My Country Rib Eye Breakfast

This my fav. hearty little breakfast, when I feel like treating myself or others. It's pretty basic and you can play around with the ingredients and amounts easily, which to me keeps this recipe fresh and interesting. To me it's more a "guide" than a set in stone recipe -- posted by Iowahorse

Half-Time Chili II

This rich thick chili is suprisingly healthy using ground turkey (and no one needs to know)!!!! The basis of this recipe came from Bon Apetit 1996/Epicurious. I have made my own changes and used this recipe for 5yrs...potlucks, game nights, blizzards...
Ofcourse you can use ground beef/venison, different types of beans, but do not be afraid of the amount of garlic, it mellows out during the cooking. -- posted by Skrim

Breakfast Queso--Not Just for Breakfast!

Someone brought this to our neighborhood Bunko group one night, and we all loved it! I've made it several times since, but I use it as part of my brunch menu when we have overnight guests. I serve it with warm flour tortillas and tortilla chips. If you like spicy get the hotter type of Rotel. YUM!! -- posted by SpicyMomma

Easy Jambalaya

I went to the Rainforest Cafe in Chicago a few years ago, and happened to order the Jambalaya. I had never had Jambalaya, and from the menu it looked a good choice, but I can honestly say, It was the best meal I have ever eaten. I have tried to make this dish many times, and have now (I think) simplified and perfected it. As an Englishman, no-one over here has even heard of Jambalaya, but I have made this dish for lots of friends, who all absolutely love it, and I swear it is the closest I have come to that fabled recipe. It is a cheat in that I use some store-bought items, but if you know how to substitute with fresh produce then let me know. I hope you all enjoy this meal as much as I do! -- posted by Chef #785168

This sandwich can be altered in many ways, including the additon of some salsa to spice it up.
Spicy Zucchini

This was so good last night, I don't want to forget what I did! This was a great side dish for cheese enchiladas. Adjust the seasonings according to your tastes and the age of your kids. I used the lower end for my 6yo (who ate it without protest) and 20mo (who was not so fond of it). If I were to cook this for just the adults at my house, I would use the upper end. I used really small zucchini for this, less than an inch in diameter and about 5-6 inches long. -- posted by CraftScout

Simple Layered Chicken Fiesta Salad

Mexican Mix-Up

This easy recipe is a hit each time I make it. It also goes great topped with cheese.

I use a very large and very deep skillet to prepare most of the dish, but a wok might work if you don't have that large of a skillet.

The mexican mix has corn, peppers, broccoli, cauliflower, and onion. The key vegetables are corn and peppers, but you can try different variations to change the flavor and color balance. -- posted by Cerulean

This is also great tucked inside a hard or soft taco shell. Feel free to alter the vegetables to your favorites and / or what you have on hand. This is also great with some fruit tossed in. Try some chopped peaches or pineapple or anything you might like. Go tropical and try mango or papaya! Add what you like, but most importantly..... Enjoy! -- posted by mama's kitchen

Crock Pot Black Bean Burritos

This recipe is insanely high in fiber and protein, but very low in fat. It has become a family favorite and we have it almost every week! We love this on warm flour tortillas (high fiber if you can find them), and serve it with fresh avocado, shredded cheddar, sour cream and lime wedges for squeezing.
It's also great over brown rice, or with diced chicken breast added. Have fun with it, I do! :)
Updated to add: This recipe relies heavily on the salt and pepper. The ingredients all have incredible flavor but it won't pop unless you properly season the dish. PLEASE don't omit the s&p.
Taco Soup

This is a very easy, but delicious hearty soup. It is like a chili in some ways. It is great when you need to throw something together. It is easy to entertain with, at the end everyone can add their own little touches with some toppings and extras. It is a crowd pleaser. -- posted by tastytwosome

Sherri's Mexi Biscuits Plus

This recipe is so easy-a great way to spice-up your canned biscuits. Make them your own-think about adding chorizo or your favorite spicy sausage, mushrooms, jalapenos-you get the idea. (If you want, toss the biscuit pieces in the salsa, pour into pan, then top with your additions and cheese-either way is delicious.) Easy to make for a few or for a crowd.
Turkey Cowboy Chili

My sister in law gave me this recipe and I tweaked it a little to my tastes. It is a quick and easy chili that can be ready in one hour - start to finish. You can use ground beef if you'd like. I just dislike the flavor of it, so use extra lean ground turkey instead. I will also note that this is a completely dairy free recipe if that is an issue for you :)

Enjoy and let me know if you like it !

Sherri's Picante Pasta Salad

I found this recipe in a book my Grandmother gave me, compiled by Ladies Auxiliary of the Medina Lake Volunteer Fire Department, 1986. Additions I have tried are cooked chicken, carrots, cucumber, cherry tomatoes, zucchini, kernel corn, bell pepper, black olives, and before serving, avocado and cilantro---make it your own and use your favorites. This salad needs to chill at least 2 hours before serving which is included in the cooking time---the longer the better, even overnight.
This is a meatless version of my original open-face enchiladas (#297019). It's inexpensive, comes together quickly, can be assembled in advance and cooked when needed, reheats beautifully, and tastes terrific.
Easy Chilli Con Carne

This is a really simple and versatile chilli con carne recipe that I've perfected over an admittedly short period of time, but it seems to work pretty well.

It's really easy to adapt to vegetarian tastes - use whatever kind of tinned beans you like, mixed bean salads are easy to find at supermarkets. I really recommend that variation with tortilla chips and sour cream. It can be spiced up by varying the chillis to your preference. I usually chop them finely and put them in at the start with the garlic as it smells good.

My starting point for this was a recipe in a book called Just 1 Pot by Love Food, with no author specified.

This recipe is very much a work in progress so feedback would be very appreciated =) -- posted by cydon

¼ cup seasoning and ¾ cup of water per pound of meat. As long as its stored in a cool, dry place it keeps forever.

possible add-ins:

dried jalapeños
ancho chilli powder
chipotle ( I always add chipotle)
dried onions they’ll rehydrate during cooking.

Kpd's Awesome Retro Burritos, Tacos or Chimichangas

This is my basic recipe for a Mexican ground beef mixture. This way everyone can make what they want: DH makes burritos, I make tacos or chimichangas, and DD makes what I call a fiesta bowl! I usually double the recipe so we can use the leftovers for a Nacho Night! If I'm low on time or spices, I'll just throw in a taco packet, no biggie! Please use your judgement on the seasonings: we like it spicy, so I actually use a lot more than written...if you prefer mild, go a little light initially and increase as necessary. -- posted by KPD

Lafd Engine Co. No. 28's Vegetarian Black Bean Chili

Engine Co. No. 28, is a popular L.A. restaurant located in an historic building, which was constructed in 1912 as a Los Angeles Fire Department firehouse, which housed 2 engine companies. In 1912 LA's population was 400,000; and New Mexico and Arizona were being admitted into the Union. A trip to the restaurant, established in the 1980's has been called a "a big hug from America"; it serves American favorites and some history. Some cooking notes: although you can use canned beans equalling 4 cups, the restaurant uses dried beans starting with a one pound package which will yield about 4 cups of cooked beans. This chili is best when made one day in advance. The flavors develop better. When reheating, add water if necessary and heat slowly to avoid scorching. The recipe had been published in the Los Angeles Times, reader request column. -- posted by lynnski / LA

Ground Turkey Taco Meat

I make this at least 4 times a month. We get our ground turkey in bulk at Costco in the 4 pack. This recipe is for one pack, but we usually double it since I use it for taco salads, while my husband throws it in a tortilla for a snack. IF YOU DON'T LIKE SPICY....change out the Rotel's variety to the the mild or the Mexican (tomatoes, lime, and cilantro) style. This is a basic recipe, so play with the spices and the Rotels for the taste you like. Ours never tastes the same, since some times we want the meat more spicy, and not so much others. -- posted by CharlieGal

So Easy White Turkey Chili

This great tasting & super easy recipe is an adaptation of Mandi Foresters White Chicken Chili from the Rachel Ray show. The turkey gives the chili a great flavor and I also made the addition of corn niblets and extra chopped tomato to give the chili more interest.
Monterey Style BBQ Chicken

This is a budget friendly fix it in a flash type of recipe with endless possibilities. It can be served on cornbread with a dollop of sour cream as an open faced sandwich, as a wrap with lettuce cheese and some ranch dressing, over rice with cheese on top, as a filling for a burrito or quesedilla or even dump it in a baking dish and cover with cheese and some prepared corn bread mix and bake it for a great casserole. I think this would also be good made into a pizza by spreading it on a cooked pizza crust and topping with cheese, baking til bubbly and adding cilantro after cooking!!! Add hot sauce if you like spicy, add cheese on top if you like cheesy. . .you get the drift! So have fun with it.
Wendy Richard's Chili Recipe - the Best Chili Ever!!!!!!!!!!!!!!

Are you ready for the BEST CHILI you've ever had? Only made this because I am a HUGE fan of Wendy Richard (MBE) who played "Miss Brahms" on "Are You Being Served" and she also played Pauline Fowler on "EastEnders". She recently passed away and printed her famous chili recipe on the back of her funeral program. (You can see a photo of that in here! Check out the photos for this recipe) I've had chili all over Texas and the South - I even made both recipes from "Throwdown with Bobby Flay" (both were VERY good) but I will tell you - hands down - THIS WOMAN'S RECIPE IS THE BEST CHILI I HAVE EVER HAD IN MY WHOLE LIFE! And when I say "THE BEST" I mean: "I am SO STUFFED I might explode - but I can't STOP eating this chili because it tastes so AMAZING". Ok? I tried to put it in the freezer - and ended up taking it out 10 minutes later and eating it again. Today I had it for breakfast on eggs, and lunch and dinner! Can't wait to have more tomorrow! I'm NOT sharing this batch with ANYONE! But I will share the recipe!

VERY URGENT/IMPORTANT: THE WHOLE SECRET OF THE RECIPE IS IN THE SCHWARTZ BRAND CHILI MIX!!!!!!!!!!!!!!! Use any other brand and it will only be a 2-3 star recipe! If you are in the USA the "Schwartz" brand chili mix in this recipe can be ordered online from www.Distantbrits.co.uk or any other British food sites. PLEASE ONLY use "Schwartz" brand if you want this to come out a 5 STAR recipe- if you use any other brand, like "El Paso", "Chichi's" "Ortega" or "McCormicks" it will be disappointing because those 4 brands I just named are nothing but salt and chemicals with very little spices. I HAVE MADE THIS RECIPE WITH THOSE 4 OTHER BRANDS, JUST TO COMPARE -WHICH IS HOW I KNOW, IF YOU USE ANYTHING BUT SCHWARTZ - IT'S GOING TO BE A DISAPPOINTMENT. PLEASE TRUST ME - IT'S SOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO WORTH IT TO SEND AWAY FOR THE SCHWARTZ BRAND, YOU CAN GET THE SCHWARTZ CHILI MIX IN 2 DIFFERENT HEATS: MEDIUM/MILD AND HOT. I PROMISE YOU - IF YOU ORDER THE SCHWARTZ AND DON'T THINK THIS WAS A 5 STAR CHILI - SEND ME AN EMAIL AND I'LL PAY YOU BACK FOR THE COST OF BUYING THE SCHWARTZ. OK?

If you can't find the British "Schwartz" brand, send the lady at distantbrits.co.uk an email requesting it. Tell her which kind of heat you want., "McCormicks" brand in the USA is very disappointing - even the "hot", it's not spicy and the taste really is missing something important. I even tried adding more cumin, and fresh Jalepeno's but McCormicks - it's just NOT AS GOOD as Schwartz, so - if using McCormick's- please know - you've been forwarned: it's not going to be a 5 star chili. If you're in the UK - you should have no problem finding this product.

ALSO - careful when ordered because the recipe calls for 4 Schwartz chili. That means chili MIX - NOT 4 bottles of chili powder!!!! (I say be careful because Schwartz also makes chili powder, and you don't need 4 bottles of chili POWDER for this LOL!)

I used the HOT Chili Mix, but Wendy specifed "Mild". Get whatever heat you are comfortable with. Be FOREWARNED: If ordering the "Hot" - just because it's from England doesn't mean it's not as hot as you think. While it is the most delish chili mix, It is 5 ALARM Texas hot!!!!! And this is coming from a gal who drinks "Franks Red Hot" straight out of the bottle whenever I have a craving! The mild is "mild" and also extremely delish.

Menier's Chocolate is VERY hard to find if you live in the USA. I could only find 1 place online that sells it (Distantbrits.co.uk) Otherwise, use a VERY DARK (Swiss is preffered). When you open the Menier - the actual chocolate says "Nestle", so I guess you could get bittersweet or semi-sweet Nestle. Just don't use Hershey (ugh!)

When it smells ready - eat it. You don't HAVE to simmer for 3 hours, as directed by Wendy. (Personally, I couldn't wait that long, it smelled too good) It even tastes amazing room temp hours later!

I promise you - if you make this recipe EXACTLY as is - with NO SUBSTITUTIONS ON THE CHILI MIX (you CAN make substitutions on the chocolate)- Your tastebuds will think you've died and gone to heaven. I can see why Wendy would leave such a fantastic Chili recipe on the back of her funeral program - people were probably begging her for years for this recipe.

When I make this for the next Texas chili cook-off - this WILL win 1st place - and I will give Wendy Richard all the credit since it is her recipe.

Huh! Who'd have thunk the best recipe for Chili would come from ENGLAND!?????!!!!!!

R.I.P. Wendy - and I thank YOU for all the years you've made me laugh and cry and for the gift of this AMAZING Chili recipe! I will be entering it into contests in your memory! I also hope all the people here will make this and enjoy it and it becomes a family favorite! -- posted by BBCFan

Fajita Marinade

I got this recipe from a friend of mine from Texas 20 years ago and it has become one of my family's favorites. You can use the marinade to flavor peppers, onions and/or mushrooms and cook them to go along with your fajitas. The leftover chicken fajitas are great the next day mixed in a green salad. Extra marinade can be stored in the refrigerator or freezer for later use. -- posted by irishred5

Ensalada Taracita

Spicy and sassy, this Tex-Mex influenced salad tastes alive and looks alluring. The idea begins with a common go-to salsa salad, but my improvisations make it one of a kind. Have fun with flavors as you add and subtract your own favorite fruits, veggies, and dressings. I don't use a dressing as the fruit juice and pico de gallo usually add plenty of flavorful moisture. A mango vinaigrette would be nice though. -- posted by taradelyce85

Easy Southwestern Macaroni

What I imagine southwestern macaroni would taste like...a little twist on classic mac n cheese, if you will. Feel free to make your own cheese sauce and spice it however you'd like, but the point of this recipe is being too lazy to do so. :D -- posted by the80srule

Tortilla Soup With Chicken & Veggies

During our first storm of the season, I decided to make Tortilla Soup. I had never made it before. I found a recipe to work from, added and omitted a few things, and came up with this. It was a hit. Most of the things I cook are too spicy for some people, but I think this turned out perfect. My local grocery store offers freshly cut raw chicken and veggies, specifically for fajitas. It is a perfect way to cheat on the prep time. -- posted by JaLinGra

15 Minute Chicken Tortilla Soup

One night, I got it in my head that I HAD to have chicken tortilla soup. I didn't want to leave the house because of a huge snow storm. Using the ingredients I had sitting around, this is what I came up with! -- posted by Bread'n'Butter

Vegan Tex Mex Rice

I got this out of a Mexican cookbook except I made it vegan, and simplified it as well. I found that I had to add a little extra cayenne after it was done cooking, but then again I have a higher spice hotness threshold than most :) -- posted by the80srule

Guacamole Rotel

I was in the process of making a "quick" guacamole to go with fajitas. The salsa I had planned to use had gone bad. Rotel to the rescue. I drained a can of Rotel tomatoes and dinner was saved. -- posted by PaulaG

Spicy Easy Corn Casserole (Without Egg!)

Needed to clear some cans out of my storage space. The result? A ridiculously simple casserole packed with flavor. Feel free to use your own spice mix or taco seasoning, I use Recipe #389616. Something like Green Giant Mexi-Corn would probably work nice in this but I worked with I had at hand. -- posted by the80srule
