try and replicate it.
Vegetarian Pad Thai

From Gourmet Magazine, December 2007. Vegetarian if you use soy instead of fish sauce. It's a little spicy if you use all the Sriracha -- cut back if you don't like spice, or add more if you do. As good as anything I've had in a restaurant. Oh and I added some carrots for healthiness. And made a bunch of other tweaks. Also, even though it involves some deep frying, it is not too difficult to make. -- posted by anne #2

You can find fresh lychee at any asian market and many regular markets. If you cannot find it you can use either canned lychee or small grapes instead. This will make your curry taste a bit more sour but still delicious. -- posted by Big John
