The process is relatively involved - overnight marinating is recommended and it steams for three hours.  It is nothing like Mexican Tamales or &amp;quot;Hot Tamales&amp;quot;. 			<title>Weeknight Homemade Pot Pie</title>

			<description>Part of my series.  I'm cheap and I want to feed my family homemade food...and no I don't have a ton of time because I work like the rest of middle class folks. (LOL)  I have a kitchen-aide.  Honestly, without some sort of mixer...add about 10 minutes to this recipe.  Either way, it is pretty easy, and pretty frickin tasty! Oh, and don't get uptight about the ingredients...the bulk of my recipes are suggestions. * The secret I've found to a tender and flaky pastry crust are the proportion of butter and flour.  I practiced a whole winter to get my crust just right.  The other suggestion I found was to add my salt to my water.  It mixes in far better.  Another thing is to keep your hands off and out of the crust as much as possible.  The more you can do this, the more tender and flaky the crust will be.  I like crust only on the top, a 2nd crust on the bottom is both more difficult and makes this dish too heavy. 			<description>I have had trouble finding a stir-fry recipe that included a good ginger sauce that wasn't too starchy from all the cornstarch.  I modified a Tangerine Beef recipe from Better Homes and Gardens' &amp;quot;Easy Stir-Fry Recipes&amp;quot; book.  When making stir-fry, it's best to use a wok-- I use a flat-bottomed, non-stick wok.  When cooking the carrots and the chicken in the first few steps, don't overcook them!  You'll be cooking them again later when you've got the sauce nice and bubbly in the final step. Of course, they can all make it themselves now, its one of the first recipes my son asked me for,  so that he could make it for his girlfriends family!
Although I use skinned de-boned fillets for this,  use what is most convenient for you.
If I don't have sherry, I use whatevers handy in the cabinet, rum, or vermouth, or my husbands whisky (don't tell him!).
Oh, and I usually don't add the mushrooms with the onions, I prefer to add them a few moments later, after I've added the water.  That's a personal preference.

It's called 'rough cut' because it is meant to be just a &amp;quot;rustic&amp;quot;, simple, easy, hearty, filling dish.  There is to be No tedious MINCING!!  :-)  Just put the ingredients in the cooker. ;-)

It's really easy!  Just put the ingredients into the cooker in the order listed, ending with the chicken.  You don't want to taste it after adding raw meat to it so adjust your seasoning as nearly as you can before the chicken goes in.  You can adjust the flavors further after it's finished.

Ours came out with a LOT of juice so, if you don't like it that way, consider draining the tomatoes, cutting the stock and using bouillon cubes instead.  Or cook as directed and removing excess juices to reach the consistency you prefer.

I ladled off about 4 cups of the liquid after all the seasonings married in the cooking process.

I served it over rice.

I thought about adding ground cayenne or red pepper flakes after cooking for a little added heat.  Or just having them in ramekins on the table for those who'd like it.

Consider substituting 2 LBS of ground turkey or chicken for the thighs.  I'm going to try duck or venison this winter.
