Berries Jubilee

This is a berry version of the famous flaming cherries jubilee. Skip the alcohol and flaming step if you prefer; no additional liquid needs to be substituted for the brandy. From Kathleen Desmond Stang and Melissa Monosoff Cooking Light, JUNE 2000.
I tried it with Jacques Cardin, which is 80 proof, and didn't get a very dramatic flame. Still, it was worth it, this sauce is exquisite! -- posted by b. limon

Sticky Gooseberry Sauce for the Soul

This gooseberry compote, or jam (which i turns into when refrigerated) is a great way of extending and preserving our small but delicious gooseberry crops during the year. This is fantastic as an icecream topping, served atop pancakes, or spread in the centre of a sponge cake along with thick cream!
Cranberry Applesauce - No Sugar Added

This is a vividly pink, wonderfully tart cranberry applesauce. Makes a great condiment for savory foods such as meat or potato pancakes, and also wonderful when eaten alone. It has no sugar added, thus it is VERY tart (which I love) - If you prefer a sweeter sauce, add 1/2 cup of sugar. I recommend using 1/2 sweet apples (I like Braeburn) and 1/2 tart apples (Granny Smith, for example). -- posted by What's Cooking?

Pomegranate Glaze

I made this for a ham tonight but it would work for any other kind of meat or maybe even fish. DH's comment, "this stuff ROCKS!" It is loosely based on many recipes I saw on the internet, none of which were quite right, imo. A very simple but sublime sauce.
Basic BBQ Sauce

This sauce, while tasty in it's own right, serves as a good base for all tomato based sauces. Try adding a few other ingredients of your choosing to develope you own Utopian delight. Try adding things like L&P, more mustard, molasses, honey, garlic, cumin, chili powder, tomato paste, spices, etc.
Whatever you add, you will most likely end up with a tasty sauce, and may even develop several different sauces to suit different moods. Have fun!

Blueberry Sauce

I know there are a ton of blueberry sauce recipes on the zaar. However, this one is sweetened with honey (which my system tolerates better than white sugar) and uses a minimum of ingredients. It's also really easy and keep pretty well. It doubles well. -- posted by Umberle

Real Whipped Cream

It's best to make whipped cream right before serving; it must be kept refrigerated and cannot sit at room temperature for longer than 20 to 30 minutes. The butter adds texture and body to plain whipped cream, and resembles old-timey heavy cream. You need only serve a small dollop.
Vanilla Cranberry Sauce

Now THIS is worth writing home about, so here I am! I wanted to do something different with my cranberry sauce this year. Enough of the citrus, no shallots for making compote...vanilla! I have a few dried out beans that I've been hoarding! Now that we have a supply of fresh beans, time to use the old - why not drop one in the cranberry sauce? How bad could it be? OMG.....it was divine!!! Vanilla sugar adds extra vanilla flavr but you can certainly use regular sugar. -- posted by Elmotoo

Calendar Girls Curvaceous Cranberry and Kumquat Sauce With Port

I don't know if any of the Calendar Girls actually make this sauce, but it was published in the Woman's Institute Christmas Cookbook, so it is possible that they may have made it! This is my own recipe based on that WI recipe - vibrant, curvaceous and colourful plump fresh cranberries cooked with fresh kumquats, port and orange juice - then throw in a cinnamon stick just for good measure! If you are making this for children or those who don't drink alcohol, just leave out the port and add extra orange juice. This sauce will sit quite happily in the fridge - once made - for up to a week; it can also be frozen - just take it out the night before you need to serve it, and thaw it overnight, then gently reheat on the day. -- posted by French Tart

Traditional English Cumberland Rum Butter

A lightly spiced butter, laced with dark rum - this traditional old recipe originates from the county of Cumberland in the Lake District of Northern England. In Cumberland, rum butter served with oatcakes or buttermilk scones were given to friends who called at the house to see a new baby. In turn they would leave a silver coin, and on the day of the christening, when the butter bowl was empty, the coins were placed in it. A sticky bowl, with plenty of coins sticking to it, meant that the child would never be wanting. The saying goes...... “Butter symbolizes the richness of life, sugar the sweetness of life and rum, the spirit of life.” Cumberland rum butter is traditionally served with Christmas pudding and mince pies; it also makes a wonderful gift for any new parents or to give throughout the festive season. -- posted by French Tart

Blood Orange Glaze for Cheesecake

This recipe from the Candle Cafe is a more exotic way to serve cheesecake. Originally, it was used to top a tofu cheesecake with a spelt flour crust, but I just pour it over a traditional New York style cheesecake (Recipe #57025). Use the arrowroot powder if you have it, but otherwise you can substitute cornstarch. Be aware though that if you do use cornstarch it will become slightly jelly like as it cools, so you may want to make it shortly before you use it or reduce the amount used slightly. You'll need about 2-3 blood oranges to get the 1/2 c of juice called for in this recipe. You can use regular orange juice if you can't find blood oranges, but you won't get the cherry red color that makes the glaze so impressive. Unlike the oranges we normally eat in the US, blood oranges have a deep red juice and hail from the Mediterranean region. Agave nectar is a sweet syrup obtained from succulents (cacti). I recommend giving it a try if you can get ahold of it, it's also a good sweetener for iced tea. If you can't find it, a simple syrup should work (equal parts sugar and water heated until combined). -- posted by Eat Your Vegetables!

Hazelnut Sugar Syrup

I just love a hint of hazelnut in my coffee, and the grocers never carry hazelnut syrup when I need it. I adapted this from a basic recipe at CDKitcheon's web site and loaded it here for safekeeping. Some pharmacists recommended adding 1 to 2 teaspoons of corn syrup to help keep the consistency of the simple syrup smooth for storage, although the addition of spirits prolongs the shelf life indefinitely according to the International Cocktail Database. To use Splenda, use 2 parts granulated Splenda to 1 part water for a concentrated simple syrup. -- posted by KateL

Nutmeg Syrup

Warm nutmeg syrup tastes great drizzled over frozen vanilla yogurt, pancakes or waffles. The longer you heat the sugar-water mixture, the more the liquid evaporates - and the thicker, more concentrated the syrup. There is a point of no return, however, when you end up with hard, brittle, pseudo-candy, so don't walk away from the stove when preparing this. If you want a really dark-colored syrup, use dark brown sugar; for a golden, maple syrup shade, use light brown sugar.
Mysterious Orange Red Chili Sauce

A lovely brick-red chili sauce that tastes good on everything (chicken, beef, turkey, sandwiches made with the above and probably vanilla ice cream). It's fast and easy to make, it's highly adaptable and uses everyday ingredients.
I made this one day after marinating a flank steak in a mixture of orange juice and cumin. I poured the marinade into a saucepan and reduced it, and decided to add chili powder for kick. Half a dozen batches later, and I think I have a recipe down.

You have to be sure that the sauce is brick red and a bit syrupy. To test this, take a cold spoon and dip it into the sauce. If it drips quickly, it's not ready yet. Feel free to expand the recipe and add other things- this is a speedy recipe that can be made while something else is cooking. -- posted by Ferrouswolf

Entered for safe-keeping, from Clean Eating, Fall 2008, a variation on the traditional U.S.A. Thanksgiving cranberry sauce. The sauce will keep well for 2 weeks in the refrigerator; the flavors will meld and improve the longer it sits.
Simple Classic Ketchup

This is a simple ketchup recipe that keeps you away from the high fructose corn syrup. This makes a quart jar full, it can be easily split in half for smaller quantities. We use a LOT of ketchup, and I have this one memorized. We use agave nectar these days, but I wrote this one with sugar to make it simple. To make with agave, replace sugar with 2/3 cup agave nectar. I get the salt from http://www.saltworks.us/shop/product.asp?idProduct=373 . It is better for you as regular white salt as been demineralized. -- posted by Chef #1059246

Tofu Simmered in Hoisin Sauce by Deborah Madison

Entered for safe-keeping, asking my vegetarian friends to review this for me. From "This Can't Be Tofu!" by Deborah Madison. Because hoisin sauce is very sweet, dice the tofu very small and serve it as a sauce over rice, with stir-fried spinach, green beans or broccoli on the side. For interesting presentation, cut the tofu into triangles, brown them briefly in a little oil, and add them to the sauce. Per Ms. Madison, soft tofu packed in water has the best flavor and texture, both of which are more pronounced if tofu is not browned. If you enjoy the pure flavor of soft tofu, heat the sauce with the tofu in it until it is just warmed through; if it reduces too much, add more water or stock to thin it out. Serves 2 as a main course, or 4 as an accent sauce. -- posted by KateL

Buttermilk Pancakes With Maple Syrup Apples

These delicious pancake recipe are thin, light, fluffy, and moist with a texture that is a cross between a crepe and a pancake. They are great with the apples or without. The recipe is from "Bon Appétit" (Oct. 2004). Don't overmix the batter (it's okay if there are lumps) to ensure that the pancakes will be airy. If you don't have buttermilk, add 1 T of vinegar to 1 cup (minus 1 T) of milk and let sit for 5 minutes.
Thick Apple Pancakes With Raspberry Sauce

This is a fabulous and impressive recipe (both visually and in deliciousness). It's great with or without the raspberry sauce The recipe makes about twice the amount of sauce necessary (in my opinion), but the leftovers are amazing on ice cream! I don't strain the raspberries because the seeds don't bother me. You can also replace with strawberries. If you really want a decadent meal, top with whipped cream. You can prepare the recipe as directed or just bring the apple topping and raspberry sauce out to the table and let people plate it themselves. It's also great if you mix the apple topping right into the pancake batter. Really, it's hard to go wrong with this recipe. :)

This beautiful brunch dish is served at The Ahwahnee Hotel in Yosemite Valley, CA and was printed in "Bon Appétit" (Nov. 2000). If you are just cooking for one or two, leftover batter refrigerates well. -- posted by blucoat

Virginia's Cinnamon Sauce (Bread Pudding, Ice Cream, Crepes, Etc

My favorite recipe from my grandmother, who would make this to go over bread pudding and other desserts. So simple to make, but special enough for a holiday table (or over bread pudding to celebrate the birth of a child in our family!). An absolute family tradition; I haven't seen anything else like it. I've come to find that it's a pretty flexible recipe -- you can add more or less cinnamon, sugar, or even other spices (nutmeg, ginger, and cardamom are all good in addition to the cinnamon). I like mine a bit thicker so I use less water than called for here (2 to 2 1/2 cups), but most in my family make it just like this. Quick, easy, and really yummy. -- posted by LightEra

Sweet Coconut Cream

This makes a great dessert topping to drizzle over berries or pies...really yummy on pumpkin pie. I also have a whipped version that makes it nice and thick like whipped cream!!! I like to let it chill for a couple of hours or even better over night. Depends on how much of a hurry you are to eat it :) Remember this is a simple way to make a dessert from berries. Just drizzle or coat berries and serve. Delicious!!! And very good for you too. The coconut is anti-microbial, antifungal...etc.. I use Thai Kitchen Brand...NOT the low fat one...coconut doesn't make you fat...it actually speeds up your metabolism.
Honey Butter Shanachie

This was a demonstration recipe at Charlotte Anne Albertson's Cooking School (Wynnewood, PA), for "Awesome Soups with Brian Duffy" (Jan 24, 2006). Brian Duffy (http://www.chefduff.com) hosted the Food Network shows "Date Plate" and "Hot Trends 2005" and is executive chef at Shanachie, an Irish restaurant in Ambler, PA.

Shanachie specializes in soups and serves Wheaten Bread (rz. 28076) with Honey Butter with its soups.

The original recipe (restaurant quantity) is 30 lbs butter (preferably Irish unsalted butter) and 10 lbs honey (preferably clover honey). If you're not feeding an army, this is the reduced recipe, approximately the same proportion ...

The "cooking time" listed is to warm the butter and then chill it back.

Assuming a 1 tsp portion, this will make 24 pats of butter. -- posted by Gandalf The White

Agave Maple Syrup Substitute (Vegan)

Allow me to state for the record: *nothing can or will ever replace real maple syrup*. However, in the past few years, it's been my intention to find a suitable maple syrup substitute. I tested different kinds of sweeteners: brown rice syrup, non-refined cane sugar, honey and barley malt. Agave nectar worked the best. As we all know, real maple syrup is most definitely preferred but this syrup sub will do in emergencies. Note: I use this substitute for pancakes, waffles, etc. I take no responsibility for any cooking disasters that may occur if substituting the syrup for real maple syrup in recipes. ;) -- posted by Cookgirl

This sauce is fantastic, if I do say so myself! Try it over pancakes, waffles, sliced bananas, puddings, or ice-cream. It's good over just about anything--YUM!!! -- posted by BecR

Hoisin - Jalapeno Sauce

I found this on the net while looking for a similar recipe to broil salmon for another Zaar member. Although it was originally listed for wings - I think it could be used for other meats as well. -- posted by Mommy Diva

Easy Slow Cooker Applesauce

I came up with this recipe after I had bought too many apples for me to eat before they started getting soft. I didn’t want to waste them or my money so I used what I had in my house for spices and poof! Out came this recipe. You can really use any kind of apple you want, Mac’s are usually less expensive than most other kinds of apples. The coriander and lemon juice add great brightness to the apples.
I like to eat it plain, but it’s great stirred into hot cereal, or on top of your favorite vanilla ice cream with a little caramel sauce on the side, it tastes like an apple turnover! I know that the spices seem minimal, but they add such a great flavor that’s not overpowering. -- posted by nicolygoay41
