			<title>Pat's Spicy-Hot Winter Chili No. 6</title>

			<description>Description: neither thick nor thin, big flavor, traditional chili flavor, 4-alarm on a 1-5 alarm scale. If you like 10 or 12 drops of Tabasco on a big plate of spaghetti, this chili is fine for you, but it's not so hot that your eyeballs are going to pop out.
This chili began as a clean-out-the-refrigerator recipe but I did apply my considerable chili knowledge to the dish by manipulating the flavor with certain key herbs and spices. I didn't just dump in everything in other words. I'm compelled to say that I was very happy with the end result. For one thing, it doesn't taste like all my other chilis. No, this one is much more traditional in flavor with plenty of good heat. But when you STOP eating it, your mouth does not remain really hot. Just right, if you like a good spicy chili. I think the salsa verde is the key ingredient.
This chili would be especially good for a Superbowl party or for brunch on a day of deep snow and goofing off. There is very little labor involved in this one. It will be too hot for the kids though. One final caution: do not add salt to this recipe. There is plenty of salt in the bouillon and other ingredients. 			<description>Marlboro puts out some really great outdoor-cooking recipes and this one is at the top of my list. You might want to try this yourself with a single steak the first time out to make sure that this is the flavor that you're looking for before committing to a full-fledged cookout for guests. Normally, I prefer my grilled steaks just seasoned with salt and pepper (and no steak sauce!) but, for an occasional change, I like this method a lot and I hope you do too. Make sure that your charcoal is good and hot before attempting to grill the steaks, (don't use cheap charcoal!) -- T-bones should be prepared over very high heat and for a short cooking time. I also like to make these steaks in the Winter (great for Superbowl!), as well as in the summer. Most folks don't think about grilling in the Winter but I do it all the time. This recipe also goes camping well -- I bag up the steaks and marinade and stick them into a cooler of ice for the night. Cooking time includes marinating time. 			<description>Every once in a great while, Emeril impresses me with a dish.  This was one of them.  This one looked SO incredibly good and rich.  The cheese sauce I think was what got to me.  I just can't get enough of a good cheese sauce.  There are a ton of ingredients, but don't let that keep you from fixing these up.  It does make quite a bit, but they'll probably go fast.  Be sure to set around some salsa or pico, sour cream, jalape&amp;ntilde;os, and watch 'em disappear!  NOTE:  I condensed the directions down and left out the Pico recipe included. 			<description>This is a dish taught to my dh and me by a dear friend who was born and raised in Mexico and who's father was from Central America. This is how his family has grilled skirt steak for years in Mexico. The ingredients may be updated a little to be a little more accessible to us in the USA but this is the same recipe and method used by his family for generations! (The soy sauce is a recent AND YUMMY addition) I even saw an Alton Brown show recently in which he used this same method! The hair dryer is a new generation update- in the 'old days' they just fanned the flames to rid the ashes. UPDATE: 9/2009 Due to a review that this was a little to sweet I have edited the recipe with that in mind. Please adjust the amount of onion and sweetness to your personal taste. 			<description>My cousin and I created this recipe by accident when we wanted queso but did not have any of the &amp;quot;traditional&amp;quot; Velveeta. We went rummaging and this ended up being my favorite queso ever, and I have not made Velveeta based queso since. It is important to use American cheese to get the right flavor.
Notes: 
1. Although I assume black pepper can be used instead of white, white pepper does taste different.
2. You should be able to find Goya products in the Mexican section of your grocery store.

We also substituted ground buffalo for about 1/2 of the beef. This can be eaten as a side or a main balanced meal.

Cooked chicken is mixed with smoky, hot chorizo sausage and folded through a chipotle chilli tomato sauce..........sounds too hot?! I then added some sweet corn, sour cream and a jar of mild salsa to calm it down a bit, but please DO use hot salsa if you like a little spice in your life! I topped this with a dollop of sour cream and dressed it with chopped jalapeno peppers, parsley and a little chopped coriander (cilantro) for a perfect cold weather lunch. I devised this recipe especially for the Two for One Leftovers event in the Cooking Photo's Forum. Please adjust the chilli powder to your own requirements. I like spicy food but Malcolm does not, so I topped mine with loads of chopped jalapeno peppers and a sprinkling of chipotle chilli powder!!
